Chestnut Leek Fennel Stuffing Topped With A Roasted Chicken Thigh

    [5] If you will seek God

        and plead with the Almighty for mercy,


 

 

5 boneless skinless Chicken thighs 

Drizzle with olive oil

Season

Squirt with lemon juice

Sear in olive oil


Seasoning for chicken 

1 t Salt

1 t Pepper 

1 t Smoked paprika 

1 t Garlic granules 

1 t Onion powder 

1 t Thyme

1 t Rosemary

1 t Oregano 

Reserve 1 T for bread crumbs 



Stuffing ingredients 

Publix bakery Italian loaf (10 slices) chopped

bread crumbs tossed in olive oil

1 T seasoning 

Toast and set aside

1 toasted croissant, chop and set aside

Mix together 


Veggies cooked in 2 T butter

Seasoning for stuffing

1/2 t Thyme 

1/2 t Rosemary 

1 T fresh Sage

1/2 t Oregano 

Add in veggies

1sliced small Onion

1/4 c Leeks

1/8 c celery 

1/8 c chopped chestnuts(these are roasted) 

1/8 c chopped mushrooms 

Sauté until tender

Add 

1/8 c Sauvignon Blanc 

1/4 c half and half

1 -1/2 c chicken stock

This makes the gravy sauce for stuffing 

Reserve 1/8 c for top of thighs


Mix gravy into bread crumbs 

Spray nonstick in 13x9 Casserole pan

Stuffing should be pretty wet but not gooey

Place a good handful of stuffing in 5 spots

Lay thigh on top and slightly mash down

Air fry preheated 375 degree for 25 minutes or until Thighs are 165 degrees

Last 10 minutes spoon remaining gravy over thighs

Honey Chipotle Dressing





























Psalm 141:8


    [8] But my eyes are toward you, O GOD, my Lord;

3/4 c olive oil

4 T red wine vinegar 

3 T Honey

1/2 t dried oregano 

1/4 t toasted cumin

1 t salt

1/2 t coarse black pepper 

1 chipotle pepper in adobo sauce, mashed 

2 t roasted mashed garlic

Whisk until thickened 

Serve on salad

Greek Yogurt Ranch Dressing





























 

 

1 Corinthians 15:54-57

1 T dried parsley

1 t garlic granules 

1 t onion powder

1/2 t ground black pepper

1 t fine pink Himalayan salt

1 T dried chives

1/2 c full fat plain greek yogurt

1/4 c buttermilk

1/4 c spreadable cream cheese

1 t Dijon mustard

1 t lemon juice


Whisk together well.

Refrigerate to meld flavors!

Experiment: Ham Stock and Cornbread Dressing

































Was very good!!

A little different taste!



Acts 3:14-15

1 skillet of Cornbread, crumbled 

2-3 Toasted and diced croissant 

1 qt Ham Stock with Ham bits

1 Leek, chopped  

1 rib of Celery, chopped 

Fresh diced sage to taste

1/8 c Half and half


Using a 13x9 foil pan, crumble cooled cornbread then add diced croissant.

Add leeks, sage and celery.

Add 1/2 stock with bits of ham and stir.

Mixture should be really wet.

Add more stock if necessary but reserve

1 c to make gravy.


Gravy ingredients 

1 c Ham Stock

1/4 c Milk

pepper to taste

1 t chicken base seasoning

Cornstarch slurry to thicken

Salt and pepper to taste

Sweet Caper Slaw Sandwich Dressing

1/2 c Shredded cabbage


Make dressing and add cabbage.

Refrigerate for 1 hr.

Serve on Piccata Chicken sandwich.


Dressing

2 T fresh diced Parsley

1/2 t Dijon mustard

1 t Sour cream

1/4 t Anchovy paste

1/2 - 1 t Sugar

2 T Olive oil

1 t Apple cider vinegar

1/2 t Capers, mashed

1/4 t dehydrated shallots

Salt and pepper to taste

Avocado Salsa Verde

1 avocado, chopped
1/2 c  salsa verde
3 T onion, chopped
Squeeze of lime
1 t sugar
1 T Mayo
1/2 t toasted cumin
Mix in food processor.

Pulse in a small food processor just till incorporated.

Honey Cilantro Lime Dressing

1/4 c lime juice
1/4 c Greek yogurt 
1/2 t sugar
1 T Honey 
1 small onion chopped
1/4 sour cream 
1/4 c chopped avocado
1/4 c Cilantro 
1 chipotle in adobo
1 t smoked cumin
1 t smoked paprika 
Splash of olive oil
Smoked salt
Cracked black pepper

Blend in blender.

Pulled Pork Cornbread Dressing







By this we know love, that he laid down his life for us, and we ought to lay down our lives for the brothers. - 1 John 3:16






3/4 lb. pulled pork(I use Jim n Nicks)
1 pan cornbread 
1 Leek, sliced
1 stalk celery, sliced
Fresh sage
3 Toasted croissants, chopped
1 can of cream of celery
1 can of cream of chicken
1/4 c Heavy cream
Stock made from pulled pork, 4 T chicken base seasoning, 1 qt. water (reserve some stock and pork for gravy)

Make stock and set aside.
Make cornbread and set aside.
Crumble corn bread in a deep pan, I use 13x9 foil pans.
Add croissants, veggies, sage, enough stock so that the crumbled bread mix is swimming in stock.
Add soups and spoon out some of the pork from the stock and add too.
Mix well and add cream to top.
Bake in a preheated 425 degree oven until browned and toasted.

Garden Green Onion Bacon Ranch

1/2 pgk. of Hidden Valley Garden Green Onion dry dip
6 slices fried crispy bacon, diced
2 T Mayo
1/8 c buttermilk
2 T sour cream
1/8 c olive oil, whisked in after other ingredients are incorporated

Cornbread and Croissant Southern Style Dressing




1 Peter 1:
8 Though you have not seen him, you love him. Though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory,
9 obtaining the outcome of your faith, the salvation of your souls.




1 10 inch cast iron skillet of cooked buttermilk cornbread 
4 toasted croissant, cut in half to toast, after toasting, dice
1 can cream of celery 
1 can cream of chicken
3 T fresh chopped sage
1 leek, sliced
1/4 c heavy cream
2 stalks celery, sliced thin
1 1/2 -2 c smoked chicken or rotisserie chicken
1 1/2 quarts Chicken stock, reserve the rest for gravy

In a 13x9 deep dish pan, crumble cornbread. Add the toasted croissant, soups, sage, leeks, cream, celery and chicken. Now add stock. Drizzle cream on top, bake 450 degrees for 50-60 minutes or until browned.

Smashed Avocado Aioli

1 Avocado, peel, seed and smash with a fork
1/2 t Mayo
Pinch of Kosher salt
Pinch of Garlic granules
Pinch of Grill Mates Applewood rub
Pinch of Grill Mates Mesquite rub
1/2 of a lime, juiced

Add all ingredients and stir together with a fork.
Use as a dip or a sandwich spread.

BBQ Ranch Dressing and Dipping Sauce

1/4 c Buttermilk
1/4 c mayo
1/4 c BBQ sauce
1 t Apple cider vinegar
1 t Dry mustard
1 t Dill 
1/2 t Kosher salt
1 t BBQ seasoning
A few turns Cracked pepper
1 t Worcestershire sauce
1/2 of a Lime juiced and zested
1 t honey
1/2 t red pepper flakes 
Roasted garlic

Mix all together with whisk.

Sweet Bourbon Smoky Bacon Jam

2 T Jim Beam
1/2 c Water
1 t chicken base seasoning
1/8 c brown sugar
1 Shallot, diced
Splash liquid smoke
1/2 package Bacon, diced
1 Vidalia onion, chopped
Splash of Sriracha 
1/2 t molasses 

What can I say, this stuff is delicious!!! Cover your breakfast sandwich, your lunch sandwich, your burger or you hot dog with slightly sweet smoky bourbon bacon deliciousness!!!

Sauté bacon, until almost crispy, add onions and shallots cooking until all ingredients are done. Add liquid smoke, Jim Beam, chicken base seasoning and brown sugar, stirring to incorporate. Now add water, molasses, and Sriracha, cook down on medium heat until it's thickened. Refrigerate.

DIY Zesty Italian Salad Dressing

1 c light olive oil 
1/4 c white vinegar
2 T apple cider vinegar
1 T roasted garlic
2 T diced shallots
2 T diced red bell pepper
2 t Dijon mustard
1 T honey
1 t kosher salt
1/4 t dried oregano
1/4 t fresh diced Greek oregano
Pinch of red pepper flakes
Freshly ground black pepper, to taste

Combine all of the ingredients in a jar with a tight fitting lid.

Sesame Oil Asian Dressing











James 2:26

3 T clover honey
1 1/2 T Mitsukan rice wine vinegar
1/4 c light mayo
1 t Grey Poupon Dijon
1/8 t Imperial Dragon sesame oil

Whisk together.
