Limoncello Mushroom Shrimp Angel Hair Pasta

This is a restaurant quality dish!!!

6 oz. Angel Hair Pasta, cooked al dente, set aside
1 lb. Shrimp, I used Gulf Shrimp from Costco
1 Leek, sliced
1 small pgk. Mushrooms, sliced
3 T clarified butter
1/4 c Cream
1/4 c Limoncello
1/2 c Parmesan Reggiano, shaved
Cracked Black Pepper, to taste
1 t Chicken base seasoning
1/2 T Lemon Thyme
1/2 t Greek Oregano
2 T Roasted garlic


In the butter sauté the leeks, mushrooms and the shrimp.
When shrimp are pink, add all the seasonings, the Garlic, the herbs, and the limoncello.
Sauté 2 minutes.
Then add cream and reduce down slightly.
Add in pasta with tongs and serve.

Kale Orzo Bacon Leek Two Cheese Casserole

4 strips Bacon chopped and cooked crisp, set aside
2 c cooked Orzo, set aside
2 c Kale, diced 
1 Carrot, diced
1 Leek, chopped
5 Mushrooms, sliced
1 T roasted garlic
3 T clarified butter

1/4 c Heavy cream
1/4 c White wine
1 T Chicken base seasoning
1/2 c Parmesan Reggiano


Topping 
1/2 c Mozzerella 
1/ c Fried Durkee onion rings
1/4 c Panko
Sprinkle on top of casserole in the above order.


In the butter, sauté carrots, seasoning, mushrooms, leeks and kale.
Add mashed Garlic and cooked bacon.
Next the white wine and reduce, then add cream and cheese.
Add the cooked orzo.
Place in a greased pie plate and add topping.
Bake 325 degrees for 20 minutes.

Filet of Beef and Chicken Broccoli Pepper Greek Seasoned Orzo Stir Fry

1 c Beef, grilled and chopped
1 c Rotisserie Chicken, shredded 
3 T clarified butter
2 c Broccoli 
1 c Red Peppers
1 Shallot, diced
2 T Roasted garlic
1/4 c heavy cream
2 c cooked al dente Orzo
2 T Greek Seasoning 
1 t Fresh herb mixture (Greek oregano, Lemon Thyme, Rosemary and Sweet Basil
1 splash Mesquite Liquid smoke
1 c Parmesan Reggiano
1 c Water


In the clarified butter, sauté the shallot, broccoli and peppers.
Next add the garlic, seasonings, cheese, beef, chicken, cream and water.
Simmer until sauce is reduced and thickened.
Add fresh herb mixture.
Stir in orzo and serve.

I Really Don't Cook Much Casserole





17 So when God desired to show more convincingly to the heirs of the promise the unchangeable character of his purpose, he guaranteed it with an oath,

I was staying at someone's house who claimed they don't cook much so I had to make do with what they had. Mini Tater Tots, frozen chicken, cheese, can of soup, milk and some sour cream.
This is the casserole I came up with! Not bad!!!

1 can cream of chicken soup
1 c sour cream 
1/4 c half and half, had to use milk
2 c cheese, shredded, any will do, I used Mexican 3 cheese blend
Mini Tater Tots, enough to cover bottom of 13x9 casserole pan
1/2 of a 24 oz. bag of Banquet Chicken Breast Tenders, baked 20 minutes at 425 degrees and set aside

Mix the soup, half and half, sour cream together and set aside.
Spray casserole with Pam and line pan bottom with tater tot, sprinkle with 3/4 c cheese and bake 20 minutes. 
I cooked the chicken and the tots at the same time in two different pans.
On the top of the cheesy tots, add soup mixture and then the chopped chicken.
Add rest of cheese and bake 350 degrees for 20 minutes.
Everything is already seasoned so don't need to add any seasonings until u taste it when it's finished. It had plenty of seasoning!

Korean BBQ Sauce Wings for Two

Korean BBQ sauce, recipe this blog under the sauce tab
10 wing drumettes
Salt and pepper

Fry or bake wings until crispy.
Spoon sauce over wings.
Broil to set sauce, flip and repeat.
Yum!!'

Hatch Chili Poppers





1 O LORD, who shall sojourn in your tent? Who shall dwell on your holy hill? 
2 He who walks blamelessly and does what is right and speaks truth in his heart;

Fire Roasted Hatch Chilis, I did mine on a gas stove top over the flame
Cream cheese, mash cream cheese into a long cylinder the length of the pepper half
Bacon, cut in half
Smoked paprika
Cumin
Smoked salt 
Cracked black pepper

Roast peppers, cool, cut in half, remove seeds.
Prepare cream cheese.
Put inside pepper half and season.
Wrap in bacon and bake for 30 minutes on 425 degrees or until bacon is crisp.
Use a foil covered pan with sides, grease comes out of the bacon.

2016 BBQ Sauce

1/2 of a  44 oz bottle of Heinz ketchup
1/2 c white vinegar
2 T Blackstrap Molasses
1 T garlic granules
1 T Cajun Seasoning
1/2 t salt
2 T Worcestershire sauce
1/4 c white sugar
pinch of cayenne pepper, more if you want it hot
2 T olive oil
2 T smoky Chipotle Tabasco sauce
1/2 of a lime, juiced


Place ingredients in saucepan and simmer 15 minutes.
Cool and fill containers.

Korean BBQ Sauce

1/4 c my 2016 BBQ sauce
1 T soy sauce
1/2 t sesame oil
1/2 t Sambal Oelek, Asian Chili sauce
1 t sweet chili Thai sauce

Mix well.

Tomatoes, sliced thin
Onion, sliced thin

Coconut Toasted Pecan Dream Cake

1 white cake mix, not one with pudding, prepare according to box directions, I used Duncan Hines
1 c chopped toasted pecans
1 c shredded coconut
1 can light coconut cream, I use Coco Lopez
1 lg. Cool whip, thawed 

Toast pecans, set aside.
Prepare cake according to box directions using a 13x 9 pan.
Set aside to cool 5 minutes.
Take a wooden spoon and poke holes in cake. 
Shake a can of lite coconut cream and pour over cake. 
Frost with cool whip, sprinkle with coconut and toasted pecans.

Smoked Paprika Fried Potatoes and Onions






Arise, O LORD; O God, lift up your hand; forget not the afflicted.  - Psalm 10:12








4 medium Potatoes, cook whole in microwave 3 minutes each side
Onions, sliced
Red Bell peppers, sliced
1 t Smoked paprika
1 t Seasoned salt 
1/2 t Garlic granules
Olive oil for frying

Microwave whole potatoes, covered, 3 minutes each side.
Set aside to cool 5 minutes.
Cut up onions and peppers.
Heat oil in a large skillet, add potatoes, all seasonings and fry until crusty, add veggies.
Cook until onions are translucent.
You can add grilled smoked sausage.

Italian Balsamic Peppered Fig Dressing

1/8 c Olive Garden Italian Dressing
2 T balsamic peppered fig jam ( found on this blog under the sauce tab)

Take the 2 T of the balsamic peppered fig jam and mash it into the Italian dressing to incorporate.

Salad
Curly leaf lettuce
1 carrot, sliced
1/4 c smoked almonds, chopped
1/4 c white raisins
1 tomato, chopped 
1/4 c Mozzerella, shredded


Make salad and top with dressing.

Easy Restaurant Style Fresh Peach Salsa

1 28 oz. Cento Tomatoes, peeled whole
1 jalapeño
1 onion
1 t cumin
1/2 t sugar
1 t salt
1 T roasted garlic
1-2 fresh peaches, chopped small
1/2 c fresh cilantro


In a food processor, add the onions, cilantro, jalapeño, garlic and seasonings.
Pulse a few times.
Add tomatoes and juice, pulse a few times
Remove and put into a bowl and add peaches. 
Place in fridge to let flavors develop.
Yum!!!

Caprese Salad with Sweet Basil Pecan Pesto

Caprese Salad


Tomato slice, salted and peppered
Fresh Mozzerella, sliced
Pesto






Sweet Basil Pecan Pesto


1/4 c Basil, chopped
2 T Chives, chopped
1/8 t Olive oil
1/8 c Pecans, put into coffee grinder and make a paste 
1/8 c Parmesan Reggiano, use a micro plan 
Smoked salt, to taste
Pinch of sugar
Cracked black pepper, to taste

Mix all together.
Serve on a tomato slice with a slice of mozzarella and top with pesto.
So simple!
So delicious!!!

Hot Beef on a Cheesy Onion Bun

Another name for this sandwich is loose meat sandwich often served at Pubs.
1 lb. ground beef
1 onion
1 t sugar
1 t vinegar
1 t yellow mustard
Cheesy onion buns

Brown meat and onion together.
When almost done, add rest of ingredients.
Serve on cheesy onion buns.
