Psalm 119:11

Water just even with the greens after putting in large pot

2 lb collards, washed, stemmed and cut in strips

1 Onion, chopped 

1 c Ham pieces

2 t Chicken base seasoning 

2 T brown sugar 

1 T Bacon grease

2 t Season salt

2 T Worcestershire sauce

2 T Apple cider vinegar 

1/2 t Red pepper flakes 

1 T Roasted garlic

1/2 t Smoked paprika 

1-2 t additional white sugar if still bitter

Boil until tender

An ej original recipe! 

 

 

2 T butter 

1 T olive oil

1 lb button mushrooms 

1 small diced sweet onion

2 T roasted garlic 

2 T Sauvignon Blanc 

1 t Thyme

2 t Parsley

Salt and pepper to 


Heat butter and oil 

Add herbs and bloom

Add onions and garlic

Sauté until onions are tender

Add wine, slightly reduce 

Add mushrooms

Flip a few times

Cook until soft and lightly browned 

Salt and pepper

Swoon

1 can Multi selection of beans( I pressure can these to keep in pantry, kidney, black, pinto, navy)

1/2 c Ketchup 

1 T Worcestershire sauce

1 t fresh Lemon juice

1/4 c Brown sugar 

2 T White Vinegar 

2 T Molasses 

1 T Hot sauce(Cholula)

1/2 c Onions

1/2 c diced red bell pepper 

Salt and Pepper to taste

2 T Cajun seasoning 

1 c diced BBQ pork 

1 c Fried chopped smoked sausage

Simmer for 45 minutes

1 small cabbage, chopped 

Water just to cover

2 t Chicken base seasoning 

1/2 t Garlic granules 

1/2 t Black pepper 

Boil until tender, drain


1-2 slices pepper jack cheese

1 slice provolone 

1/4 c sour cheese

1/2 c Crispy bacon bits 

Add cheeses and sour cream 

Top with bacon bits

Ham chunks or ham bone

1 lb dried black eyed peas, picked for debris and washed

1 small Onion, chopped

1 small Jalapeño, chopped 

2 T roasted Garlic

1 T Sugar

2 t Cajun seasoning 

2 t chicken base seasoning 

Water to cover 1/4 inch over Peas

Set to pressure 

Cook 45 minutes

1/2 Olive oil and 1/2 Apple Cider Vinegar to cover( amount depends on jar size and number of peppers)

1 T Roasted garlic

Salt and pepper to taste 

8 mini Fire Roasted red peppers, chopped 

Clean wide mouth Mason jar


Roast peppers over fire on gas stove top

Cover with plastic wrap and cool

Cut tops off and take seeds out

Chop peppers

Fill jar

Add salt, pepper and roasted garlic if you want 

Fill with half of the oil and half of the Apple cider vinegar 

Use in many different dishes

Cheesy Cauliflower Casserole

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Jude 1:22-23


[22] And have mercy on those who doubt; [23] save others by snatching them out of the fire; to others show mercy with fear, hating even the garment stained by the flesh.



2 heads cauliflower florets, steamed 10 minutes 

1 8 oz tub of spreadable cream cheese 

1/2 c sour cream

2 c shredded Gouda cheese, save 1/4 c for top

Salt and pepper to taste

1 t garlic granules 

1/2 t onion powder

1/2 c crispy bacon bits

1/4 c dried chives


Microwave cauliflower in a steamer 

Drain if necessary 

Mash steamed cauliflower 

Spray 13x 9 Casserole with non stick

Add cream cheese and sour cream to cauliflower 

Stir well

Add seasonings and chives 

Stir

Add cheese topping 

Air fry 400 degrees for 15-20 minutes

Yellow Squash Spinach and Mushroom Casserole

2-3 yellow squash or Zucchini 

1 small onion

2 c Spinach 

1/2 c sliced button mushrooms 

Season with garlic granules, pepper and seasoned salt


1 T Cream cheese

1/2 c White cheddar 


Microwave 6 minutes 

Drain 

Stir in spreadable cream cheese 

White cheddar Cheese

Place in small non stick sprayed casserole dish  


Topping

1/4 c panko

1/4 c crushed canned onion rings

1/4 c mozzarella cheese


Air fry 350 degrees for 20 minutes

Louisiana Hot Beans


 

 

 

 

 

 

 

 

 

 

 

 

 

Isaiah 53:4-5


    [4] 

    Surely he has borne our griefs

        and carried our sorrows;

    yet we esteemed him stricken,

        smitten by God, and afflicted. 

    [5] 

    But he was pierced for our transgressions;

        he was crushed for our iniquities;

    upon him was the chastisement that brought us peace,

        and with his wounds we are healed.



1 lb white beans(I used Mayacabo beans) 

Cover with water, bring to boil, cook 15 minutes 

Turn off heat

Add water if necessary to cover beans

Cover for 30 minutes 

Drain water and set aside


1 t Olive oil

2 T Butter

1 Onion, diced

1 c Celery, diced

1 c Bell pepper, diced 

2 T roasted Garlic

1 c chopped Ham 

1 t Cajun seasoning 

1 T Sugar

1 t Hot sauce

1 t dried Thyme

1 Bay leaf 


Add butter and oil to large pot ( I used a Dutch Oven)

Add veggies, ham and seasonings

Sauté until tender

Add drained beans to pot

Cover with stock

Add hot sauce

Add bay leaf


Bring to boil

Simmer with lid loosely on for 1-2 hours

Stir often 

Check for tenderness after 1 hr and adjust seasonings if necessary 

Mash some of the beans against side to promote creaminess 

Serve over rice, with cornbread, onion and pieces of crispy Catfish on the side

Slightly Spicy Cajun Green Beans

[14] But each person is tempted when he is lured and enticed by his own desire. [15] Then desire when it has conceived gives birth to sin, and sin when it is fully grown brings forth death.



Pan full of snapped Green beans of your choice (mine was a Dutch oven full) 

These were a mixture of rattlesnake and asparagus 


1 Chopped Onion 

1/4 c Ham pieces

1 T Chicken base seasoning 

1/2 t coarse Black pepper 

1-3  T Sugar (adjust according to how many beans) 

1 t Cajun seasoning 

1/2 t garlic granules 

1/2 t jarred Calabrian Chili Peppers

1 piece Parmesan rind

Olive oil (good drizzle)

Water ( just even with beans)

Bring to medium boil

Taste of your pot likker and adjust seasonings

Sugar cuts that woodsy taste 

Boil uncovered

Stir occasionally 

Cook water out

Drizzle again with oil

Give a quick fry 

Remove cheese rind

Romaine Lettuce, shaved

Sweet Onions, sliced 

Cucumbers, chopped 

Tomato, chopped 

Sweet mini Peppers, sliced in rings

Castelvetrano  Olives, cut in half 

Radishes, sliced

Greek pepper rings

Boiled eggs, grated

Croutons 

Cheese

Bacon bits

Choice of dressing

Cabbage Potato Pie



































Psalm 119:15-16


    [15] I will meditate on your precepts

        and fix my eyes on your ways. 

    [16] I will delight in your statutes;

        I will not forget your word.



2 c shredded Cabbage

1 small yellow potato, grate with skin

1/4 Onion

1/4 t Calabrian Pepper

2 beaten eggs

3 T cornstarch 

3 t oil, separated 


Cheese layer

1/4 c Mozzarella 

1/4 c Cheddar


Topping 

Bacon bits


Fry onion and potato in oil for 5 minutes 

Cool slightly 

Add cornstarch to Cabbage 

Pour eggs on top of cabbage 

Add onion mixture 

Stir to incorporate 

Heat rest of oil to medium 

Add 1/2 of cabbage mixture 

Add cheese layer

Add rest of cabbage 

Flatten with spatula 

Cover adjust heat to medium low steam 4 minutes 

Using spatula cut in half and flip repeat

Cover with bacon bits
