Toasted Tortilla Smashed Ground Chicken Burger

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Just fold over and you have a thin patty double meat burger!

These were so good!!

    [17] What is man, that you make so much of him,

        and that you set your heart on him,



1-1/2 lb Ground Chicken season with steak seasoning (roll into 6 little bigger than  golf ball size)

6 (6 inch size) flour tortillas 

Swiss Cheese slices

Yellow mustard 

Sliced onions

Dill pickles slices


Large skillet drizzled with olive oil

Heated to medium 

Place ball of meat in middle

Lay foil sheet on top

Place hamburger press on top and smash meat ball flat

Cook 1 minute

Flip

Cook 1 minute

Add tortillas on top of meat, toast until tortillas gets browned flip and add your favorite slice of cheese

Top with toppings

Glaze

1 T maple syrup 

1/2 t balsamic vinegar 

1/2 t Molasses 

Mix


Maple Molasses Balsamic vinegar glaze

Figs, sliced thin 

Bacon bits

Caramelized onions 

Feta

Mozzarella shreds 


Tortillas 


Spray tortillas with non stick

Place on foil

Spread very thin layer of glaze

Place thin sliced figs around the edges 

Sprinkle with bacon bits

Lightly scatter onions

Add Feta and mozzarella 

Drizzle with olive oil

Sprinkle with black pepper 

Air fry 450 degrees until crust is crispy around edges

Cut in slices

Swoon

Quarter Fold Chicken Burrito





























Proverbs 3:5-6

Burrito size tortillas 

Grilled chicken 

Grilled veggies

Refried beans 

Mexi Rice

Queso dip


Heat veggies and meat and set aside


Look at your burrito, lay flat on cutting board

Picture 4 quarters 

Cut a slit down the middle just 1/2 of the length

On each quarter, place your different items, veggies, meat, cheese etc

Where the slit is fold over on to the next quarter then to the side fold to next quarter and fold last quarter 

It now looks like a rectangle 

Heat oil in a skillet 

Toast, mashing with a spatula 

Serve with Queso or salsa

Crust

Coarse salt

Tortillas 

Olive oil

Parmesan


Dressing 

1/4 c sun dried tomatoes 

Capers

Garlic

Oregano 

Sugar

Red wine vinegar 

Olive oil


Salad

Romaine Lettuce

Olives

Onions

Mozzarella 

Greek peppers

Parmesan 

Toss in dressing


Fried pepperoni 

Red pepper flakes

Crispy Tortillas Greek Pizza

2 fajita size Tortillas (spray with non stick, both sides)

Place on foil


1 T for each tortilla of Double concentrated tomato sauce (in tube)

Jar Greek peppers

Chopped Green onions

Chopped Artichoke hearts

Castelvetrano olives (slice in half)

Feta cheese, to cover

Mozzarella, to cover

3 Chopped Pepperoni 

1 Chopped Lebanon bologna

Pinch Red pepper flakes


Build on foil sheet

Preheat Air Fryer 450 degrees 

Cook until tortillas is crispy around edges

Usually takes 7-8 minutes for first one

Second one 6-7 minutes

Crispy Tortilla Crust BBQ Pulled Pork and Bacon Pizza

































Psalm 128:1


A Song of Ascents.


    [1] Blessed is everyone who fears the LORD,

        who walks in his ways!



Fajita size Tortilla 


Toppings

BBQ sauce

Fine grated Parmesan 

Pulled pork

Bacon bits

Thin sliced sweet Onions 

Thin sliced Sweet peppers

Grated Mozzarella 

Heavy cream

Drizzle olive oil


Lay out a piece of foil

Spray with nonstick 

Add tortillas 

Spray top of tortillas with non stick

Take 1 t of BBQ sauce and spread over tortillas 

Lightly sprinkle Parmesan 

Add pork, bacon, onions, peppers and drizzle oil

Mix mozzarella and 1 t heavy cream and top pizza

Preheat air fryer 450 degrees for 3 minutes 

Add foil and pizza

Cook 6 minutes 

Cut and serve

Yum!

Onion, sliced 

Tomato, chopped 

Lettuce, chopped 

Fresh jalapeño slices

Avocado mashed and spread on tortilla

Tortillas, warmed


Chipotle Mayo

Ranch dressing 

Lime juice

Mayo

Chipotle peppers in adobo

Salt and pepper 

Garlic

Fresh Corn Masa Harina Tortillas



































Psalm 105:1-5


Tell of All His Wondrous Works


    [1] Oh give thanks to the LORD; call upon his name;

        make known his deeds among the peoples! 

    [2] Sing to him, sing praises to him;

        tell of all his wondrous works! 

    [3] Glory in his holy name;

        let the hearts of those who seek the LORD rejoice! 

    [4] Seek the LORD and his strength;

        seek his presence continually! 

    [5] Remember the wondrous works that he has done,

        his miracles, and the judgments he uttered,


 

 

These are delicious!



1-1/2 c masa harina

1/4 t kosher salt

2 T bacon grease, oil, butter or lard

1 c or more of hot tap water



Place flour in bowl, whisk salt.

Drizzle in grease.

Drizzle in water, working dough into a ball.

Knead 5 minutes until dough becomes stretchy.

Dough should be well hydrated.

Rest dough, covered for 30 minutes.

Pull 12 chunks of dough and roll into balls.

Cut a ziplock bag open and put dough in between the plastic. 

Press out with fingers and the roll out to a 5-6 inch diameter.

Heat oil 1/8 inch of oil in skillet.

Dough may puff.

Lightly brown on both sides.

Lightly salt.

Drain on paper towels.

Homemade Flour Tortillas

                                                                                                          
Matt.28:18 And Jesus came and said to them, "All authority in heaven and on earth has been given to me.

4 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
2 tablespoons lard (may use margarine, shortening or butter)
1 1/2 cups water
Directions
Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball.
Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.
