[1] Paul, a servant of God and an apostle of Jesus Christ, for the sake of the faith of God’s elect and their knowledge of the truth, which accords with godliness, [2] in hope of eternal life, which God, who never lies, promised before the ages began [3] and at the proper time manifested in his word through the preaching with which I have been entrusted by the command of God our Savior;



9 inch deep dish pie pan

Spray with non stick


1 lb ground chicken 

1 small Onion, chopped 

1 red small bell pepper, chopped 

1 t beef tallow

Brown chicken 

Add onions and peppers

Sauté until veggies are tender

Add seasoning and salsa

Place in pie plate

Top with cheeses

Ladle biscuit topping over meat/cheese mixture 


1 pkg Taco seasoning 

1/2 c Fresh Thick Salsa( I make mine but store bought is fine)

1-1/2 c cheese (I used Hoop, Gouda and Mozzarella)


Whisk well the ingredients below

Pour on top of meat mixture 

1/2 c biscuit mix

1 c milk

3 eggs


Bake preheated air Fryer 400 degrees 

Air fry 20-25 minutes 


Serve with avocado creama and fresh salsa

1/4 sheet pan covered in foil and sprayed 

350 degree Air Fryer 6-8 minutes just till chips are fold-able


Bite size tortillas chips

1/2 c Refried beans(heated) 

Grated Cheese, your choice 



Toppings

Salsa

Sour cream

Diced Green onions

Diced Peppers

Crispy Fried Tilapia Tacos

































1 Peter 2:22-25

2 pieces of tilapia (cut in strips) Got mine from Aldi in frozen section

Lime, juiced

Fajita size flour tortillas, toasted 


Season mix

1 t salt

1 t pepper 

1 t Cajun seasoning 

1/2 t garlic 

1 t smoked paprika 


Dredge

1/2 c potato starch 

1/2 c cornmeal


Fry in peanut oil 350 degrees until light brown and crispy


Toppings

Apple salsa ( 1/4 c salsa, 1 diced apple and 1 t sugar

Lettuce

Radishes 

Onions

Mini red sweet peppers 

Sour cream

Left Over Chipotle Chicken Loaded Tacos























Hebrews 10:4-7

Hard taco shells, warmed


Left over chipotle chicken* and juice

Heat on low until juice is gone and chicken is warm


Mixed Topping 

Radishes, thin sliced

Green onion, diced

Jalapeño, diced 

Lettuce, chopped fine 

Mango, chopped

Pork Carnitas Taquitos (Rolled Fried Taco)

































Psalm 51:17

Carnitas pork

 

 

Flour tortillas, fajita size (softened)

Spread cream cheese

Onions, thin sliced

Grated cheese

Tomato, diced


Peanut oil (2 inch) deep

Medium size Skillet 


Heat to 350 degree


Spread soft cream cheese liberally on tortillas 

Place filling and toppings close to one edge and roll tightly 

Place seam side up, brown and roll to other side, brown and drain on paper towels

Salmon Tacos with Jalapeño Slaw
































Psalm 56:3-4


    [3] When I am afraid,

        I put my trust in you.

        What can flesh do to me?



Left over salmon 

Heat in skillet with water and 1 t taco seasoning


 Slaw

1 c shredded cabbage  

1 t Mayo

1 t Olive Oil

1/8 c chopped Onion

1 T chopped Pickled Jalapeño 

1 t Honey 

Salt and pepper to taste 


Hard shell tacos


Toppings

Onions 

Slaw 

Picketed Jalapeño 

Cheese

Crispy Fried Corn Tortillas Shrimp Taco for Two





























Psalm 135:5-7


    [5] For I know that the LORD is great,

        and that our Lord is above all gods. 

    [6] Whatever the LORD pleases, he does,

        in heaven and on earth,

        in the seas and all deeps. 

    [7] He it is who makes the clouds rise at the end of the earth,

        who makes lightnings for the rain

        and brings forth the wind from his storehouses.



An ej original recipe!



4 Taco size corn tortillas (microwave 10 seconds)

Spread Cream cheese


5 jumbo prawns ( I used leftover ones from a shrimp boil cake) chopped 

1/2 Onions, sliced

 1Jalapeño seeded and sliced

1 t Olive Oil

2 T Bourbon

1/4 c Quesadilla cheese

1 t Toasted cumin

1 T Salsa

Sauté onions and peppers in oil. 

When softened add chopped shrimp.

Add rest of ingredients and turn off heat.

Stir to melt cheese.

Set aside to cool.

Heat peanut oil in a 6-8 inch skillet.


Spread cream cheese on tortillas.

Fill softened corn tortillas down the middle with cooled shrimp 

Flip one side over to seal.

Fry on one side until crispy and flip.

Drain on paper towels.

Serve with a slice of lime.

25 Minute Instant Pot Birria Beef Tacos

































Psalm 119:114


    [114] You are my hiding place and my shield;

        I hope in your word.





2 lb beef chuck roast, cut in thirds then 1 inch chunks


Birria seasoning 

1 /2 c  Guajillo chili powder made from dried chilis (Clean chilis removing seeds and tear into pieces, pulse in coffee grinder to make powder)

1 T smoked paprika 

2 T chicken base seasoning 

1 T onion powder 

1 T garlic granules 

1 t salt

1 t black pepper 


Instant Pot ingredients 

Beef

3 c Hot water 

2 large carrots

2 bay leaves

3/4 of the Birria seasoning

Reserve rest to sprinkle on taco 


Soft Corn tortillas 


Toppings

Quesadilla cheese

Green onions

Cilantro 

Lime


Add hot water, beef, carrots, bay leaves and seasoning to IP

Process on pressure setting for 25 minutes 

Quick release

Add 1/2 inch of oil to skillet 

Heat

Remove beef to container 

Add 1 c juice to beef

Shred or chop beef

Dip corn tortillas in juice 

Add to hot oil

Fill taco with meat and cheese

Fold 1/2 of shell over to make the taco

Deep fry and flip

Top with toppings 

Enjoy

Michoacán Region Mexico Carnitas

Fried in peanut oil and bacon grease! 

Traditional is lard but I don't use that so I subbed!! 

Delicious!!


3-1/2 lb fatty pork roast cut into 3 inch chunks

Salt with 2 T coarse kosher for 1 hour, in fridge.


Add peanut oil and bacon grease in Dutch Oven. 

Just so it will be up the sides of pork chunks 3/4 of the way, you will be flipping to insure even light browning.

Bring temp up to 225 degrees, gently add chunks.

Do not cover.

Fry 20 minutes one side, pick up pieces periodically so they won't stick.

After 40 minute fry time, add all your other ingredients and spice mixture to meat oil mixture.

Don't brown but slightly.


Other ingredients:

1/2 c water with 1/2 c orange juice with heavy pulp

Small can evaporated milk (5 oz)

1 chopped medium onion

1/4 c sliced Leeks 


Spice mix

2 t Mexican oregano 

1 t Toasted cumin

1/4 t Black Pepper 

1 t ground Clove

2 bay leaves

3 T roasted garlic

Reduce temp to 200 degrees.

Cook, uncovered 1 hour 10 minutes.


Cook, uncovered, an additional 10 minutes after adding these ingredients 

1 small coke

1/4 c sugar


Remove pork from oil and in a plate pull pork with 2 forks.

Porky, crispy, tender deliciousness!!

Strain oil to use in other dishes like refried beans.

This is my take on ATK recipe!

Boy oh boy!!

Delicious

The meat was perfectly seasoned 

Made 6 tacos

Save the rest of pork for Nachos



4-6 Boneless country style pork ( I got mine at Aldi and it was a little over $5.00

Place pork in salt brine, 1 qt of water and 1/4 c kosher salt, room temp for 30 min

Remove and pat dry

Cut into 1 inch chunks

Separate dark from white meat

Toss with rub oil

Let sit 20 minutes

Place in skillet according to light and dark meat.

Fry in 1 T bacon grease.

Cook dark to 155 degrees

Cook light to 140 degrees

Tent 5 minutes 

Chop to desired size

Squeeze lime to serve

Top as you prefer


Meat rub paste

1/4 c olive Oil 

3 T roasted Garlic, mashed

2 T Lemon juice

2 t smoked paprika 

1 t coriander 

1/2 t toasted cumin

1/2 t cayenne ( I used Aleppo pepper)

1/2 t black pepper 

1 t salt


Lastly add to oil paste

1 T fresh diced Ginger ( I used pickled Ginger)

1 T Fresh oregano ( I used 1 t dried) 


Suggested Toppings

Chopped Lettuce or Cabbage

Chopped grilled onions

Sliced Jalapeño 

Sliced radishes

Avocado creama

Sour cream

Fresh Salsa

Fried Taco with Potato Spinach Bacon Filling
































Psalm 121:1-2


My Help Comes from the LORD


A Song of Ascents.


    [1] I lift up my eyes to the hills.

        From where does my help come? 

    [2] My help comes from the LORD,

        who made heaven and earth.



An ej original recipe!!



3 medium Yukon Golds, peeled, chopped and cooked knife tender, in chicken stock with 1 T roasted garlic added to stock, drain 

1 heaping T soft cream cheese

1 heaping T softened butter

1/2 t onion powder

Mash, add butter, cream cheese and onion powder and set aside.


2 c spinach, microwaved in a steamer to yield 1 c, chopped, cool

Add to potato mixture.


8 pieces of cooked crisp bacon crumbled 

Set aside.

Add to potato spinach mixture.


2 c Quesadilla cheese


8 Taco size tortillas 

1/8 c Olive oil plus more if needed


Spread filling on half of tortilla.

I used about 2 T.

Cover filling with shredded cheese.

Fold over, fry in hot oil, drain on paper towel.

Dip in Salsa Verde.

Enjoy!
