Loaded Baked Potato Chive Casserole

 

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 116:17

        and call on the name of the LORD.



1/4 c bacon bits (crisp in microwave)

8 Yukon Gold potatoes (microwave until soft) cool enough to handle

1 T roasted mashed garlic 

1 c sour cream 

1 c whole milk

3 T heavy cream

1/8 c melted butter 

3 T Sauvignon Blanc 

3 T seasoned salt 

1/2 t onion powder 

3 T dried chives 

1/2 c Cheddar blend 

pepper to taste


Topping 

1/2 c Cheddar blend Cheese

1/4 c Onion rings

1/4 c Panko


Deep dish pie plate or Casserole pan, spray with non stick 


Preheat 325 degrees air Fryer

Air fry 20-25 minutes 


Leave skin on 3 potatoes and cut in chunks to mash 

Mash

Cut the rest of potatoes in 1/2 inch chunks

Put all potatoes in large bowl

Add wet ingredients to potatoes 

Add seasonings to potatoes 

Add 1/2 c cheese and bacon bits

Stir well 

Add toppings

Bake

Ingredient list

4 c Leeks, chopped into 3/4 inch links and cleaned

3 c Yukon Gold potatoes cut 1/4 inch chunks

Salt 

Pepper

Panko

Gruyere cheese

Chicken stock 

Heavy cream 

Sauvignon Blanc 

Fresh chopped thyme


1/2 c panko toasted in 2 T butter with 1/2 t salt

Set aside


2 T butter heated in skillet 

Add Leeks 

1/4 t salt

Cook with lid on 6 minutes 

Stir once

Add 

1-1/2 lb Yukon cut into 1/4 inch chunks

Stir

Add 1-1/2 c chicken stock

1/4 c Sauvignon Blanc 

1/4 t salt

Stir

Bring to vigorous boil

Place lid on

Cover, cook 25 minutes until fork tender

Add 3/4 c heavy cream

1/2 t pepper

Cook additional 4-6 minutes 

There will be a thickened sauce 

Add 2 oz grated Gruyere cheese

Add toasted panko

Add chopped fresh thyme 

Serve

Boulangere Potatoes Seasoned with Rosemary and Gruyere

This French dish was amazing!


 

 

6 medium Yukon Gold potatoes 

1 large onion

1 T roasted Garlic

1/2 t sugar

2 T butter

1 T dried rosemary 

1-1/2 c chicken stock 

Salt and pepper

Drizzle of olive oil 

1/2 c grated Gruyere cheese

1 t fresh Cilantro for garnish 


350 degrees preheated oven

Bake covered 1 hour


Sauté onions and garlic in 1 T butter and sugar for 5 minutes 

I used my cheese grater with the slicer attachment to do the potatoes really thin

I used a 13x 9 foil pan

I did 3 layers starting with potatoes, then 1/3 of onion mixture and salt, pepper and rosemary

Pour stock mixture over top and mash down potato mixture 

Light drizzle of olive oil

Add remaining butter in thin slices to the top

Add cheese 

Cover and bake

Bump up oven to 425 degrees 

Uncover cook 25 minutes to crisp up top potatoes 

Put under broiler for 5 minutes if necessary 

Turn oven off

Add cheese

Let sit for 5 minutes in hot oven to melt cheese

6 medium-large Yukon Gold Potatoes 

Boil in chicken stock until knife tender, drain and mash


2 boiled eggs, chopped 

2 large green onions,chopped 

4 T diced celery

1 sweet mini red bell pepper, chopped 

1/4 c sweet pickles relish

1 t dill

1 cilantro 

Cut up veggies and eggs

Add herbs

Set aside


1/2 c Mayo

1 t Dijon mustard 

1 T Pete's hot sauce

1 T Olive oil

1 T Cajun seasoning 

1-2 t Sugar

Whisk together 

Add to potatoes 

Add veggies/herb mix

Serve with bacon wrapped Cajun chicken thighs

Potato Casserole Fritters

An ej original recipe!



Heat peanut oil to 350

Fry 3 at a time

Let them set before gently flipping (they will come apart)

Cook to a internal temp of 175-180

Drain

Sprinkle with crispy bacon bits and mozzarella cheese


Hash browns in dairy case

1 can Chicken soup

1/2 c Sour cream 

1 small chopped Onion

1 diced Jalapeño Pepper

Steak seasoning to taste

Mix

Form your desired amount of Fritters 

I did 8 ( golf ball size)

The rest of filling, I made a casserole

Roll in panko 

Fry


Panko for coating

Bacon Mushroom Serrano Potato Casserole






























Psalm 121:2


    [2] My help comes from the LORD,

        who made heaven and earth.



6 medium Yukon Gold Potatoes, microwave 3 minutes each side or until potatoes are soft, slice into 1/8 inch thick rounds to cool, peel or not according to your preference 


1 c real bacon bits, microwave 1 minute

Set aside


1 t Oil

1 t Butter

2 T roasted Garlic

1/2 c sliced Leeks

1/2 of a chopped Serrano

1 c sliced Mushrooms 

1 t Chicken base seasoning 

1/2 t Sugar 

1/2 t Pepper

1 t basil

1 t oregano 

1/2 t Salt

2 c Heavy Cream

1 c Parmesan cheese


Using a medium pot

Sauté veggies in butter oil mixture 

Add seasonings 

Add cream and sauté 5 minutes until slightly thickened 


To build

13x9 pan

Layer 1/3 of potatoes in pan

Spoon 1/3 of cream mix

Spoon 1/3 of bacon

Repeat 2 more times 

Add Parmesan to top

Cover with foil

Air fry 20 minutes 

Uncover and cook an additional 5 minutes 

Serve

Butter

Sour cream

Mexican Pork 

Roasted salsa

Avocado creama

Smoked Gouda Cheese

Green onion

Fresh jalapeño

Cabbage Potato Pie



































Psalm 119:15-16

        and fix my eyes on your ways.

2 c shredded Cabbage

1 small yellow potato, grate with skin

1/4 Onion

1/4 t Calabrian Pepper

2 beaten eggs

3 T cornstarch 

3 t oil, separated 


Cheese layer

1/4 c Mozzarella 

1/4 c Cheddar


Topping 

Bacon bits


Fry onion and potato in oil for 5 minutes 

Cool slightly 

Add cornstarch to Cabbage 

Pour eggs on top of cabbage 

Add onion mixture 

Stir to incorporate 

Heat rest of oil to medium 

Add 1/2 of cabbage mixture 

Add cheese layer

Add rest of cabbage 

Flatten with spatula 

Cover adjust heat to medium low steam 4 minutes 

Using spatula cut in half and flip repeat

Cover with bacon bits

Leftover Mexican Potato Salad Soup






























Ephesians 1:20-23

[22] And he put all things under his feet and gave him as head over all things to the church, [23] which is his body, the fullness of him who fills all in all.



1-1/2 c Leftover Mexican Potato salad*

1 t olive oil

1/4 c Leeks

1/4 c Celery

1/2 t Garlic salt

Pinch dried red pepper flakes 

Salt and pepper to taste

1/2 c Smoked sausage, chopped 

1/4 c Bacon bits

1 t Dried tomatoes (optional)

1/4 c water 

1 c frozen or fresh Spinach

2 T Parmesan, fine grate

1/4 c penne pasta or any pasta

1 qt chicken bone broth

1/8 c heavy cream


Sauté Leeks, celery, bacon bits and sausage in oil

Add seasonings, potato salad, dried tomatoes, water and Parmesan 

Lastly add bone broth and Spinach 

Simmer for 20 minutes 

To serve add toppings


Toppings

Boiled eggs salted, peppered and chopped

Dollop of Sour cream

Twice Baked Rueben Potatoes

























 

 

 

 

 

Psalm 63:1-4


A Psalm of David, when he was in the wilderness of Judah.


    [1] O God, you are my God; earnestly I seek you;

        my soul thirsts for you;

    my flesh faints for you,

        as in a dry and weary land where there is no water. 

    [2] So I have looked upon you in the sanctuary,

        beholding your power and glory. 

    [3] Because your steadfast love is better than life,

        my lips will praise you. 

    [4] So I will bless you as long as I live;

        in your name I will lift up my hands.




3 medium bakers

Pierce with knife tip

Microwave 5 minutes, flip then 3 more

Set aside to cool

Cut in half

Scoop out potatoes 

Reserve potatoes

Reserve skins



Filling

1 T Olive oil

1 medium Onion, chopped 

1 t Sugar

1/2 t garlic granules 

2 c Pastrami or Corned beef, chopped 

1 c squeezed kraut

Scooped out Potatoes 

1/4 c Russian Dressing 

 

Saute onions, garlic granules and sugar in oil.

Add meat, potatoes and kraut.

Lastly add dressing. 

Add topping by the spoonfuls until overstuffed.

Top with cheese and air fry.

400 degrees for 15 minutes until cheese melts!


Topping

Havarti cheese, chopped
