Psalm 109:26-27

[26] Help me, O LORD my God!

Save me according to your steadfast love!

    [27] Let them know that this is your hand;

you, O LORD, have done it!

2 six count donuts pan( Walmart)

Seasoning salt, to taste

Cajun seasoning, to taste

1 c Chopped onions

1 c Cheddar Cheese ( I used hoop and mozzarella cheese )

This made 12 rings

Your amount of ingredients depends on how many you want to make

I have tried this with whole onion rings but chopped works better

Put cheese first

Barely cover bottom

Add chopped onions

Seasoned

Air fry 450 degrees for 10-12 minutes until you can see bottoms browning

Use offset spatula to remove to paper towels to cool

If you feel too full they will not be crispy

Addictive

Low Carb Air Fryer Crispy White Cheddar Onion Rings

Psalm 120:1

A Song of Ascents.

[1] In my distress I called to the LORD,

        and he answered me.

Buy 2 non stick muffin top pans

I got mine at Walmart

Non stick spray

Chopped onions

Grated white cheddar or a cheddar mix, light cheese works as well

Spray pan

Put a light amount of cheese in each section ( just lightly cover bottom, this gives a more crispy ring)

Add chopped onions, green onions work too but not as much of an onion taste

Air fry on 415 degrees for 5-6 minutes

Watch, you only want light browning all the way around

Remove to paper towels to cool

Wipe pan in between each batch, cheese is greasy

No need to salt, the cheese is salty

These things are addictive

Onion Petals

Cast your burden on the LORD, and he will sustain you; he will never permit the righteous to be moved.  - Psalm 55:22

1 extra large onion

2 c AP flour

1 T smoked paprika, love Trader Joe's

1 t cayenne pepper

1 t smoked ground cumin

½ t thyme

½ t oregano

½ t cracked black pepper

2 large eggs, beaten

1/2 c milk

1/2 c half and half

1/4 c water

Peanut oil for frying

seasoned salt for finishing

Dip

3 T mayonnaise

3 T sour cream

2 t BBQ sauce

1 T sweet chili Thai sauce

1/2 t horseradish

½ t Worcestershire sauce

½ t paprika

1/4 t cayenne

Pinch red pepper flakes

¼ t cracked black pepper

Combine all dip ingredients.

Cut bottom off of onion.

Flip over, this gives you a stable surface.

Cut the onion in half, cut into petals.

Set aside.

In a gallon ziplock, toss flour and seasonings except seasoning salt.

Remove 1/2 of flour mixture to a plate.

In a second bowl, whisk eggs, half and half, milk, and water.

Working with small small batches of onion petals, shake well to coat.

Then place in egg mixture, drain with slotted spoon, then plate.

Add to flour mixture in plate.

Toss around with fingers.

Place on a rack while dipping all of the onion petals.

Wash hands.

Using a spider, fry in small batches.

Works best if they aren't crowded while frying.

I filled spider almost full, then gently dropped in hot oil in Fry Daddy.

Fry 4 minute until crispy and golden.

Remove from oil, drain on paper towels and sprinkle with seasoning salt.

Keep warm in toaster oven.

Serve dipping sauce.

Onion Rings

1 medium sweet onion, sliced and separated into rings (Vidalia)
2 1/4 cups baking mix, divided
1 cup beer (darker beer will make it more flavorful)
1 teaspoon salt
2 eggs

Cajun Dipping Sauce
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup chili sauce
1 teaspoon horseradish
1/4 teaspoon ground cayenne pepper

Directions
1 Heat oil in deep fryer or heavy saucepan to 375*; oil should be about 1 1/2 inches deep.
2 Prepare Cajun Dipping Sauce by stirring until all ingredients are blended; set aside.
3 Toss onion rings and 1/4 cup baking mix
4 Stir remaining 2 cups baking mix, beer, salt and eggs until smooth.
5 (If batter seems too thick, add more beer, 1 tablespoon at a time, until it reaches the desired consistency).
6 Dip a few onion rings at a time into batter
7 Fry about 2 minutes, turning each ring after 1 minute, until golden brown; drain well.
8 Serve hot with Cajun Dipping Sauce.
