Southern Filipino Chicken Adobo in Coconut Broth































Ephesians 2:4-10

[8] For by grace you have been saved through faith. And this is not your own doing; it is the gift of God, [9] not a result of works, so that no one may boast. [10] For we are his workmanship, created in Christ Jesus for good works, which God prepared beforehand, that we should walk in them.



This was fabulous!



8 bone in skin on chicken thighs (about the same size)

1 can Coconut milk

Fresh Cilantro 

Prepared white rice


Braising liquid

1&1/2 c unseasoned Rice vinegar 

3/4 c low sodium Soy sauce

6 Smashed Garlic

1 t whole Peppercorns 

1 Serrano Chili

4 Bay leaves


Use a large Dutch oven.

Submerge thighs.

Marinate off heat 30 minutes. 


Bring chicken mixture to simmer.

Flip chicken, simmer 30 minutes.

Reserve 1 c braising liquid.


Remove chicken to a lined sheet pan covered with foil.


Pat chicken dry, skin side up.

Set aside.


Try to remove some fat from broth.

Reserve 1 c of de-fatted broth.

Add 1 can whole fat unsweetened coconut milk, not sweetened like CoCo Lopez.

Bring back to simmer.

Turn off heat.

Add 1/3 c fresh Cilantro. 


Back to the chicken.


Under broiler, let Thighs get crispy. 

To serve, add rice to plate, add a thigh to the side, drizzle broth over rice.

Baking Bag Bone In Turkey Breast
































Hebrews 3:7-11


[7] Therefore, as the Holy Spirit says, 


    “Today, if you hear his voice, 

    [8] do not harden your hearts as in the rebellion,

        on the day of testing in the wilderness, 

    [9] where your fathers put me to the test

        and saw my works for forty years. 

    [10] Therefore I was provoked with that generation,

    and said, ‘They always go astray in their heart;

        they have not known my ways.’ 

    [11] As I swore in my wrath,

        ‘They shall not enter my rest.’”



 

Thawed bone in turkey breast, spatchcock,  salt and pepper

Baking bag with 1 T of flour inside


Yellow mustard

Salt and pepper

Brown sugar

Coke mini


Add spatchcocked turkey to floured bag, cover breast with mustard and brown sugar. 

Add coke to bottom of bag.

Tie bag, put a few slits in in top.

Bake in preheated 350 degree oven for 3.5 hours or until breast reaches 170 degrees.


Make a glaze by cooking down drippings.

Stir Fry Bacon Bit Cabbage

1 medium head Shredded cabbage 

4 sliced bacon fried crisp, reserve 1 T drippings

1 t chicken base seasoning 

1/2 t dried mustard

1/2 t garlic granules 

1/2 t black pepper 


Fry bacon to crisp, reserve 1 T of drippings.

Remove bacon to drain on paper towel.

Crumble and set aside.

Throw cabbage into hot drippings.

Add seasonings.

Stir fry until tender.

Add bacon bits!!

Sweet and Spicy Pork Noodle Stir Fry



































John 15:1-5


[1] “I am the true vine, and my Father is the vinedresser. [2] Every branch in me that does not bear fruit he takes away, and every branch that does bear fruit he prunes, that it may bear more fruit. [3] Already you are clean because of the word that I have spoken to you. [4] Abide in me, and I in you. As the branch cannot bear fruit by itself, unless it abides in the vine, neither can you, unless you abide in me. [5] I am the vine; you are the branches. Whoever abides in me and I in him, he it is that bears much fruit, for apart from me you can do nothing.

Small Pork Tenderloin, sliced thin in bite size pieces 

Drizzle of oil

Cooked thin pasta, set aside, reserve 1/2c pasta water


Veggies

1 c shredded thin cabbage

1 small Onion, sliced 

1 Leek, sliced

2 t Pickled Ginger, chopped 

1 T roasted garlic 

Pinch of red pepper flakes

Drizzle of Soy

A little cracked black pepper 

1 t olive oil


Stir fry veggies with seasoning 2 minutes, remove to plate and set aside.

Using same skillet, add drizzle of oil.

Stir fry pork in a single layer just till seared.

Add veggies back in, stir fry 2 minutes, add desired amount of pasta and pasta water. Stir fry just until most of the water is absorbed.


Marinade

1/8 c Sake

1/8 c Soy Vay Garlic Hoisin 

2 T Soy sauce


Whisk together, add to zip lock, add pork.

Marinade for 2 hours or place in freezer for future use.

Pack of 4 really large Boneless skinless chicken breast with rib meat ( I got mine from Aldi)

Instant Pot bone broth *

Salt and pepper

Onion powder

Garlic granules 

Olive oil


Cut chicken up into 2 inch chunks.

Season with salt, pepper, garlic granules, onion powder and olive oil.

Roast in a 425 degree preheated oven for 10-15 minutes each side


I got 2 pints of bone broth and 8 pints of chicken breast in broth.


Process according to manufacturers instructions.

75 min for pints in my area

Lemon Orzo Chicken Bone Broth Soup





































John 6:27-29

For on him God the Father has set his seal.” [28] Then they said to him, “What must we do, to be doing the works of God?” [29] Jesus answered them, “This is the work of God, that you believe in him whom he has sent.”

1 t Olive oil

1 large Carrot, cut in half and sliced thin

1 small Onion, chopped

1/8 c chopped celery

1/4 c red bell pepper, chopped

1 t heaping Chicken base seasoning 

1 T roasted garlic

1 c Rotisserie chicken, chopped or shredded 

1/2 t Thyme

1/2 t Rosemary 

1/2 t Oregano 

1/4 t Mrs. Dash table

1/4 t Umami powder

1/4 t Powdered bay leaf

Juice of half a lemon

1 c Spinach, torn

1/4 c shredded cabbage

1/4 c Orzo 

1/4 c pico de gallo

Splash half and half

1/4 c Parmesan 

Tostado chips


Sauté onions, celery, peppers, garlic, cabbage and carrots in oil.

Add chicken base, chicken and all seasonings to the oil mixture.

Stir fry a few minutes on medium low heat.

Add at least 1 qt bone broth, lemon juice , Orzo, pico, spinach and half and half.

Salt to taste. 

Sprinkle Parmesan on top.

Serve with tostado chips.

Simmer on low for 20 minutes.

Apple Blueberry Maraschino Cherry Cobbler

2 c chopped Pink Lady apples

2 c fresh Blueberries

1/4 c cut in half maraschino cherries

2 T maraschino juice

1/2 of a squeezed lemon

2 T orange juice

1/2 c agave syrup 

1 t vanilla extract

1/4 t each ginger, pumpkin pie spice, cinnamon, cloves, nutmeg

1/2 t molasses 

1/2 c water


Bring to boil, cook 5 minutes.

Thicken with a cornstarch slurry.

Add to pan and top.


Pour into a 8x8 greased pan.

Bake in preheated 325 degree oven for 35 minutes.


Dry Topping

3/4 c pancake or waffle mix

1/4 c white sugar

Whisk.

Evenly sprinkle over top.

Cover with pats of butter.

Greek rice*

Greek Chicken marinade 

3 chicken breast cut into strips


1/4 c plain Greek Yogurt 

or a good substitute 2 T sour cream and 

1 T ricotta mixed together 

2 T Greek seasoning 

A few drizzles of olive oil

1/2 of a lemon juiced

1 t roasted and mashed Garlic

1/2 t Dill 

A dash of Salt and pepper 

Marinate at least 2 hours!

Drain.

Then pan fry or grill under broiler.



Greek salad

Garbanzo beans, drained 

Chopped Cucumbers 

Thin sliced Onions

Black olives, drained

1 Carrot, shredded

Tomatoes, chopped

Feta cheese, crumbled

Prepare veggies and set aside.



Greek Dressing to finish Greek bowl

1/4 c Olive Garden Italian dressing

1 t white wine vinegar 

1/2 of a lemon juiced

1 T Greek seasoning 

1/2 t sugar

Salt and black pepper to taste

Whisk together and set aside.

Whiskey Mardi Gras Angus Beef Sliders

8 slider Angus patties, seasoned with Mardi Gras seasoning *, smoky sweet paprika and smoked salt

Whiskey

8 Brioche slider buns

Cheese, I used Havarti 

Lettuce

Tomatoes 

Lettuce 

Onion

Pickles 


Special sauce

Freddie's fry sauce 

Chick fil a sauce

Mix together and set aside.


Grease a skillet with 1/2 t olive oil greased pan.

Heat, place seasoned patties in pan and cook on medium.

Sear, loosely cover with foil.

They cook in about 6 minutes each side.

Cut heat off.

Lightly pour whiskey over to finish.

Place cheese on patty then bun,  cover with foil and let sit until bun is warm and cheese is melted.

Add toppings and sauce to serve.
