Bacon Sweet Slaw Beef Slider

Sweet slaw, recipe this blog under slaw/salad tab
1/2 of a Onion, sliced 
4 slices cooked Bacon
2 T Whiskey
2 T Yellow mustard
4 slider buns
4 burgers, love Sprouts 85% blend
Seasoned salt to season burgers

Make thick slider size burger patties, making a deep well in the middle.
This allows for faster fry time and keeps patty from shrinking.
Sear patties really well on both sides.
Cover and add 1/2 c water to steam burgers.
When burgers are almost done, throw onions in the little bit of the burger grease/water mixture.
When onions are done, add whiskey, bacon and mustard.
These cook in about 12-15 minutes using the steam method and are so juicy.
Place on slider bun, add a tomato slice, fill the well place in the middle with the onion/bacon mixture. Top with slaw, so yummy!!!

Sweet Potato Bacon Pecan Fluff






I form light and create darkness, I make well-being and create calamity, I am the LORD, who does all these things.  - Isaiah 45:7








2 sweet potatoes, microwave 4 minutes on each side, cool, scoop out of skin
1/2 c honey
1/4 c half and half
1 t Vanilla 
1 T Molasses 
1/4 t Pumpkin pie spice
1/4 t Allspice
1/4 t Ginger
1/4 t Nutmeg
1 T fresh lemon juice

Topping
1/4 c chopped Pecans
4 slices Crispy bacon, crumbled
1/4 c Brown sugar

Melted White chocolate drizzle, 1/4 c white chocolate melting wafers melted in microwave for 40 seconds, stir in a splash of half and half and splash of olive oil


After potatoes are cooked and cooled, scoop out the soft inside.
Add seasonings, half and half, honey, lemon juice, molasses and vanilla.
Place in a small glass greased container.
Sprinkle brown sugar, pecans and bacon.
Bake 325 degrees for 30 minutes, turn skillet half way through cooking.
When finished, drizzle white chocolate over top.

2016 Rub

1 c Spanish paprika
1/4 c Cajun seasoning
1/4 c chili powder
1 t cardamom seeds, ground
1/2 c Turbinado sugar, ground
1/8 c Garlic granules
1/8 c kosher coarse salt
1/4 c brown sugar


Mix well.
This rub will burn if you do not keep a close eye on it.
It's the two sugars in it.
The taste was very delicious!!

Chocolate Mascarpone Filled Almond Pastry









For the commandments, "You shall not commit adultery, You shall not murder, You shall not steal, You shall not covet," and any other commandment, are summed up in this word: "You shall love your neighbor as yourself." - Romans 13:9








1 box frozen puff pastry, thawed

Filling
4 oz. mascarpone 
4 oz. cream cheese, room temp
1/4 c sugar
1 T orange liqueur 
1 t vanilla

Topping
Dark chocolate, chopped
Smoked almonds, chopped

Caramel ice cream topping

Creme fraiche


Line sheet pan with parchment.
Add one sheet of pastry.
Make filling and spread on pastry.
Take other sheet and top filled pastry.
Slightly fold over edges.
Baking 375 degrees for 35 minutes or until pastry is lightly browned.
Cool slightly and add nut topping mixture.
Drizzle caramel over top.
To serve, top with crème fraiche.

Cucumber Tomato Onion Sweet and Sour Salad

Dressing
1/8 c Italian dressing
1/8 c ranch dressing
1 T apple cider vinegar
1 t sugar
1/2 t Tuscan seasoning
Salt and pepper to taste
Place in bottom of bowl.

Sprinkles
Dried parsley
Dries dill

Salad
3 Small English cucumbers, chopped
1 sweet onion, sliced
2 large tomatoes, chopped
Add veggie mix to bowl and toss.
Sprinkle with herbs.

Italian Sausage Mascarpone Whiskey Sauce






For I do not understand my own actions. For I do not do what I want, but I do the very thing I hate. - Romans 7:15









1 pgk. Italian sausage

Veggie mix
1 Leek, chopped
1/2 Red bell pepper, sliced
2 T Celery, chopped
1 T roasted garlic

1 t Tuscan seasoning
Fresh herbs-Greek oregano-Rosemary-lemon thyme-sweet basil (1 T each)

Liquids
1/8 c Whiskey
1/4 c Mascarpone
1 t Liquid smoke
1 T Worcestershire sauce
14 oz. Prego Traditional
1 c water

Sauté veggies in clarified butter.
Add seasoning and herbs.
Next add the sausage.
Cook until sausage is no longer pink, mashing sausage as you cook.
Next add liquids.
Simmer 30 minutes. 

EJ's Cheddar Biscuits






8 For by grace you have been saved through faith. And this is not your own doing; it is the gift of God,
9 not a result of works, so that no one may boast. - Ephesians 2:8-9








2 1/2 c Pioneer baking mix
4 T cold butter, cut into 1/8 inch chunks
1/2 t Tuscan seasoning
1 c coarse sharp cheddar cheese
3/4 c buttermilk 
By the spoonful half and half as needed to adequately moisten mix

Biscuit top wash
1 T Melted butter
1/2 t Dried parsley

Into the biscuit mix, add cold butter bits and mix gently.
Next add cheese, seasoning and milk.
Mix with hands until the mix is moistened.
If too dry add half and half by teaspoon full until just moist. 
Hand roll into golf ball size, slightly flatten and give top butter wash.
Bake preheated 400 degree oven for 15-20 minutes.

Blackened Tilapia

Fresh Tilapia (I got mine at Costco)
Blackened Seasoning 
1/2 stick of Butter
1/2 Lemon, cut in wedges
Olive oil

Tarter sauce
Mayo and sweet pickle relish

Pour blackened seasoning on a plate, set aside.
Melt butter in non stick skillet.
Take fish and swish around in butter.
Lay filets on the blackened seasoning. 
Return to plate. 
Add a splash of olive oil to butter, heat and sauté fish.
Fry 2-3 minutes until crust sets, flip and repeat.
If fish starts to burn, remove fish and wipe out the pan, add fish back and continue cooking until fish is flaky. 
Squeeze lemon on the fish and add tarter sauce.

Limoncello Steak Diane Mascarpone Sliders







Therefore you are great, O LORD God. For there is none like you, and there is no God besides you, according to all that we have heard with our ears. - 2 Samuel 7:22








Left over Steak Diane and sauce
1 Onion, sliced and cut in half 
Dash of olive oil
Mascarpone 
Fresh tomatoes
Slider buns


Add oil to skillet and sauté onions.
Thin slice steak and add to cooked onions.
Next add the sauce and turn off heat.
Stir around to incorporate.
Warm bun and spread mascarpone on bun, add onions, steak and tomato slice.
Delicious!!!

Oven Baked Green Beans Fries







Blessed be the LORD, the God of Israel, who alone does wondrous things.  - Psalm 72:18







1/2 bag of fresh Green beans ( I got mine at Costco)
Chicken stock 
Bring stock to boil, add beans and cook 2-3 minutes until the beans turn bright green.
Shock in ice water bath.
Dry on paper towels.

Flour, add 1/2 t Onion powder and 1/2 t Seasoned salt ( if you like it spicy add cayenne pepper  
Beaten egg
1 c Panko


Dip beans in flour then egg then panko.
Place a piece of parchment on a cookie sheet.
Bake in a 400 degree preheated oven until crisp, around 15 minutes.
Dip in ranch dressing.

Note*
I think next time I'll mist olive oil on them. 

Limoncello Steak Diane






And you are my sheep, human sheep of my pasture, and I am your God, declares the Lord GOD." - Ezekiel 34:31





For searing steaks:
2 Filets, seasoned and seared( I used Butt Rub with a pinch of sugar)
1 T Butter
1/2 t Olive oil

Sauce:
1 Leek, chopped
2 T Chives, chopped
1/4 c Half and half
1/4 c Limoncello 
1 t Butter
1 T Dijon Mustard 
1 T Worcestershire sauce

Slurry of cornstarch and cold water.

Sear steaks in oil and butter, remove and set aside.
In the same skillet, add the rest of the butter, leeks, chives and sauté for 1 minute.
Add limoncello, Worcestershire sauce and mustard, sauté 1 minute.
Add half and half and sauté a couple of minutes until it's reduced by a third.
Add slurry and whisk until slightly thickened.
Place sauce in a bowl.
Slice steak and return to skillet along with chives.
Brown slightly.

To serve drizzle with sauce. Yum!!!

Pear Mango Skillet Pie

6 medium pears, sliced
1 mango, sliced
1 c water
1/2 c sugar
1/8 t each of pumpkin pie spice, allspice, ginger, nutmeg
1/2 t vanilla 
2 T butter
Juice of 1/2 lemon

For crust
1/2 c brown sugar
3 T butter
Melt butter in skillet and add brown sugar.
Add pie crust round.
Set aside.

1 T Cornstarch and 1/2 c water for thickening

1 unfrozen pie shell
Cut a circle the size of skillet bottom, save scraps.
Set aside.

Cook fruit in water with the seasonings, juice and sugar until fruit is tender.
This usually takes 15 minutes.
Add vanilla.
Spoon fruit over skillet crust.
Cut the crust scraps into strips and cover the top of fruit.
Sprinkle brown sugar over the top.
Bake in a preheated 375 degree oven for 30 minutes.
Serve with ice cream.
