Crispix Citrus Party Mix






Truly, truly, I say to you, when you were young, you used to dress yourself and walk wherever you wanted, but when you are old, you will stretch out your hands, and another will dress you and carry you where you do not want to go." - John 21:18




1 12 oz box of Crispix cereal, divided into (2) 13x9 foil pans
1 c pecans, divide between 2 pans
1 c almonds, divide between 2 pans
1 c cashews, divide between 2 pans

Citrus Butter, make 2 batches, divide between 2 pans
3 T butter, melted
3 T Worcestershire sauce
1/4 t onion powder
1/4 t garlic granules
1/4 of a lemon, squeeze for juice
1 T seasoned salt
Prepare citrus butter in a glass measuring cup and add the rest of the ingredients after butter has been melted.



Preheat oven to 250 degrees.
Bake in increments of 15 minutes, stir well each time. 
I cooked mine a total of 1 1/2 hr, the last 30 minutes oven was off.
My pecans were huge, that's why it took so long.

Cajun Fried Turkey Tetrazzini in White Wine Cheese Sauce




"Then I will draw near to you for judgment. I will be a swift witness against the sorcerers, against the adulterers, against those who swear falsely, against those who oppress the hired worker in his wages, the widow and the fatherless, against those who thrust aside the sojourner, and do not fear me, says the LORD of hosts. - Malachi 3:5

16 Then those who feared the LORD spoke with one another. The LORD paid attention and heard them, and a book of remembrance was written before him of those who feared the LORD and esteemed his name.
17 "They shall be mine, says the LORD of hosts, in the day when I make up my treasured possession, and I will spare them as a man spares his son who serves him.

2 c chopped Cajun fried turkey
2 c chopped cooked al dente noodles, reserve pasta water
1/4 c white wine
1/4 c cream cheese
1/4 c frozen English peas
1/4 c pasta water
4 mushrooms, chopped
1 leek, chopped
2 pats compound butter
1/4 c 4 cheese Italian blend
Salt and pepper to taste



Melt butter in skillet, add leeks, peas and mushrooms, sauté until tender.
Add wine, pasta water, cream cheese, and 4 cheese blend, sauté until thickened.
Turn off heat.
Toss in cooked noodles and chopped turkey.
Salt and pepper to taste.
Enjoy!

Fresh Sage Rosemary Dill Compound Butter






For from the rising of the sun to its setting my name will be great among the nations, and in every place incense will be offered to my name, and a pure offering. For my name will be great among the nations, says the LORD of hosts. - Malachi 1:11





Room temperature Butter, 1 stick
1 t Fresh sage
1 t Fresh rosemary
1 t Dried dill
1 T Shallots
1/2 t Red pepper flakes
1/4 t Kosher salt
1/4 t Cracked black pepper

Mix all together. 
Place in plastic wrap and mold into log shape. 
Refrigerate.
Serve on warm ribeye slices!
Yum!!!

Boneless Ribeye Standing Roast






Sanctify them in the truth; your word is truth. - John 17:17






1 trimmed boneless ribeye roast, got mine at Costco
Olive oil

Rub
1/2 c kosher salt
3 sprigs fresh thyme
3 sprigs fresh rosemary
1 t dried dill 
1 t roasted garlic, mashed
1 small shallot, diced
1/2 red pepper flakes
Cracked multi peppercorn pepper


Mix well.


Preheat oven to 500 degrees.
Oil roast and pack rub on all sides.
Sear on all sides.
Place on rack and bake 500 for 30 minutes.
Change heat to 250 and bake in increments of 30 minutes, checking temp each time, until a temp of 130 is reached.
Pull out of oven and tent with foil for 30 minutes, your temp will rise about 10 more degrees which will be a perfect 140 degree. This will be medium and yummy deliciousness!!!
I made fresh sage-dill-fresh Rosemary compound butter to serve on each slice!

Puff Pastry Cinnamon Rolls with Bourbon Cream Cheese Frosting






Now before the Feast of the Passover, when Jesus knew that his hour had come to depart out of this world to the Father, having loved his own who were in the world, he loved them to the end. - John 13:1





Trader Joe's frozen puff pastry(contains 2 sheets)

Melted butter to brush bottom of pan and top of rolls before baking.

Let thaw completely. 
Roll out.
Sprinkle filling over sheet. 
Tightly roll and cut each sheet into 6 rolls.
Bake 400 degrees 20-25 minutes in a large muffin pan, greased with melted butter.
Remove from pan to cool. 

Filling:
1/4 c Brown sugar
1 T Cinnamon
Mix together.

Bourbon Cream Cheese Frosting:
3 oz softened cream cheese
3 T softened butter
1 1/2 c powdered sugar
1 t vanilla
1/2 t bourbon

Whip with electric hand mixer.
Frost rolls.

Creamy Cauliflower Mash






30 Jesus answered, "This voice has come for your sake, not mine.

I kept working on this recipe! I want this mashed cauliflower to taste like real potatoes, creamy goodness and all.
So, I'm really pleased with this final recipe. Hope you enjoy!!

1 head of cauliflower, cut into chunks
1 T Chicken base seasoning
1 t butter
Pepper to taste

Just add water half way up pan, add seasoning and cauliflower, bring to boil, cook just until tender.
Drain.
While still hot, add these ingredients:

2 T mayo
2 T sour cream
2 T cream cheese
1 T heavy cream

Whip with a mixer until creamy.

Pumpkin Sweet Potato Pie

1/2 can organic pumpkin
1 medium sweet potato, baked mashed and cooled
2 eggs, beaten
1 can eagle brand sweetened condensed milk
1 t vanilla extract
1/4 t ginger
1/4 t pumpkin pie spice
1/4 t cinnamon
1/4 t kosher salt
1/4 t nutmeg

1 pie crust

With a whisk, beat pumpkin and sweet potato together along with vanilla, spices and salt.
Add beaten eggs and eagle brand. Beat until smooth. Pour in pie shell.


Bake on 425 for 15 minutes, to set pie. Then turn oven to 350 degrees and bake 20 minutes. Leave in an additional 15 minutes with oven off.

Almond Toffee Crack

This was an experiment that I almost tossed out! Glad I let it set up and tasted it, yum!!!



1 1/4 c slivered almonds

1 stick butter
1/2 c sugar
1 1/2 T water

1 T vanilla extract

White chocolate candy melting wafers

Grease 13x9 pan bottom with butter.
Add 1 c slivered almonds, spread out over bottom.

Bring to a boil, the butter, water and sugar, boil until golden brown, around 8 minutes, stirring continuously cause it will burn.
Remove from heat, continue to stir.
Pour over nuts.
Add white chocolate, add 1/4 c nuts.
Stir slightly to melt chocolate.
Place in freezer until set.
Break into yummy goodness!!!

Smoked Turkey and Smoked Sausage Veggie Stir Fry with Pepper JackLimoncello Sauce

1 link grilled smoked sausage, chopped
1 c smoked turkey, chopped
Drizzle of olive oil
1 t clarified butter
1 bunch asparagus tips, chopped
1 leek, chopped
2 carrots, match stick cut
1/2 t chicken base seasoning
1/4 c water
1/8 c cream
1/4 c pepper jack
1/8 c limoncello 
Cracked black pepper, to taste



Stir fry veggie in oil and butter until slightly soft, add meat, liquids, cheese and seasonings.
Reduce down until sauce thickens.

Serve with toasted crusty garlic bread!

Grilled Chicken Tenderloin on Veggie Zoodles






16 So Jesus answered them, "My teaching is not mine, but his who sent me.

18 The one who speaks on his own authority seeks his own glory; but the one who seeks the glory of him who sent him is true, and in him there is no falsehood. - John 7:16-18









4 Chicken tenderloin, cut into bite size pieces
Marinate for 20 minutes in this mixture:
1/4 c honey
1/2 c zesty Italian dressing
1/2 lime, juiced

Veggie zoodles
Zucchini made into noodles

Drizzle a little oil in skillet, heat and add chicken and marinade.
Cook until done, cooks really quickly and resembles grilled chicken.
Remove chicken, clean skillet.
Drizzle a little oil, heat and add veggie noodles.
Stir fry until slightly soft.
Add chicken back in just to heat.
Eat and enjoy!!!

Trader Joe's Mandarin Orange Chicken served on Zucchini andCarrot/Veggie Noodles

1 prepared pack of Trader Joe's Orange Mandarin Chicken
2 zucchini and 1 carrot, make veggie noodles 
1 leek, sliced
1 t roasted garlic
Drizzle of olive oil
1 t toasted sesame oil
Kosher salt to taste

Prepare chicken in toaster oven.
Set aside.
Sauté leek, garlic, squash and carrot in oil.
Drizzle the sesame oil on the veggie noodles. 
Remove from heat.
Add the packs of sauce in the skillet, when melted add chicken.
Stir to coat chicken and push to one side of skillet.
Turn off heat.
Add veggie noodles back in to heat.
Serve at once.

Christy's Fresh Herb Sausage Balls

3 c pioneer biscuit mix
Pound sausage, I used Tennessee Pride
4 c shredded sharp cheddar
1/2 c Parmesan cheese, shredded
1/2 c milk
1/2 t fresh rosemary, chopped
1 1/2 t fresh parsley, chopped

Preheated 350 degree oven
make I inch balls 
bake 20-25 min

Blackberry Balsamic Glaze





Just so, I tell you, there will be more joy in heaven over one sinner who repents than over ninety-nine righteous persons who need no repentance. - Luke 15:7







1/2 c blackberry preserves
1/8 c aged balsamic vinegar

Simmer and reduce. Yum!!

Limoncello Sauced Smoked Turkey and Andouille Over Zucchini Zoodles

Drizzle of olive oil
1 c Smoked turkey breast, chopped
1 inch piece Andouille sausage, diced 
1 Shallots, diced
1 t Roasted garlic

Veggies
10 Left over Greek seasoned baby potatoes, quartered 
1 zucchini, make zoodles( zucchini noodles made with a hand held julienne tool)

Sauce
1/4 c Limoncello 
1/4 c cream
Salt and pepper to taste


 In the oil, sauté the shallots and sausage until tender, next add garlic, and turkey.
Sauté just to heat turkey.
Quickly add cream, limoncello and seasoning to make sauce. Reduce to sauce consistency.
Add veggie mix. Yum!

Cornbread and Croissant Southern Style Dressing




1 Peter 1:
8 Though you have not seen him, you love him. Though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory,
9 obtaining the outcome of your faith, the salvation of your souls.




1 10 inch cast iron skillet of cooked buttermilk cornbread 
4 toasted croissant, cut in half to toast, after toasting, dice
1 can cream of celery 
1 can cream of chicken
3 T fresh chopped sage
1 leek, sliced
1/4 c heavy cream
2 stalks celery, sliced thin
1 1/2 -2 c smoked chicken or rotisserie chicken
1 1/2 quarts Chicken stock, reserve the rest for gravy

In a 13x9 deep dish pan, crumble cornbread. Add the toasted croissant, soups, sage, leeks, cream, celery and chicken. Now add stock. Drizzle cream on top, bake 450 degrees for 50-60 minutes or until browned.

Sun Dried Tomato and Pancetta Pasta





Then he said to them, "But who do you say that I am?" And Peter answered, "The Christ of God." - Luke 9:20



Prepared pasta, 2 cups

4 oz chopped pancetta
Drizzle olive oil
1 shallot, diced
3 T julienned Sun dried tomatoes
1 T Lemon juice
1/4 c White wine 
1/4 c Water
1 t Sugar
1 t roasted Garlic
2 T Heavy cream
1/2 t-1 t Ted's special spice mix, under seasoning tab this blog
Cracked black pepper

Sauté shallots, sun dried tomatoes and pancetta in a drizzle of olive oil, drain.
Remove and drain on paper towels.
Add all liquid ingredients and seasoning, reduce to a gaze.
Add pancetta mixture back in.
Toss in pasta.
Serve with garlic bread.

Smoked Turkey Leg Green Beans

2lbs Fresh green beans
1 Onion, sliced
1 T Chicken base seasoning
1/2 t Garlic granules
Drizzle Olive oil
1/2 t Cajun seasoning
Cracked black pepper
1 Smoked turkey leg, cut meat 
2 c Water

Boil until green beans are tender.

Carb Friendly Fake Creamed Potatoes

1 head of cauliflower, cut out stems
2 c Water
1 T Chicken base seasoning
1/2 t garlic granules
1/2 t Cajun seasoning
Cracked black pepper to taste

Whipping ingredients:
2 T cream cheese
1 pat butter
1 t Parsley
2 T Parmesan Reggiano 
1 T heavy cream

This is one of those things you see and don't believe but say what the heck, I'll give it a try.
They were delicious! 
I had a 4 inch head which had only 13 g of carbs.

Boil the cauliflower in the seasoned water for 10 minutes.
Drain all the water.
While the cauliflower is still warm, add the whipping ingredients.
Beat with mixer until fluffy.

Bourbon Brown Sugar Bananas on Belgium Waffles

3 bananas, sliced 
1 pat butter
1/4 c brown sugar
2 T bourbon
1 T vanilla
2 T heavy cream

Belgium waffles, recipe under breakfast tab 

Melt butter in a sauté pan, add brown sugar, vanilla and bourbon.
Cook 2 minutes.
Add bananas and cream. 
Sauté until sauce slightly thickens.

Smoked Jalapeño Mac and Cheese








Alas for the day! For the day of the LORD is near, and as destruction from the Almighty it comes.  - Joel 1:15







1/2 of a jalapeño, chopped
1 shallot
1 t roasted garlic, mashed
Drizzle of olive oil for sautéing pepper and shallot 
1 box of elbow macaroni, cooked al dente
1 c velveeta
1/2 c smoked Gouda
1/4 c Gruyere 
1/4 c mozzarella 
1/2 c sharp cheddar
1 t smoked paprika
1 t dry mustard
Salt and pepper to taste
1 c half and half
1/2 c heavy cream
Extra half and half


Topping
2 beaten eggs
1 c sharp cheddar

Place the cooked and cooled macaroni in a 13x9 foil pan.
Drizzle oil in sauce pan, add shallot, peppers and garlic and cook until shallots are soft.
Place the half and half, cream, and all the cheeses in the sauce pan with the pepper shallot mix.
Melt the cheese to make the sauce.
Add the seasonings.
Pour sauce on the macaroni and add more half and half so that the macaroni and cheese is creamy.
Sprinkle 1/2 c cheese on top, take a fork and swirl in the beaten eggs. Add the rest of the cheese.
Smoke for 2 hours on 250 degrees.

EJ's Citrus Bourbon BBQ Sauce







But my eyes are toward you, O GOD, my Lord; in you I seek refuge; leave me not defenseless!  - Psalm 141:8







44 oz Heinz ketchup
1/2c to 3/4c white vinegar (according to taste) 
1T Garlic Herb seasoning
1T smoky chipotle Tabasco
2T McCormick Cajun seasoning
1/2c to 3/4c white sugar (according to taste)
1/2 of lime squeezed for the juice
1 T molasses
1/2 t Salt
Cracked black pepper
Dash Worcestershire sauce
1/2 c of Jim Beam



Simmer for 15 minutes.


The flavor of this is tart, sweet and slightly spicy hot with an undertone of yummy bourbon flavor!!!
Taste by dipping a spoon in, shake off excess.
You can adjust the flavor, more sugar or more bourbon etc. as you simmer the sauce.

Limoncello Creamy Sauce Lobster and Shrimp Pasta

4 oz of cooked Langoustine Lobster
10 cooked and cleaned Shrimp 
5 Mushrooms, sliced
1 Leek, sliced
1 pat Butter
Drizzle Olive oil
Cooked Pasta
1/4 c Limoncello 
1/4 c Parmesan
1/4 c pasta water
1/8 c Half and half
1/2 t Chicken base seasoning
Cracked black pepper


Sauté leeks and mushrooms in butter/oil mixture with seasoning base.
Add limoncello, half and half, Parmesan, pasta water and pepper.
Let sauté until thick, add shrimp and lobster.
Heat through.
Toss in pasta.

FIREBIRD'S KNOCK OFF LOBSTER SPINACH QUESO DIP

1 T OLIVE OIL
1/4 C GARLIC/SHALLOT MIX 
1/2 BAR CREAM CHEESE
1/2 BAG SPINACH
1 T SHRIMP BASE STOCK, RECIPE UNDER FISH/SHRIMP TAB
1/2 CAN TOMATO SOUP
3/4 C EVAPORATED MILK  
1 C PEPPER JACK CHEESE 
1/4 POUND LANGOUSTINE LOBSTER( PUBLIX FROZEN SECTION)



CHOP SPINACH AND LOBSTER. 
IN OIL, SAUTÉ GARLIC/SHALLOT MIXTURE UNTIL SOFT. 
ADD CREAM CHEESE, TOMATO SAUCE, MILK AND JACK CHEESE AND SHRIMP BASE. 
MELT CHEESE AND WHISK TOGETHER UNTIL BLENDED. 
ADD LOBSTER AND SPINACH. 
SIMMER ABOUT 10 MINUTES UNTIL HEATED THROUGH.

Shrimp Base Stock







The LORD will fulfill his purpose for me; your steadfast love, O LORD, endures forever. Do not forsake the work of your hands.  - Psalm 138:8







shrimp tails, I used 10 tails 
2 c water
1 t chicken base seasoning
1/2 c chopped leeks
1 carrot, chopped
1 celery stalk, chopped
1 t roasted garlic, mashed
4 mushroom stems
1 bay leaf
4 sprigs fresh thyme
1/4 teaspoon crushed
Fresh cracked pepper
4 parsley stems



Bring water to boil.
Add all ingredients and simmer 20 minutes.
Strain, reserve liquid and freeze.

Smoked Chicken Noodle and Veggie Stir Fry

2 c Smoked chicken or rotisserie chicken
Asparagus 
Mushrooms
Leeks
Carrots
1/4 c 1/2 and 1/2
Chicken Ramen noodles, discard flavor pgk and reserve 1 c pasta water
1/4 c White wine
2 heaping T Chicken base seasoning 

Make ramen and set aside.

Veggies:
1 bunch tiny stalk Asparagus 
6 Mushrooms, sliced
1 Leeks, sliced
2 Carrots, matchstick cut
Stir fry in a few drizzles of olive oil until slightly tender.

Add chicken, then add wine, 1/2 and 1/2 , seasoning, and pasta water.
Sauté until sauce reduces and thickens.
Add cooked and drained ramen.

Quick and Easy Mini Cinnamon Rolls










Blessed is everyone who fears the LORD, who walks in his ways!  - Psalm 128:1




Pillsbury Crescent Dough Sheets
Cinnamon sugar mixture
Butter in tub 

Glaze 
1/2 c Powdered sugar
1 t Milk
Drop 1/2 & 1/2
Drop Vanilla extract
Needs to be thick but pourable.

Bake 20 minutes on 375 degrees.

Roll out dough.
Sprinkle sugar/cinnamon mixture from end to end.
Take a fork and scrape the butter into tiny shreds.
Scatter over sugared dough.
Roll tightly. 
Slice into rolls.
Pour glaze on top.

Mixed greens, kale-turnip greens mustards roughly 32 oz
1 Onion, sliced
5 Mushrooms, sliced
1 t roasted Garlic
1 link grilled Smoked sausage
1 t Cajun seasoning
1 T Chicken base seasoning
2 T Sugar
2 t Pepper sauce
Olive oil for sautéing 
Water

Sauté, onions and mushrooms until softened, add roasted garlic.
Add dry seasonings, pepper sauce, sausage and then the water.
Start with 3 c of water.
Add greens next and stir.
You want enough water to come 3/4 of the way to the top of greens. 
Simmer on medium heat for 45 minutes. 
Greens should be tender.
Serve with cornbread.

Chimichurri Sauced Smoked Chicken And Broccoli Casserole






Behold, as the eyes of servants look to the hand of their master, as the eyes of a maidservant to the hand of her mistress, so our eyes look to the LORD our God, till he has mercy upon us.  - Psalm 123:2






4 c Smoked Chicken or rotisserie 
1 can cream of Chicken soup
2 T Chimichurri sauce, recipe on sandwich tab
1/4 c White wine
1 c Broccoli florets
1/4 c Mayo 
1/2 t Garlic granules
1/2 t Greek seasoning 
1/4 c Sour cream
1/4 c Cheddar
1 Onion, sliced

Topping
1/4 c Panko 
1/4 c Onion rings in a can
1/2 c Cheddar 

Place Chimichurri sauce in skillet, add onions, broccoli and sauté.
When onions are tender add wine and sauté.
Cut off heat.
Set aside.
Place chicken, soup, mayo and sour cream in a casserole and mix well.
Add seasonings.
Add veggie mix with wine drippings.
Sprinkle Panko, then onion rings and finish with cheese.
Bake 350 degrees for 25 minutes.

EJ's BBQ Sauce Sprite Chicken





Our help is in the name of the LORD, who made heaven and earth.  - Psalm 124:8




Pat of butter
3/4 c BBQ sauce, I make my own
3/4 c Sprite 
6 chicken tenderloins

Melt butter, add Sprite and sauce.
Bring to a boil and add chicken.
Cook covered on medium heat for 10 minutes on each side. 
Keep flipping every couple of minutes until the sauce thickens. Yum!!

Argentinian Chimichurri Steak Sandwich






Turn to me and be gracious to me, as is your way with those who love your name.  - Psalm 119:132





Sauce:
1/2 c lightly packed chopped flat leaf parsley
1 t roasted garlic, mashed
1/4 t sea salt
1/8 t freshly ground pepper
Pinch chili pepper flakes
1 T fresh oregano leaves 
2 T shallot or onion, minced
1/3 c light olive oil
1 1/2 T red wine vinegar
1 1/2 T fresh lemon juice

Steak:
1 filet
Sliced onion
1 t applewood rub

Onion buns, toasted

Mashed Avocado, optional


Pan sear rubbed steak.
Continue cooking until medium or desired type of doneness.
Slice thin.
Build sandwich in this order.
Toasted bun, sliced steak. Chimichurri sauce, grilled onions, avocado mashed onto bun

Lemon Herbed Sweet Potato Onion Medley






89 Forever, O LORD, your word is firmly fixed in the heavens.

Sweet potatoes
Red new potatoes
Onions
Fresh lemon juice
Garlic granules
Greek seasoning 
Fresh rosemary 
Olive oil
Kosher salt 
Malabar pepper

Prepare potatoes and onions by cutting into quarters.
Toss in oil.
Season.
Squeeze lemon over potatoes.
Bake 375 degrees for 50-60  minutes.

Mesquite Rubbed Turbinado Grain Sugar Pan Seared Chops

4 center cut bone in pork chops, brine in sugar and salt water for a few hours
Mesquite rub
Coarse sea salt
Malabar pepper
Turbinado grain sugar, use sparingly
Applewood rub

Drizzle olive oil in large skillet.
Remove chops and drain.
Dry with paper towel.
Season chops with salt, pepper, both rubs and grain sugar.
Heat, sear chops.
Flip season on other side.
Cover, reduce heat, cook till internal temp is 150 degrees.

Egg Noodle Stir Fry

1 c spinach
1 shallot
Drizzle of olive oil
1 c left over cheesy sausage salsa shallot dip
Prepared Egg noodles, 2 cups
1 c Pasta water, plus 1/2 c half and half, reduce to make a sauce
Pinch of nutmeg
2 c chopped Rotisserie chicken

Sauté spinach and leek in a drizzle of olive oil.
Add chicken and dip.
Add noodles and water.
Sauté until sauce is creamy and thickened.

Cheesy Sausage Salsa and Shallot Dip







I remember your name in the night, O LORD, and keep your law.  - Psalm 119:55




1 diced shallot
1 lb mild sausage
1/3 of a block of cream cheese, chopped
1 8 oz block of Velveeta, chopped
6 oz of mild Pace Picante salsa

Brown sausage, drain if needed, add shallot.
When shallot is softened, add cheeses and melt on low heat.
Add salsa.
Serve with taco chips.
