Buttermilk Soaked Fried Eggplant































2 Who stirred up one from the east whom victory meets at every step? He gives up nations before him, so that he tramples kings underfoot; he makes them like dust with his sword, like driven stubble with his bow. 
3 He pursues them and passes on safely, by paths his feet have not trod.

Peel Eggplant and slice 1/8 in slice.
Soak Eggplant in salted water for 1 hr.
Drain on paper towel.
Soak slices in buttermilk for 5 minutes while oil heats in skillet.
Mix 1/2 c cornmeal with 1/4 c flour. 
Season eggplants with Mrs. Dash table and seasoned salt.
Dredge in cornmeal flour mix. 
Fry in hot oil.

Apple Cider Molasses Pork Tenderloin

An ej original recipe!!


1 pack of plain pork tenderloin, cut in half


Marinade
2 c Apple cider
1 t Molasses 
1/8 c Salt
1/8 c Sugar

Marinate in fridge1-2 days. 
Sear in a little oil in skillet.
Bake preheated 450 degree oven for 10 minutes on rack, flip and repeat.
Done temp 155, rest covered with foil 10 minutes. Slice on the diagonal.

3 Pepper Pico de Gallo

An ej original recipe!!

1 JalapeƱo, diced 


1 small Poblano, diced 
1 Serrano, diced 
1 Vidalia onion, chopped
6-8 c Sweet 100 tomatoes, sliced in half 
2 T Apple cider vinegar 
1 T Toasted cumin
Pinch Garlic granules 
1 c Fresh cilantro 
1/2 t Sugar
Salt to taste
Pepper to taste

Place sweet 100 between 2 plastic take out lids.
Put pressure on top and slice through with sharp butcher knife.
Set aside.
Using a mortar and pestle, place 1 t coarse salt in bottom along with 1 t each of all the different peppers, onions, cilantro, and 3 of the 100 tomatoes.
Mash well, dump in bowl along rest of other ingredients. 
Stir to incorporate.
Taste and adjust.
Serve on tortillas chips!!

Dark Cherry Ice Cream Cake

Ice cream sandwiches cut in half
Dark cherry ice cream
Hot fudge topping, spread thickly
2 cups Crushed Oreos 
Cool whip
Slivered almonds, sprinkle over top


Place parchment in bottom.
Using a spring foam pan, place halved ice cream sandwiches around rim.
Place softened ice cream in the bottom of pan, the hot fudge topping, then the chunked Oreos, softened cool whip and almonds. 
Cover with plastic wrap and freeze at least 4 hours but 6 is better.
Slice and serve!

Pimento Cheese Grits Breakfast Bowl

Grits, quick grits, 3 T cooked in milk/water mixture 2 c each
Salt to taste
1/4 c Pimento cheese
Scrambled egg white 
Link Sausage 

Add liquids, salt, pimento cheese and grits.
Heat, stirring constantly.
They will boil over. 
Cook grits on medium low until thickened.
Add eggs and cooked sausage on top.

Sweet Tea Skillet Chicken Thighs

































1 Praise the LORD! Praise the LORD, O my soul! 
2 I will praise the LORD as long as I live; I will sing praises to my God while I have my being.  - Psalm 146:1-2


6-8 bone in skin on thighs

Sweet tea brine
1 c Sweet Tea
1/8 c Sugar 
1/8 sea Salt
1/4 c lemonade

Mix. 
Trim some of the excess skin.
Leave enough fat to cover dark meat.
Put in Gallon ziplock, pressing out air, add 3-4 Thighs.
Set in bowl and repeat.
Marinate at least overnight.

Set oven to 450 degrees, add 2 cast iron skillets and heat till temp is reached.
Add 2 T butter to hot skillet, place seasoned thighs skin side down in hot buttered skillet.
Cook 15 and flip cook another 15 minutes until temp is at least 165 degrees.

Meaty Gumbo

1/2 of a rotisserie chicken, shredded 
1/2 lb smoked pulled pork
1/2 lb grilled smoked sausage
2 cartons free range chicken stock
1 can stewed tomatoes(chop tomatoes)
2 c sliced okra
1 chopped onion
1 chopped bell pepper
1 chipotle pepper in adobo(Hispanic isle canned)
1/2 c BBQ sauce
1 c instant brown rice or white rice
2 T Cajun seasoning
1 t garlic salt
1 t kosher salt

Put all ingredients in a dutch oven or stock pot bring to boil and simmer for 45 minutes.
Serve with cornbread.

Sweet 100 Sun Dried Tomato Bruschetta

An ej original recipe!


1 c seasoned sweet 100 tomatoes that are dried in convection oven
1 t white balsamic vinegar
2 t roasted garlic
2 T fresh chopped sweet basil
2 t Olive oil
Salt and pepper to taste 

Mix and add to half pint jar.

Add Parmesan before serving on toasted French bread.

BBQ Stuffed Baked Potato

Large Yukon Gold Potatoes 
Grease with olive oil, cover in coarse kosher salt

Roast on oven rack with foil on the rack below, 450 degrees for 45 minutes or until soft. 
Slice in half just on top, squeeze each side to mush up.
No need to salt, skin is edible!


Shredded BBQ pork, make your own or pick up from BBQ joint
BBQ sauce

Layer in this order:
Butter
Sour cream
Chopped Steamed seasoned broccoli 
Sauced BBQ pork
Cheese, shredded sharp cheddar

Sun Dried Tomato Dressing on Garbanzo Bean Pasta and Chicken

1 For since the law has but a shadow of the good things to come instead of the true form of these realities, it can never, by the same sacrifices that are continually offered every year, make perfect those who draw near.
2 Otherwise, would they not have ceased to be offered, since the worshipers, having once been cleansed, would no longer have any consciousness of sins?
3 But in these sacrifices there is a reminder of sins every year.
4 For it is impossible for the blood of bulls and goats to take away sins.
5 Consequently, when Christ came into the world, he said, "Sacrifices and offerings you have not desired, but a body have you prepared for me; 
6 in burnt offerings and sin offerings you have taken no pleasure. 
7 Then I said, 'Behold, I have come to do your will, O God, as it is written of me in the scroll of the book.'" 
8 When he said above, "You have neither desired nor taken pleasure in sacrifices and offerings and burnt offerings and sin offerings" (these are offered according to the law),
9 then he added, "Behold, I have come to do your will." He does away with the first in order to establish the second.
10 And by that will we have been sanctified through the offering of the body of Jesus Christ once for all. - Hebrews 10:1-10


Sun dried tomato dressing
1 t Alabama white sauce
1 t Olive Garden Italian dressing
1 t JalapeƱo and Serrano pepper sauce 
3 T Mayo 
2 T sun dried tomatoes 

2 c chopped smoked chicken

Veggies
1 cucumber, seeds removed and chopped
1/2 c Vidalia Onion, sliced thin 
Small can sliced Black olive 
Garbanzo beans
1/4 c Red bell peppers 
1/4 c Celery
1 c Sweet 100 tomatoes 
2 c chopped baby Spinach 

Toss together with dressing and chopped smoked chicken.

Bacon Tomato Breakfast Pie












































Your name, O LORD, endures forever, your renown, O LORD, throughout all ages.  - Psalm 135:13


An ej original recipe!!

2 large tomatoes, peeled, sliced and lightly salted 
1-1/2 c sliced sweet 100 cherry tomatoes 
1 regular pie crust, baked set aside to cool (I love Piggly Wiggly brand pie shells)
Seasonings of your choice
3/4 c sharp cheddar, grated
3/4 c Italian blend cheese, Parmesan-Asiago-Pecorino 
1/4 c Mayo

6 slices of bacon, fried crisp and crumbled 
1/4 sliced onion, cooked tender in bacon grease and drained
Set aside

Bake in preheated 450 degree oven for 8 minutes.
Take fork and poke pie.
Lightly sprinkled with both cheeses.
Set aside.

Slice large tomatoes and lightly salt, put on several layers of paper towels to drain.
I let mine drain 10 minutes, then I slightly mashed them.

Into the cooled pie shell, lay large tomato slices. 
Lightly sprinkle with both cheeses.
Add sliced sweet 100's.
Add cooked onions.

Take remaining cheese and mix with Mayo.
Take dollops of Mayo/ cheese mixture and scatter over tomatoes.
Turn oven down to 350 degrees.

After baking for 15 minutes, take pie out, using a fork spread cheesy gooey mixture evenly over pie.
Add crumbled bacon.

Return to oven and bake an additional 10-15 minutes with the oven off.
