Easy Small Batch Chocolate Peanut Butter Balls


























Micah 5:15


    [15] And in anger and wrath I will execute vengeance

        on the nations that did not obey.



1/2 c creamy peanut butter

3 T softened butter

1 c powdered sugar

Melted Dipping Chocolate 


Using a heavy plastic spoon, mix butter and peanut butter together 

Gradually stir in powdered sugar 

Roll into 1 inch balls 

Freeze for 20 minutes 

Microwave chocolate 

Dip balls and place on parchment

Chocolate Butterscotch Nut Bar Cookies

Preheated 350 degree oven 

25-30 minutes

Place in fridge for 1 hour to firm up

Cut into bar cookies


1-1/2 c Graham cracker crumbs

1/2 c melted butter

Mix together to form crust 

Mash into parchment lined 13x9 pan with overlapped parchment for easy lift out 


Layers over Graham crumb crust

1 c semi sweet chocolate chips

1 c butterscotch chips

1 c chopped toasted pecans

1 c sliced almonds


Mix 1 t vanilla extract into 1 can (14 oz ) sweetened condensed milk

Drizzle over chocolate chip and nut layers

Almond Crunch








Luke 19:10
For the Son of Man came to seek and to save the lost."


3/4 cup sliced almonds
7 tablespoons real butter, plus more for pan
1/2 cup sugar
2 tablespoons milk
1 tablespoon all-purpose flour

Preheat oven to 400 F. Line a 9-x13-inch, 2-inch deep baking pan with foil. Butter the foil. Set pan aside.

In a large skillet, combine all ingredients; stir over medium-high heat until butter melts and mixture bubbles around the edges. Reduce heat to medium, and cook 2 minutes more.

Pour into prepared pan, spreading to coat bottom. Bake 10 minutes or until golden brown. Watch carefully, it will burn. Cool in pan. Peel off foil and break into pieces.

14 full size Oreos, finely ground in food processor 

1/4 c toasted coconut 

3 oz softened room temp cream cheese


Using a fork, mix Oreos, cream cheese and coconut.

Roll into balls, freeze 20 minutes.


For rolling balls

6 oz semi sweet chocolate, chopped, melted in microwave 

Dip chilled balls and place on parchment

3 T smoked almonds

4 oz sweet coconut, toasted 

8 oz white chocolate, chopped

1/4 c heavy cream

1 cap full of Jim Beam


Process almonds 15 seconds in mini food processor to a fine ground.

Toast coconut in toaster oven 350 degrees for 10 minutes, stirring a few times.

Cool.

Process coconut 15 seconds in mini food processor.

Set aside.

Melt white chocolate and cream in microwave for 30 seconds and stir to melt.

Stir in almonds and Bourbon.

Pat into an pan that's covered in foil.

Refrigerate for 20-30 minutes. 

Cut into small squares and roll into falls.

Roll in toasted coconut.

Freeze until firm. 

Store in airtight bowl till serving.

Mini PayDay Candy Bars

12 oz melt-able peanut butter chips, I used Reese 

2 c mini marshmallows 

3 T butter

1 can condensed milk

24 oz of dry roasted salted peanuts

Extra butter to grease 13x9 pan


On low heat, stirring constantly, melt chips, marshmallows, butter and condensed milk.

Grease pan with butter, cover bottom in peanuts. 

Evenly pour filling over all peanuts. 

Sprinkle remaining peanuts over filling and slightly mash into filling with a spoon.

Refrigerate until cooled.

Go around the outside with a butter knife.

Cut into mini squares and store in fridge.

These are slightly sticky but delicious!!

Peanut Butter White Chocolate Swirl Pretzel Almond Bark

2 c white chocolate melting chips
2 c dark chocolate melting chips
1/4 c peanut butter
2 c pretzel-smoked almond mix, chopped 


Parchment paper, spraying with Pam
Jelly roll pan

Turn oven on just to warm.
Melt the all dark chocolate in microwave safe bowl and set in warm oven.
Melt 1 c of white chips, set in oven.
Melt other cup of white chips and stir in peanut butter until melted into the white chocolate.
Take out the dark chocolate and spread into pan.
Then take 1 1/2 c of the pretzel-nut mixture and pour on top of dark chocolate.
Drizzle the melted white chocolate onto pretzel-almond dark chocolate.
Next drizzle the peanut butter white chocolate, then press the remaining nut mixture into peanut butter white chocolate. 
Take a fork and swirl it.
Refrigerate to set, break into chunks.

Cookie Butter Pretzel Slims

Cookie butter( Trader Joe's)
Pretzel slims( Trader Joe's )
Dipping chocolate, melted


The amount depends on how much chocolate you melt, do a little or a lot.
These are simple but delicious!!
Spread pretzels with cookie butter.
Dip in chocolate.
Cool to harden chocolate.

Mint Oreo Sunflower Seed Candy

4 cookies, mint Oreos, chopped chunky
1/2 c Rosemary Thyme Maple Toffee sunflower seeds(Trader Joe's)
1 c Dipping chocolate, melt wafers 

Really simple, really delicious!!

Add seeds and cookies to melted chocolate and drop by spoonfuls onto parchment. Cool to harden into candies.

Almond Toffee Crack

This was an experiment that I almost tossed out! Glad I let it set up and tasted it, yum!!!



1 1/4 c slivered almonds

1 stick butter
1/2 c sugar
1 1/2 T water

1 T vanilla extract

White chocolate candy melting wafers

Grease 13x9 pan bottom with butter.
Add 1 c slivered almonds, spread out over bottom.

Bring to a boil, the butter, water and sugar, boil until golden brown, around 8 minutes, stirring continuously cause it will burn.
Remove from heat, continue to stir.
Pour over nuts.
Add white chocolate, add 1/4 c nuts.
Stir slightly to melt chocolate.
Place in freezer until set.
Break into yummy goodness!!!

Pecan Log Roll







Yours, O LORD, is the greatness and the power and the glory and the victory and the majesty, for all that is in the heavens and in the earth is yours. Yours is the kingdom, O LORD, and you are exalted as head above all. 1 Chronicles 29:11




12 oz box of Vanilla Wafers, crushed
3 c fine chopped pecans, toasted
1 can Eagle brand

Mix all ingredients together, shape into log.
Wrap in plastic wrap.
Slice into bite size pieces.

Chocolate Peanut Butter Stuffed Salted Pretzels





and crying out with a loud voice, "Salvation belongs to our God who sits on the throne, and to the Lamb!" Revelation 7:10





Fast and yummy!!


Waffle pretzels
Peanut butter
Melting chocolate, your choice, I mix dark and white

Spread peanut butter between 2 waffle pretzels to make a sandwich.
Melt the chocolate and dip pretzels. 
Melt white chocolate and add a little olive oil, stir.
Place in a squirt bottle and drizzle for decorations.

Chocolate Crispix






For the Lamb in the midst of the throne will be their shepherd, and he will guide them to springs of living water, and God will wipe away every tear from their eyes."  Revelation 7:17





Melt a cup of dipping chocolate.
Add Crispix cereal and gently fold into chocolate until cereal is covered.
The mixture will be thick.
Drop by spoonfuls onto parchment.
Let set and enjoy.

You could add nuts, raisins etc. 
I think I'll do white chocolate and add some crushed peppermint!

Coconut Bites

1/4 cup Smokehouse almonds
3 T corn syrup
1 1/2 cups powdered sugar
1 T melted butter
2 cups shredded coconut
1/2 t Jim Beam
1/2 t vanilla extract
1 1/2 cups dipping chocolate



In a large bowl, stir together the corn syrup, powdered sugar, melted butter, coconut extract, shredded coconut, Jim Beam and vanilla extract, to form a thick paste.
Moisten hands slightly and form mixture into small balls.
Place on a sheet of parchment paper.
Place in fridge to harden.
Melt dipping chocolate.
Place one almond on top of ball and push to flatten ball.
Dip coconut bites.
Let harden.
These were so easy and tasted great!

Easy Crispy Peanut Butter Balls

1 But understand this, that in the last days there will come times of difficulty.
2 For people will be lovers of self, lovers of money, proud, arrogant, abusive, disobedient to their parents, ungrateful, unholy,
3 heartless, unappeasable, slanderous, without self-control, brutal, not loving good,
4 treacherous, reckless, swollen with conceit, lovers of pleasure rather than lovers of God,
5 having the appearance of godliness, but denying its power. Avoid such people.




2-1/2 cups rice crispy cereal
3 cups powdered sugar
1-1/2 cups smooth peanut butter
1/2 cup (1 stick) butter
Melting Chocolate(I use Ghirardelli from Sam's)


Directions:
In a large bowl, mix rice krispies and powdered sugar together, set aside.
In a medium saucepan, melt peanut butter and butter on medium heat.
As soon as it becomes a uniform liquid, remove from heat and pour over rice krispy mixture, stirring until well combined.
Form into 1-1/2 inch balls, place on a cookie sheet and put in refrigerator to cool.
Meanwhile, place melting chocolate in the microwave and heat until melted.
Dip balls and place on parchment to harden.Yum!

Jane and Linda's Toffee





3 John 1:4
I have no greater joy than to hear that my children are walking in the truth.



1 cup sugar
1 cup margarine
3 Tbsp. water
1 tsp. vanilla extract
3 Hershey bars
Pecans


Sprinkle some pecans into a buttered 9"x 13" pan. Combine sugar, margarine and water in a saucepan. Cook for 15 minutes or until the mixture is a golden brown, stirring constantly. Stir in vanilla. Pour over the pecans in the pan. Place Hershey bars over the sugar mixture immediately, spreading as the chocolate melts. Sprinkle with additional pecans. Let stand until set. Chop or break into pieces. You can omit the vanilla and grate the chocolate and mix with the nuts and sprinkle in the pan.

Salted Caramel Pistachio Pretzel Bark

1 bar of 60% Cacao Bittersweet Chocolate Baking Bar
1 bar of White Chocolate Baking Bar
1/2c pistachios pieces
1/2 crushed pretzel pieces
Caramel for drizzling

Melt the chocolate in the microwave for 50 seconds, stir, melt another 10 seconds. Stir until all is melted, add nuts and pretzels. Spread on parchment, drizzle with caramel and cool. Break into bark and enjoy!

Chocolate Brandy Cherries

                                                                                                                   
1 large container of stemed Maraschino cherries(Sam's club)
1 box of Wilton's ready to used rolled white fondant (Michael's)
liqueur of your choice ( I have used Whiskey and Creme Sherry) my next choice will be Black cherry liqueur
Ghirardelli dipping chocolate
parchment lined cookie sheet

Drain 1/2 of the cherry juice and reserve for another use. Add liqueur to cherries and cure for 2 weeks (in refrigerator). Cherries must be well dried or the fondant will melt. Drain cherries on a towel(reserve juice for cakes and such) and rotate to be sure to get all the moisture. I usually drain my cherries for several hours. Separate fondant into manageable pieces, keeping unused fondant in a sealed ziplock, pinch off a marble size piece and roll between fingers to flatten, needs to be the size to fit around the cherry. Do in batches, a batch is what ever amount fits on the cookie sheet. Wrap cherries and seal around the stem. Let wrapped cherries dry while you finish your batch. I usually wrap all my cherries and put in the refrigerator. I dip the cherries in batches also. Dipping chocolate will not tolerate any liquid, it looses it's dipping quality. After all cherries are dipped, put in an airtight container and let them cure a couple of days so that the fondant will become creamy. Enjoy!

White Chocolate Coconut Truffles

                                                                                                                                           

White cake, baked in a 9×13 pan, cooled
3/4 cup coconut milk
1/4 cup sweetened condensed milk
1 cup sweetened coconut
Candy melts or white chocolate

Cover a large baking sheet with parchment paper or waxed paper. Set aside.

In a large bowl, crumble the baked cake. Add in the coconut milk, sweetened condensed milk and coconut. Using your hands, combine all the ingredients. Form the mixture into balls and place on the prepared baking sheet. Refrigerate for at least 1 hour.

Melt the candy melts or white chocolate. Dip the balls in the coating and return to the tray to harden. Refrigerate until ready to serve. (These taste best after being refrigerated overnight!)

White Chocolate Candy

                                                                                                                         

1 (12 ounce) bag white chocolate chips
1 (7 ounce) jar marshmallow creme
1/3 cup craisins or 1/3 cup other dried fruit
1/3 cup whole almonds or 1/3 cup walnuts or 1/3 cup pecans, chopped coarsely
1/8 teaspoon almond extract or 1/8 teaspoon vanilla extract
Directions:
In a medium microwave-safe bowl, melt chips on high in 30 second intervals, stirring until melted. Cool 5 minutes. Stir in all ingredients (mixture may look oily).
Divide mixture in half. Using separate wax paper sheets, form into two 16-inch long logs with 1/4 inch diameter.
Refrigerate until firm about 2 hours. Cut into 1 inch pieces.
Wrap in colored plastic wrap, cellophane, or waxed paper.
