Ranch Cucumber Chicken Salad

1 English cucumbers, sliced thin

1/2 c creamy ranch dressing

1/2 c Hoop cheese, shredded

1/4 c crispy bacon, crumbled

2 T green onions, chopped


Seasonings

½ t garlic powder

½ t dried dill weed

1/2 c chopped chicken 

fresh black pepper to taste

Taste and salt if necessary 


Toppings 

Crispy croutons

    [1] Lord, you have been our dwelling place

        in all generations. 

    [2] Before the mountains were brought forth,

        or ever you had formed the earth and the world,

        from everlasting to everlasting you are God.



1 (10 ounce) bag baby spinach leaves

10 oz cheese blend, shredded

4 hard-cooked eggs, peeled and sliced

1 c sliced cooked mushrooms

4 strips crisply cooked bacon, crumbled

½ c toasted slivered almonds

1 T olive oil

1 large shallot, minced

1 t roasted garlic, mashed

⅓ c white wine vinegar

⅓ c Dijon mustard

⅓ c honey

2 strips crisply cooked bacon, crumbled

salt and pepper to taste



Place spinach into a large serving bowl; top with cheese, hard-cooked eggs, mushrooms, 4 crumbled strips of bacon, and almonds.


Heat olive oil in a small skillet over medium heat. Stir in shallots and garlic; cook and stir until shallots are softened, about 2 minutes. Whisk in vinegar, Dijon mustard, honey, and 2 crumbled strips of bacon until heated through; season to taste with salt and pepper.


Pour hot dressing over spinach and toss to coat.

Quick Marinated Tomatoes

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 42:2


    [2] My soul thirsts for God,

        for the living God.

    When shall I come and appear before God?



2 large ripe tomatoes, sliced thin

3 Campari tomatoes, sliced thin

1/2 of a small sweet onion, sliced thin 


Dressing

2 T roasted garlic, mashed

1/2 t each dill, basil, parsley, cilantro

1/4 c olive oil

2 T balsamic vinegar

1 T honey

Kosher salt and coarse black pepper to taste


Slice the tomatoes thin 

Salt and pepper tomatoes 

Combine all ingredients to make dressing 

Cover tomatoes with dressing 

Let sit 15 minutes 

Enjoy

So crunchy and delicious!


6 large radishes, washed cut in half and sliced thin

1 small English cucumber, sliced thin  

1 small sweet onion, sliced thin  

2 small sweet red peppers, sliced thin


I mixed ranch and Italian for the dressing

Salted with seasoning salt, Mrs Dash table and Cajun seasoning 

Original recipe calls for Mayo instead of the one I made

Celery Waldorf Parmesan Salad

Veggie Fruit mixture 

1 bunch celery, reserve leaves, cut stalks chunky

1 English cucumber, sliced thin 

1 Shallot, thin sliced  

12 pitted Dates, chopped

1 large Apple, chopped last 

1/4 c chopped Parmesan 

Wash veggies 

Chop veggies and cheese

Toast nuts

Toss together



Dressing

1-1/2 c shredded Parmesan 

1/4 c olive oil

1 t Dijon 

1/4 c Mayo

1/4 c Lemon juice

1 T Honey

1 T roasted Garlic 

Black pepper to taste

Mix

Add dressing to veggie fruit mixture 

Add 1/2 c walnuts

Dress with chopped celery leaves

Oh Goodness!! Delicious!

Seasonings of your choice

I used seasoned salt, pepper, Green Goddess 

1 /2 t Red pepper flakes

1/8 c -1/4 c Mayo 

6 Campari Tomatoes

3 Green onions, chopped 

2 hard Boiled eggs, chopped 

2 Mini red peppers, sliced 

1/4 c Crispy bacon, chopped 

1 c -2 c Spicy oyster crackers or saltines

13x9 pan


Crust

2 sleeves Ritz, crushed

1 stick melted butter

4 T sugar

Mix 

Press into pan


1 Can Eagle brand

6 oz frozen orange concentrate, thawed

2 large Can Mandarin oranges, drained and chopped

20 oz Can crushed pineapple, drained

1 c toasted chopped pecans

Mix together


Fold in 

10 oz Cool whip

Add to Ritz Crust 

Chill several hours before eating

        plead the widow’s cause.



1 large English cucumber, partially peeled and sliced thin

1 small sweet onion, sliced thin 

1 c shredded thin cabbage 

1/2 c toasted walnuts

3 t dried cranberries 

Add to large mixing bowl

Add dressing and serve


Dressing 

1/2 c Greek yogurt 

1 T Mayo

1 T Honey

1 t sugar

2 T roasted Garlic, mashed

3 T fresh squeezed lemon juice

Salt and black pepper

2 T dried dill

1/2 t red chili flakes

1/4 t dried rosemary 

1/4 t dried thyme

1/4 t dried oregano 

Mix well and set aside


Serving suggestions 

Crockpot Cranberry Turkey

Mashed potatoes 

Cranberry gravy

Isaiah 26:19

        You who dwell in the dust, awake and sing for joy!

    For your dew is a dew of light,

        and the earth will give birth to the dead.



2 c Red cabbage, grated thin

1 Red onion, sliced thin 

3 c Kale, chopped thin

2 c Cauliflower, just shaved in small pieces 

3 c Romaine Lettuce, chopped thin 

1 c Grated carrots 

5 Radishes, sliced thin

1/4 c Salted Sunflower seeds

1 handful Thin glass noodles softened with hot water(drain)

Add 1/2 noodles on bottom and rest on top

Toss with 2 forks

Using scissors, cut noodles 


Dressing 

1/4 c Smooth peanut butter 

1 T Grated Ginger

1 t Grated Garlic

1 t Sesame oil

1/2 of a Lime juiced

1 T Soy sauce 

1/4 c Maple syrup 

1/8 c Rice vinegar

1/2 c neutral Oil

Add ingredients to blender so that when the oil is added it emulsifies 

 

Can add salmon, chicken or beef on top

Veggies

1 chopped avocado 

1 chopped English cucumber 

1 c cherry tomatoes 

1/4 c sliced radishes 

1 c thin sliced sweet onion

1 can drained and rinsed black beans 

1 seeded and thin sliced jalapeño 

Place in a large bowl 

Toss with dressing 

Refrigerate for 30 minutes 


Dressing

1 lime juiced 

2 T Honey

Sugar to taste

1 T fresh cilantro, diced

1 T Red wine vinegar 

1 T roasted garlic

1 t Dijon mustard 

1/2 t salt and black pepper 

1/2 c light olive oil

Whisk and pour over veggies 

Serve with oven grilled pork and onions

1 cup of cooked orzo 


Veggies 

1 small English cucumber 

1 small onion, sliced 

1 c arugula 

2 mini red and yellow peppers, sliced in rings

1/2 c raisins 

1 c Castelvetrano olives, cut in half 

1 shredded carrot 

1 c sliced cherry tomatoes 

1 c Feta crumbled


1 c toasted bread crumbs


Honey Red Wine Vinaigrette

1/4 c Red wine vinegar 

1/2 c Olive oil

3 T Honey

1 T Roasted Garlic, mashed

1 T Greek seasoning 

Salt and pepper to taste

1/2 of a Lemon juiced

2 T Greek pickled peppers

1 t Sweet basil

1 t chopped capers

Whisk vigorously 

Chill
