Chicken Bacon Spinach Arugula Carbonara






























22 For Jews demand signs and Greeks seek wisdom,

6 slices of thick cut bacon, I used Kirkland from Costco
Splash of clarified butter
2 leeks, chopped 
1 T roasted garlic
Salt and pepper, to taste
1 c chopped rotisserie chicken
2 c torn Spinach Arugula mix
1/2 box of angel hair pasta cooked, set aside and reserve 1 c pasta water
2 eggs, beaten
1/4 c Parmesan Reggiano
1 T Limoncello  


Cook pasta al dente and set aside, reserve 1 c of the pasta water.
Drizzle clarified butter into big skillet, add chopped bacon.
Cook bacon until slightly crispy.
Add leeks, chicken, garlic, and green mixture.
Stir fry around until leeks are soft.
Beat eggs, microwave pasta water to just warm and whip water into beaten eggs.
Add pasta to bacon veggie mix, sprinkle cheese, add the egg mixture, then toss the mixture around to just combine.

Truly Delicious Fried Chicken

1 package Boneless chicken thighs, mine pack had 6
Rub ( recipe this blog under rub tab)
Cover both sides liberally with rub.
Place on paper plate in a ziplock, put in fridge for at least  2 hours, or overnight if you can.

2 beaten eggs
1/2 c buttermilk
Mix together.
Dip chicken, shake off excess.
Dredge chicken in flour.
Fry in hot peanut oil.
Salt and pepper and enjoy.

Citrus Mesquite Buttery Ribs

Rack of St. Louis ribs (I get mine from Target)
1/2 of a Lemon
1/8 c clarified butter
1 t mesquite flavor liquid smoke
Rub of your choice

Cut ribs into 1-2 rib dimensions.
Add parchment to a 13x9 foil pan.
Place ribs on parchment.
Squeeze lemon over them.
Mix liquid smoke into clarified butter and pour over ribs.
Cover ribs with foil.
Add rub to ribs and put into a preheated 350 degree oven for 2-1/2 hours.
Drain juice off, add BBQ sauce to ribs, return ribs, uncovered, to oven for 5 minutes.

Pecan Coffee Salted Caramel Cold Brew

This was yummy!!

1/4 c Pecan cold brew coffee, I used Chameleon found at Sprouts, in the cold section  
2 T Torani salted caramel syrup( for coffee) 
3/4 c milk
Stir with a straw.

Toppings
Add whipped spray topping a few inches thick.
Drizzle caramel and white chocolate ice cream syrup ( I used Torani) over whipped topping. 
Sprinkle chocolate malted milk powder over top.
Enjoy!

Citrus Marinated Flank Steak Quesadillas



































For the one who is not against us is for us. - Mark 9:40



1 Package Sliced Angus flank steak, I got mine at Aldi, it was 1-1/2 lbs.

Juice of 1 lime
2 T sugar
1/2 t kosher salt
1 t toasted cumin
1 t smoked paprika 
2 T roasted garlic
1/4 c olive oil
1/8 c soy sauce
1 t black pepper
2 T apple cider vinegar
1/4 c fresh Cilantro, chopped
1 t bourbon 

Make marinade in a ziplock and add meat.
Marinate overnight. 
Pan fry or grill. 
Leave slightly pink.
Let rest at least 10 minutes before slicing.
Slice against the grain.
Makes good quesadillas, tacos, wraps etc.
Just add cheese, tomatoes, grilled onions etc.

Roasted Italian Veggies

3 Yellow Squash, chopped 
3 Carrots, chopped
1 Onion, chopped
4 Portobello mushrooms
1 c skinny Green beans, broke. 
1 Red Bell Pepper, sliced

Drizzle Olive oil
1/4 t Onion powder
1/4 t garlic granules 
1/4 t Dried Thyme
1 T mixed Fresh herb blend, rosemary, sweet basil,  thyme, oregano

Toss.
Place on parchment lined jelly roll pan.
Bake preheated 400 degree oven for 35 minutes.
Remove and toss again.
Bake an additional 10 minutes.

Butter Bourbon Infused Oven Beef Brisket Sliders

4 slices Butter Bourbon Infused Oven Beef Brisket ( recipe this blog under Beef tab)
1 Onion, sliced thin
Clarified butter
Cheese, I used Havarti 
Splash Jim Beam
Yellow mustard
Hawaiian rolls 

When I make this, I freeze some for quick and delicious meals. 
Sauté onions in clarified butter, add brisket, sauté 2 minutes, then add bourbon, cheese and mustard.
Theses are so good!!

Honey Cilantro Lime Shrimp

This was delicious!!


Left over Honey Cilantro Lime dressing (recipe this blog under dressing tab) 
1 lb. cleaned Shrimp, I used frozen Gulf shrimp from Costco, thawed in cold water, drain
1 chipotle in adobo, chopped
Place all in a ziplock and marinate 30 minutes. 

Sauce
2 T roasted Garlic
4 T Butter
1/4 c fresh Cilantro 

Heat griddle to very hot.
Melt butter on griddle top. 
Add shrimp and sauté on each side for 1-1/2 minutes. 
Be melting the butter in skillet, add roasted garlic and cook until the butter begins to change color. 
Remove from heat.
Add Cilantro, stir and add shrimp.
Serve over sticky rice.

Carnitas Cobb Salad with Honey Cilantro Lime Dressing

Pineapple Juice Pork Carnitas (recipe this blog under the Mexican tab)
Shredded Lettuce
Chopped Tomatoes 
Queso Fresco cheese
Mexican Street Corn (recipe under the vegetable tab)
Refried Black Beans (recipe under the vegetable tab)
Tortillas, cut into triangles and toasted
Honey Cilantro Lime Dressing 

Layer in rows, side by side. 
Top lettuce with dressing.
Sprinkle with cheese.

1/4 c lime juice
1/4 c Greek yogurt 
1/2 t sugar
1 T Honey 
1 small onion chopped
1/4 sour cream 
1/4 c chopped avocado
1/4 c Cilantro 
1 chipotle in adobo
1 t smoked cumin
1 t smoked paprika 
Splash of olive oil
Smoked salt
Cracked black pepper

Blend in blender. 

Pineapple Juice Pork Carnitas































1 Now concerning spiritual gifts, brothers, I do not want you to be uninformed.
2 You know that when you were pagans you were led astray to mute idols, however you were led.
3 Therefore I want you to understand that no one speaking in the Spirit of God ever says "Jesus is accursed!" and no one can say "Jesus is Lord" except in the Holy Spirit.
4 Now there are varieties of gifts, but the same Spirit;
5 and there are varieties of service, but the same Lord;
6 and there are varieties of activities, but it is the same God who empowers them all in everyone.
7 To each is given the manifestation of the Spirit for the common good.
8 For to one is given through the Spirit the utterance of wisdom, and to another the utterance of knowledge according to the same Spirit,
9 to another faith by the same Spirit, to another gifts of healing by the one Spirit,
10 to another the working of miracles, to another prophecy, to another the ability to distinguish between spirits, to another various kinds of tongues, to another the interpretation of tongues.
11 All these are empowered by one and the same Spirit, who apportions to each one individually as he wills. - 1 Corinthians 12:1-11



These do not have a heavy pineapple taste. Just the most delicious flavor!


2 lbs. Pork chunks
Tiny can of pineapple juice, shake well
1/2 c salsa
1/2 c water
1 Onion, chopped
2 T Roasted Garlic
2 T Worcestershire sauce
2 T Mesquite Liquid smoke 
Smoked Salt and cracked black pepper
Olive oil

Sauté onions and garlic in oil.
Add meat and sear.
Add all seasonings, juice, water, salsa, liquid smoke and Worcestershire sauce.
Bring to boil, cover, place in a preheated 350 degree oven for 1-1/2 to 2 hours.
You should be able to pull pork with a fork.
This makes its own sauce.
