Sheet Pan Crispy Hash Browns





























Psalm 22:11


    [11] Be not far from me,

        for trouble is near,

        and there is none to help.




4 c peeled and grated potatoes

2 T butter

1 T olive oil

½ t kosher salt

½ t black pepper

½ t chili powder

½ t garlic powder

½ c grated Parmesan


Line a sheet pan with parchment paper and preheat oven to 400 °F.

Peel and grate potatoes until you have 4 cups (about 2 potatoes). 

Add the grated potatoes to a large bowl and rinse the potatoes well with cold water. 

Use a colander.

Drain and rinse a second time. 

Drain off as much water as you can.

In a microwave safe bowl, combine butter, oil, and spices. 

Microwave on high for 30 seconds to melt butter. 

Stir spice mixture into potatoes along with grated Parmesan cheese. 

Stir well.

Spread potatoes out on sheet pan in a single, even layer. 

Shoot for 1/4 inch thick.

Place sheet in a preheated oven on the bottom rack for 13 minutes. 

When edges of hash browns are browning lightly, move sheet pan to the very top rack. 

Bake for another 8 minutes so top can crisp up. 

Don’t stir the potatoes!

Watch carefully because they will burn!

Turkish Mashed Potatoes























 

 

 

 

 

 

 Matthew 16:27

2 lb cubed Russet potatoes

1 c water

1/2 t salt

Simmer, covered

Cook water out

Add 

1 c full fat Yogurt 

1/2 c half and half

2 T salted butter

Mash

Add 

2 beaten eggs

1 T roasted Garlic

1 T olive oil 

Salt and pepper

Add to greased 9x9 glass pan

Top with gruyere cheese

Cover with foil

350 oven for 45 minutes

Using knife pierce slits

Uncover last 5-10 minutes for browning 


Melt 1/4 c butter

Add 1 t Aleppo pepper

Stir 

Pour over potatoes

Air Fryer Greek Pork Tenderloin and Potatoes






























Ezekiel 18:26-27


[26] When a righteous person turns away from his righteousness and does injustice, he shall die for it; for the injustice that he has done he shall die. [27] Again, when a wicked person turns away from the wickedness he has committed and does what is just and right, he shall save his life.



Ingredients


2 pork tenderloins trim extra fat and silver skin

1/2 c olive oil

2 t lemon pepper

1 lemon, juiced

1 t dried oregano

1 t Greek seasoning 

2 t roasted garlic

salt and pepper to taste


2 t mayonnaise

1/8 c Sauvignon Blanc 

1 & 1/2 pounds mini potatoes, microwaved, cooled and split in half


In a gallon ziplock mix the olive oil, lemon pepper, lemon juice, Greek seasoning, oregano, and garlic. Add the tenderloins and coat. Place in the fridge for 6 or more hours. Turn occasionally.

1 hour before dinner, take the pork out of the fridge.

Preheat the Air Fryer to 400 F

Microwave the potatoes, 2 min each side.

Cool potatoes.

Meanwhile, heat a large fry pan on the and sear tenderloins.

Reserve drippings in fry pan.

Add the browned tenderloins back to the marinade and air fry, uncovered, until desired doneness. The internal temperature is 145-150 degrees.

Should only take 7 minutes each side.

While the pork is air frying, slice the potatoes in half and toss in Mayo wine mixture.

Add to the same pan as drippings.

Brown the cut side on high temperature. Set aside.

Remove the pork to cutting board and cover with foil to rest.

While pork rests, add the potatoes to the pan with the marinade drippings, salt and pepper, to taste, and add mayonnaise wine mixture. Coat thoroughly.

Add the fry pan back to air fryer and let the potatoes continue cooking while the pork has rested about 10 minutes.

Slice the pork after rest.

Serve with Molasses mixed greens

No Water Candied Yams


































Isaiah 26:19-21

        and shut your doors behind you;

    hide yourselves for a little while

        until the fury has passed by. 

    [21] For behold, the LORD is coming out from his place

        to punish the inhabitants of the earth for their iniquity,

    and the earth will disclose the blood shed on it,

        and will no more cover its slain.



2 lbs yams, peeled and sliced as for scalloped potatoes, 1/4 inch thick rounds


2 T orange juice

2  T pure maple syrup 

1 T vanilla

2 t Cinnamon 

1 t Ginger 

1/2 t Nutmeg

1/8 t Cardamom 

Pinch Salt

1/4 c Brown sugar 

1/4 c White sugar

1/2 stick Butter cut into small cubes


Put yams in deep pot

Add wet ingredients except butter on top of yams

Sprinkle dry ingredients over yams 

Toss to cover yams

Take 1/2 of butter cubes and work into yams

Add remaining cubes on top

Turn to medium heat to bring to a light boil

Stir well

Turn down to simmer and cook covered 20-30 minutes, stirring occasionally

Air Fryer Foil Pack Smoked Sausage and Creole Butter White Wine Potatoes

2 large sheets of heavy duty foil for the boat to cook in


1 Hillshire Farms Smoked Sausage, cut in half then 2 inch pieces 

10 baby Yukon Gold potatoes, microwave 1-1/2 minutes each side, cut in half

1 sliced onion 


Creole Butter Sauce

1/2 stick of melted butter

Add 3 T Sauvignon Blanc and 

3 T creole seasoning*

Salt and pepper to taste

1/4 t onion powder

1/4 t garlic granules 


Place sausages in double layer of foil, add potatoes and cover with onion slices.

Mix butter and spices, drizzle over meat, onion and potatoes.

Seal.

Cook air Fryer temp 425 degrees for 30-40 minutes until potatoes are knife soft..

Fresh Jalapeño Potato Salad

6 medium Yukon Gold potatoes (cook in chicken stock until knife tender) Drain, reserve a little water, mix until slightly creamed, set aside


Mix these ingredients into soft potatoes

1 small sweet onion, diced

1 small fresh Jalapeño, diced 

1/2 c Kewpie Mayo

1 T Yellow mustard 

3 T Sweet relish

3 t Sugar or to taste

Salt and pepper to taste

Enjoy

Philly Cheese Steak Poutine
































Psalm 69:30

1 c Left over steak, sliced into thin small chunks


3 servings Shoestring Fries, air fried

Set aside

Gravy 

1 t olive Oil

1/2 of a Onion, sliced 

1 t Roasted garlic 

Pinch red pepper flakes 

Pinch thyme, rosemary, oregano 

1/2 t of wood fired garlic seasoning 

Pinch of salt and pepper

1 t Worcestershire sauce

1-1/2 c beef broth

Stir fry onions, garlic and seasonings in oil.

Add steak. 

Add broth and Worcestershire sauce.

Reduce and thicken with cornstarch slurry.

Add cheese, melt in microwave.

Garnish with green onions.

 

Garnish


1 c Cheese mix

Cheddar 

Smoked Gouda

Extreme cheddar

Crispy Oven Garlic Fries






























Psalm 47:8


    [8] God reigns over the nations;

Preheat oven to 400 degrees



5 Medium size Yukon potatoes cut into even sized fries

3 T olive oil

1 T cornstarch 

1/4 cold water

Non stick cooking spray to spritz sheet pan

Kinder's  Wood fired Garlic seasoning


Place cut fries in cold water

Rinse well

Dry

Put cornstarch and water in bowl and stir to combine 

Microwave 25 seconds to make a paste

Toss fries in paste

Season

Spray sheet pan with non stick

Drizzle oil in pan

Add fries in a single layer

Cook 12 minutes 

Remove from oven and cover loosely with foil 

Cook an additional 10 minutes 

Season again if necessary 

Serve

Sliced Green onions

Homemade Ranch dressing to drizzle*

Cheddar cheese

Mozzarella cheese

Crispy Bacon


*Ranch dressing


1 T dried parsley

1 t garlic granules 

1 t onion powder

1/2 t ground black pepper

1 t fine pink Himalayan salt

1 T dried chives

1/2 c full fat plain Greek yogurt

1/4 c buttermilk

1/4 c spreadable cream cheese

1 t Dijon mustard

1 t lemon juice

9 Minute Instant Pot Garlic Mashed Potatoes































 

 

Matthew 6:9-13


[9] Pray then like this: 


    “Our Father in heaven,

    hallowed be your name.

        on earth as it is in heaven. 

    [11] Give us this day our daily bread, 

    [12] and forgive us our debts,

        as we also have forgiven our debtors.

10 medium Yukon Gold potatoes, peeled and quartered 

Chicken stock to just to cover potatoes (I used chicken base and water)

1 T roasted garlic, mashed

Black Pepper to your taste


Bring up pressure, make sure sealing is set correctly, set time for 9 minutes.

After time is up, do rapid release, drain water, mash and add 1 T of Mayo.

Mash into potatoes until fluffy.

Check for salt, add if necessary.

Stuffed Baked Potatoes





























 

Psalm 119:114


    [114] You are my hiding place and my shield;

        I hope in your word.



6 baking potatoes, baked, split in half lengthwise and cooled

Inside potato scooped out

Reserve crispy skins


Filling

Potato scooped out

Sour cream 

Half and half

Salt and pepper

Garlic granules 

2 Cheese shreds, I used Gouda and white American 

Mix, should be creamy but thick.

Over stuff crispy skins with filling.

Bake preheated 450 degree oven for 15 minutes.

Next time I'll add chives to the filling.
