Mushroom Meatloaf with Caramelized Onion Gravy




























 

 

 

Psalm 98:2


    [2] The LORD has made known his salvation;

1 lb each ground chicken and ground pork


1 c button Mushrooms cooked and strained

Salt and pepper

1/4 c melted butter

1/4 c buttermilk

Salt and pepper

1/4 c panko

1/4 c Italian cheese blend

1/4 c chopped shallots 

1 t Worcestershire sauce


Caramelized onion gravy

1 Onion, sliced

1/2 c water

1/4 t salt and pepper

1 T butter

Pinch of baking soda

Stir

Cover

Cook 8 min, covered 

Cook 7 min, uncovered

Add beef stock

Simmer 

Thicken with slurry

Ground Chicken and Pork Meatloaf Patties

An ej original recipe!



1 lb each of Ground Chicken and Pork

1/4 c buttermilk 

1 large Shallot, diced

1/4 t each of garlic granules, onion powder, thyme, rosemary and Sage 

1/8 c Panko

1/8 BBQ sauce


Bake preheated 425 degree oven for 25 minutes.

Mix until just combined.

Makes 10 good size Patties.

Top with 1/2 t brown sugar and BBQ sauce.

The leftovers make a delicious sandwich.

Fully Loaded Meatloaf Sandwich with Garlic Fries

































Proverbs 5:3-6

2 pieces of leftover meat ( I do mine in Patties) *

Hawaiian Bread toasted with cheddar on one side

Tomato, thin sliced

Lettuce

Vidalia onions, thin sliced

Greek sliced peppers



Serve with crispy garlic fries!

Yummy Meatloaf Patties
































Titus 2:11


[11] For the grace of God has appeared, bringing salvation for all people,


 

An ej original recipe!

 

 

 

1 lb ground beef 80/20

1/2 lb ground pork

Salt and pepper to your taste 

1/2 t dried Thyme

1/2 t dried Rosemary 

1/2 t garlic granules 

1/2 t onion powder

1 small chopped onion

1 T dried parsley

3 T BBQ sauce

3 T buttermilk

1/8 c panko


Mix until just incorporated.

Mixture should be a little sticky and not dry.

Make into patties.

Line sheet pan with foil.

Spray with non-stick.

To each patty, add BBQ sauce to cover top, sprinkle with brown sugar.

Bake in preheated 350 degree oven, bottom rack, for 35-40 minutes until internal temp reaches 165 degrees.

Instant Pot Meatloaf






Let my prayer be counted as incense before you, and the lifting up of my hands as the evening sacrifice!  - Psalm 141:2






Cook time: 45 minutes
Settings: meat/stew
Vent: sealing

Place 1 c water in pot, add rack.
Make your meatloaf and put in a foil made pan.
Place on rack.
Top with BBQ sauce.
Use the settings listed above.
Final step:
Add more BBQ sauce if necessary. 
Lightly sprinkle with brown sugar.
Place under broiler to brown.

Meat loaf:
1 3/4 lb. 80/20 beef (I love Sprouts)
3/4 c buttermilk
1 chopped leek
1 T liquid smoke
1 t Greek seasoning
1 t garlic herb seasoning
1/2 c BBQ sauce
1/2 c Panko
Smoked salt
Cracked black pepper

Smoked BBQ Meatloaf Nachos

1 slice smoked BBQ meatloaf
sharp cheddar 
Tostado chips
Sweet onions or green onions 
BBQ sauce( I make my own) 

Spread out chips in a plate.
Sprinkle cheese.
Cut meatloaf in bites.
Heat 30 seconds in microwave. 
Add sauce and onions.
Delish!!!

Smoked Meatloaf with BBQ Sauce

This was so moist and smoky!!! Yum!

Meat loaf recipe( I used my Crockpot Cheesy Buttermilk Meatloaf recipe) except I used all beef 2 1/4 lbs. 85/15 blend( I buy mine at Sprouts)
All the grease comes out during smoking and may be poured off.
Mix meatloaf, just till incorporated, and put in a 13x9 foil pan. 
Mash to make an even sized loaf. 
It will be about 2 inches high and about 12 inches long. 
Leave space all the way around the loaf.
Add BBQ sauce on top.
Smoke at 225 degrees for 3 1/2 to 4 hours using green hickory and dried cherry wood.
Add more BBQ sauce when serving.

Crockpot Cheesy Buttermilk Meatloaf

THURSDAY, OCTOBER 25, 2012

Glaze (mix together)
1 cup ketchup
Few shakes smoky chipotle Tabasco 

1/4 cup brown sugar
1/2 t Jim Beam
Heat glaze until sugar is melted.



1/3 cup Panko bread crumbs 
1 cup whole-fat buttermilk
1 cup diced leeks
1/4 cup chopped fresh parsley 

1/2 t Herbs de Provence
2 tbsp. ketchup(I use 2 T of the glaze) 
1 1/2 lbs. turkey
1/2 lb. ground pork
1 cup grated Italian 4 cheese
1/2 tsp. smoked salt
1/2 tsp. ground pepper

Combine, buttermilk, turkey, pork, Panko, leeks, cheese, ketchup, parsley, salt and pepper, and mix. Mix glaze and cover meatloaf. Cook in crock on high for 4 hours.

Mexican Meatloaf



WEDNESDAY, APRIL 3, 2013 




I Corinthians 15:3-4
3 For I delivered to you as of first importance what I also received: that Christ died for our sins in accordance with the Scriptures,
4 that he was buried, that he was raised on the third day in accordance with the Scriptures,




2 T olive oil
1/2 cup finely chopped leeks
1 medium carrot, finely chopped
1 rib finely chopped celery
1/2 of a chopped jalapeno
1 clove roasted garlic
1/4 c fresh chopped cilantro
1 lb. ground turkey
6 ounces soft Mexican chorizo, removed from casing and crumbled 

3/4 t smoked salt
1/4 t freshly ground black pepper 

/4 t cayenne pepper 1/2 t ground cumin 1 c buttermilk
1/4 cup ketchup

1 T smoky chipotle Tabasco 1/4 cup sour cream
1/2 c Panko

Salsa-Glaze:
2 medium tomatoes, cored
1/4 medium white onion
2 cloves roasted garlic, mashed
1/4 cup brown sugar
2 peppers from canned chipotle chile in adobo sauce, minced 1 tablespoon Dijon mustard
1/2 t smoky salt

In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, jalapeno, carrot, celery, and garlic, stirring often until vegetables are soft.
In a large bowl combine the sauteed vegetables, ground beef, chopped cilantro and chorizo.
In a medium bowl, combine the salt, pepper, cayenne, cumin, and buttermilk. Add the ketchup and sour cream. Add Panko, meat and veggie mixture and mix thoroughly.
Place in crock pot on high and cook for 4 hrs.
Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, and roasted garlic cloves. Cook veggies, turning frequently, until lightly charred on all sides. Add all the charred ingredients to a blender. Pulse until chunky, pour into a small skillet and stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes and season with salt, to taste.
Spoon the salsa-glaze over the meatloaf and serve.

MiMi's Crockpot Cajun Meat Loaf

                                                                                         




1 lb ground turkey
1 lb ground pork
1 egg, beaten
1 env dry onion soup
2 T Cajun seasoning
1/3 c heavy cream
1/2 oatmeal
1/2 ketchup
1/2 t salt
2 T Worcestershire

Mix well. Line crock with foil. Place meatloaf in and spread until even. Top with 1/3 cup more of ketchup. Cook on high for 4 hrs. When meatloaf is almost done,with about an hour left, add another 1/3 ketchup on top.

GMA Award Winning Crock Pot Meatloaf

Meatloaf
2 beaten eggs
3/4 c. milk
2/3 c. seasoned bread crumbs
1 tsp salt
2 Tbsp onions, grated
1/2 tsp. ground sage
1 1/2 lb. ground meat (I use 1/3 lb. ground pork, 2/3 lb. ground beef.
Sometimes I use 1/3 lb. ground veal and just 1/3 lb. ground beef.)

Sauce
1/4 c. Ketchup
2 Tbsp brown sugar
1 tsp. dry mustard
1/4 tsp. ground nutmeg

Cooking Directions

Put loaf in Crock-Pot on low 5-6 hours (Longer is OK.)
Pour sauce over meat in the last 15 minutes on high.

Crock Pot Meatloaf

2 lbs Ground beef
2 Eggs
3/4 c Oatmeal(uncooked)
1/2 c Ketchup
1 pgk dry onion soup

Mix all together and put in crock pot. Cook on high for 4-6 hrs. The last hour add some ketchup to the top.
