Instant Pot Fresh Herbed Dry Large Butterbeans with Smoked Sausage






The LORD preserves all who love him, but all the wicked he will destroy.  - Psalm 145:20




Setting: beans/chili
Time: 55 minutes
Pressure: on


1 pgk. Large dry Butterbeans, wash and pick out rocks and bad beans
Chicken stock, enough to cover beans
Fresh herbs, 1\2 t lemon thyme, 1/2 t Greek oregano, 1/2 t spicy oregano, 1/2 t sweet basil
1 Onion, chopped
1 t Celery
2 T Leeks
Drizzle of Olive oil
2 T fresh Parmesan cheese
1/2 t Cajun seasoning
1/2 t Greek seasoning
Smoked Alder Wood salt, to taste
Cracked black pepper, to taste


Place cleaned beans in pot.
Add stock, onions, celery, leeks, fresh herbs and seasonings.
Put on lid.
Set cooker.
Wait for yummy goodness!!

Bruschetta Monterey Jack Creamed Green Beans






16 Now may our Lord Jesus Christ himself, and God our Father, who loved us and gave us eternal comfort and good hope through grace,
17 comfort your hearts and establish them in every good work and word. - 2 Thessalonians 2:16-17






1 1/2 lb. green beans
1 Onion, sliced
1 T Cream cheese
Drizzle of Olive oil
2 T Bruschetta Monterey Jack  cheese (Publix)
1/2 t Cajun seasoning
1/4 t garlic granules 
2 c Chicken stock 
Back pepper, to taste
Smoked salt, to taste

Wash and snap beans.
Place in pot, add seasonings, stock, olive oil and onions. 
Boil until done.
There should not be much stock left.
Add cream cheese and bruschetta cheese, stirring to melt. 
This will make a light sauce.

Instant Pot Meatloaf






Let my prayer be counted as incense before you, and the lifting up of my hands as the evening sacrifice!  - Psalm 141:2






Cook time: 45 minutes
Settings: meat/stew
Vent: sealing

Place 1 c water in pot, add rack.
Make your meatloaf and put in a foil made pan.
Place on rack.
Top with BBQ sauce.
Use the settings listed above.
Final step:
Add more BBQ sauce if necessary. 
Lightly sprinkle with brown sugar.
Place under broiler to brown.

Meat loaf:
1 3/4 lb. 80/20 beef (I love Sprouts)
3/4 c buttermilk
1 chopped leek
1 T liquid smoke
1 t Greek seasoning
1 t garlic herb seasoning
1/2 c BBQ sauce
1/2 c Panko
Smoked salt
Cracked black pepper

Instant Pot Sweet and Irish Potato Mash






1 Now concerning the coming of our Lord Jesus Christ and our being gathered together to him, we ask you, brothers,

1 lg. Sweet potato
6 -8 medium Buttery potatoes 
Fresh herbs( lemon thyme, Greek oregano, spicy oregano, Rosemary )
Salt and pepper, to taste
5 T Olive oil
2 T roasted Garlic
1 c chicken stock


Press sauté to preheat the Instant Pot.
When hot appears on display add oil.
Then add potatoes, garlic, and herbs.
Sauté 10 minutes.
Pierce potatoes with a knife.
Put the lid on pot and press manual and use the plus to choose 12 minutes.
Take off pressure at the end of cooking using the quick release.
Add salt and pepper.
Mash or leave whole. 
Yum!!

Crescent Roll Crust Strawberry Pie






1 Behold, the LORD's hand is not shortened, that it cannot save, or his ear dull, that it cannot hear; 
2 but your iniquities have made a separation between you and your God, and your sins have hidden his face from you so that he does not hear.  - Isaiah 59:1-2







1 pgk. Crescent Dough sheet(Pillsbury)
Spray pie plate with Pam.
Press dough into a pie plate, cut excess. 
Using a fork, poke holes into crust.
Cover with foil.
Weight crust down.
Bake 350 degrees for 15 minutes and cool.

Filling 
4 c sliced fresh strawberries
1c sugar 
1 1/4 c water
1/4 c dry strawberry jello
2 T cornstarch 

Place sugar, cornstarch and water in a saucepan.
Bring to a boil and cook 1 minute or until the mixture begins to thicken.
Remove from heat, stir in jello powder.
Cool in the freezer for 30 minutes.
Add berries, stir.
Fill pie shell, wrap in plastic and chill 1 hour in the freezer.

Simply Steamed Veggies

2 c Broccoli florets
1 Onion, sliced
1 Red bell pepper, diced, strips or chopped
2 Mexican Squash, chopped
Drizzle Olive oil
1/2 t Garlic granules
Fresh herbs(lemon thyme, Greek oregano, hot and spicy, oregano and rosemary)
Salt and pepper

Prepare veggies, place in steamer, add oil and seasonings.
Steam covered in microwave 3 minutes, stir, steam an additional 2 minutes!

Red Wine Boneless Short Ribs with New Potatoes and Carrots







13 But we do not want you to be uninformed, brothers, about those who are asleep, that you may not grieve as others do who have no hope.

15 For this we declare to you by a word from the Lord, that we who are alive, who are left until the coming of the Lord, will not precede those who have fallen asleep.

1 pgk. Boneless short ribs, Costco or Sam's 
1 T olive oil
10 New Potatoes, halved 
6 Carrots, cut into chunks on the diagonal 
1 Onions, sliced
1 c red wine 
1/2 c water
1 t Fresh sweet basil, diced
1 t Fresh hot and spicy oregano, diced 
1 t Fresh Greek oregano, diced
1 t Fresh lemon thyme, diced
1/2 t Garlic granules
1 T Worcestershire sauce  
1/2 t Greek seasoning
1/2 t Teds house seasoning


Heat oil in Dutch oven.
Add boneless ribs and sear until slightly browned.
Add wine, Worcestershire sauce and water.
Add all veggies, fresh herbs and seasonings.
Add lid and cook 5 minutes.
Place pot in a preheated 350 degree oven and cook covered for 2 and half hours.
This was delicious!!!

Broccoli Pimento Casserole with BBQ Pork Skin Cheese Crust







1 Out of the depths I cry to you, O LORD! 
2 O Lord, hear my voice! Let your ears be attentive to the voice of my pleas for mercy! - Psalm 130:1-2







1 lg. Bag Broccoli florets
1 c Canned Onion rings 
1 Cream of cheddar soup
1/8 c Pimentos
1/4 c Sour cream
1/8 c heavy cream
1/4 t Garlic granules

Crust
1 bag BBQ pork skins
Italian cheese blend 

Steam broccoli.
Layer broccoli in a 13x9 pan and add onion rings.
Next add the soup, pimentos, sour cream, cream and garlic.
Stir well.
Top with cheese crust and bake 350 degrees for 25 minutes.

Smoked Pork Stir Fry with Assorted Veggies





6 Therefore, as you received Christ Jesus the Lord, so walk in him,
7 rooted and built up in him and established in the faith, just as you were taught, abounding in thanksgiving.
8 See to it that no one takes you captive by philosophy and empty deceit, according to human tradition, according to the elemental spirits of the world, and not according to Christ.
9 For in him the whole fullness of deity dwells bodily,
10 and you have been filled in him, who is the head of all rule and authority. - Colossians 2:6-10




2 c chopped smoked pork
1t olive oil
1 onion, sliced
1 carrot, matchstick cut
3 baby Bok choy, chopped
1 red bell pepper, sliced
1 T roasted garlic, mashed
1/2 c mushrooms, sliced
2 T honey
1 T soy sauce
1 t Worcestershire sauce
1/2 Meyer lemon, the juice only
1 T Hoisin sauce 
Salt and pepper to taste
Pinch of pepper flakes


Add oil to large skillet.
Heat.
Add onion, peppers, mushrooms and carrots.
Stir fry 3 minutes and add pork, honey, lemon juice, seasonings, and Bok choy.
Stir fry another 3 minutes or until Bok choy is tender. 
Serve over rice.

Spatchcock Rubbed Smoked Whole Chicken






13 And you, who were dead in your trespasses and the uncircumcision of your flesh, God made alive together with him, having forgiven us all our trespasses,
14 by canceling the record of debt that stood against us with its legal demands. This he set aside, nailing it to the cross. - Colossians 2:13-14





2 whole chickens, spatchcocked
Your favorite rub
Olive oil
Smoker
Wood for flavor, we used cherry


Spatchcock your chickens, that's just removing the backbone so it lays flat.
Wash and dry chicken.
Oil and add rub.

Smoke at 275 degrees - 300 degrees until an internal temperature of 165 is reached.
We smoked ours for 4 1/2 hrs.
These were delicious!!!

Fresh Strawberry and Fig Cobbler






Blessed is everyone who fears the LORD, who walks in his ways!  - Psalm 128:1





4 c Strawberries, quartered
5 oz frozen Figs, quartered
1/2 of a Meyer lemon, juice only
1/2 -1 c sugar, to taste
1 c water

Place water, sugar and lemon juice in pan and bring to a boil.
Add fruit and cook until the fruit resembles pie filling, around 20 min. 
Stir frequently.
Place in a 13x9 pan.
Follow cobbler top directions.


Cobbler Top
1/2 box of a white cake mix, sprinkle on top of cooked fruit mixture
1 stick butter, melted and poured on top of cake mix
Bake 45 minutes on 325 degrees.

Flat Noodle Peppered Beef and Cabbage Stir Fry






1 I lift up my eyes to the hills. From where does my help come? 
2 My help comes from the LORD, who made heaven and earth. 
3 He will not let your foot be moved; he who keeps you will not slumber.  - Psalm 121:1-3








2 c Egg noodles, cooked and drained, set aside

1 c left over steak, chopped, I used filet
1 leek, chopped
1 red bell pepper, cut into thin strips
1 c shredded cabbage
1/2 t Butter-1/2 t olive oil mix
1 t Greek seasoning
1/4 c prosciutto, diced
1/4 c red wine
1/4 c heavy cream
1/4 c water
1/4 t sugar
1 T cream cheese
Salt and pepper to taste



Sauté leeks, bell pepper, cabbage, sugar, seasonings and prosciutto in butter-oil mixture.
Add steak, cream, wine, water, and cream cheese.
Sauce will begin to thicken and you can add the noodles.

Fried Cheese Curds






10 Finally, be strong in the Lord and in the strength of his might.
11 Put on the whole armor of God, that you may be able to stand against the schemes of the devil.
12 For we do not wrestle against flesh and blood, but against the rulers, against the authorities, against the cosmic powers over this present darkness, against the spiritual forces of evil in the heavenly places. - Ephesians 6:10-12








8 oz. cheese curds, I found them at Sprouts

Batter:
Dry ingredients:
1 c AP flour
1 t baking powder
1/2 t salt
Whisk together.

Wet ingredients:
1 beaten egg
3/4 c milk or beer
1/4 c water
Whisk together.

Combine wet and dry ingredients, making a batter. 
Dip curds, drain on plate and deep fry in hot oil 1 minute.
These are the bomb!!!
