Porchetta

Saw this on America's Test Kitchen!

6 lb. Boneless pork butt roast with a fat cap

Fresh herb mixture
3 T Dried fennel seed, grind into powder
1/2 c Fresh rosemary 
1/4 c Fresh thyme
1 T black pepper
1 t kosher salt
1/2 c Olive oil
6 cloves roasted Garlic, mashed

Process to make a paste.

For a crisp fat cap add this seasoning:
1 t kosher salt
1 t black pepper
1/4 t baking soda 
Mix together.

Crisscross fat cap.
Cut into 2 roast.
Cut deep slits so they can be packed with herb paste.
Season roast with kosher salt.
Add paste into slits and and rub over roast.
Cut six lengths of kitchen twine.
Tie up roast.
Place on rack in a roaster pan, fat side up and refrigerate for at least  6 hours but you can leave it 24 hours.
Add fat cap seasoning.
Bake, fat side up, covered with foil 325 degrees for 2-1/2 hours. 
Temp should be 180 degrees. 
Remove foil and roast.
Drain off juices.
Turn oven up to 500 degrees.
Cut twine off roast.
Recover roast with foil.
Add foil to bottom of pan.
Bake for an additional 30 minutes until roast reaches 190 degrees.
Rest for 20 minutes before slicing.
Slice into thick slices and enjoy.

Shrimp and Zucchini Tempura

1 lb, jumbo gulf shrimp, cleaned 
2 small zucchini, cut into thin fries
1 c AP flour for dredging shrimp and zucchini 

Vegetable oil in Fry Daddy

Dry ingredients for Batter
1-1/4 c AP flour 
1/2 t smoked salt
1/2 t cracked black pepper
1 t baking powder
1/4 c cornstarch 
1/2 t sugar

Wet ingredients for batter
1/3 water
1 egg
Add dry ingredients and wet ingredients, mix well. 
Add 1c Ice cubes to batter.
Dredge shrimp and zucchini in flour then batter. 
Fry in hot oil, 5 at a time. 
Drain on paper towels.
Serve shrimp with duck sauce.

Greek Tuna Croquettes

1 t apple cider vinegar
1 T Mayo 
1 T Greek seasoning, recipe under seasoning tab this blog
Smoked salt and Cracked black pepper, to taste
2 medium size Eggs
7 oz. can of water packed white Tuna, drain well 
1 c Panko
Lemon juice from 1 lemon
1 t Dijon
1 Shallots, diced

Seasoning for top of croquettes
Smoked paprika
Dried parsley

Mix well, form into patties.
Place on parchment and let sit 10 minutes.
Bake 425 degrees for 12 minutes each side 
Season with top seasoning after turning.

Drizzle before baking
A little drizzle on parchment of Olive oil and a drizzle on each croquette
Clarified butter for the tops of croquettes 
This promotes crispness.


Spicy Avocado Aioli

1 Avocado, mash with a fork
1 t Mayo
1 t Greek plain yogurt
1/4 or more of a Chipotle pepper in adobo
Smoked Salt and cracked pepper, to taste
1/2 t Sugar

Mix and serve over croquettes.

Sauvignon Blanc Garlic Lemon Cream Chicken

Sautéed Chicken tenders, chopped and lightly floured
or chopped rotisserie chicken breast

Sauté chicken in clarified butter.
Set aside.

Sauce
1 Shallots, diced 
2 T Butter
1 T Roasted garlic, mashed
Juice of half of a lemon
Fresh sage, 1/4 t, chopped
Fresh cilantro , 1/4 t chopped
Fresh parsley, 1/4 t chopped
1/4 c Sauvignon Blanc
1 t Sugar
1/4 c Cream
1/4 c Half and half
1/8 c Italian cheese blend
2 T Mascarpone 
Smoked salt and pepper to taste

Melt butter and shallots over medium heat.
Add garlic, herbs, wine and sugar.
Cook 2 minutes then add creams, cheese, and mascarpone.
Reduce slightly.
Add cooked chicken.

Serve over zucchini noodles.






Asian Fry and Shrimp Sauce

1/4 c Mayo
2 T Yellow mustard
2 T fresh Lemon juice
2 T Sweet chili Thai sauce
3 T Ketchup

Mix.
This is a delicious fry, fried shrimp, fried fish, salmon patty or crab cake sauce.

Lobster Ravioli with White Wine Shallot Lemon Cream

1/4 c White Wine, I used Sauvignon Blanc 
2 T Butter
1 Shallots, diced 
1 T roasted Garlic 
1/8 c Italian Cheese blend, this cheese blend is sharp 
1/4 c Heavy Cream
1/4 c Half and half
1/2 of a lemon, juiced
3 T Mascarpone 
1/2 t - 1 t of Sugar, add 1/2 t then taste, cream should be balanced not sweet 
1 t Parsley

Lobster ravioli ( I got mine at Trader Joe's, Costco also has them) cook according to directions, set aside 
* don't overcook, ravioli will pop and the filling will come out

To make sauce, melt butter on medium heat, add shallots and garlic, sauté. After 2 minutes add the wine and cook 2 minutes. Now add the lemon juice, creams, cheese, the mascarpone, sugar and parsley.
The sugar is just to balance the flavor. 
Sauce is not sweet.
Spoon over ravioli and enjoy!

Weight Watchers Dijon Potatoes





























1 Let every person be subject to the governing authorities. For there is no authority except from God, and those that exist have been instituted by God.

Paste ingredients 
2 t olive oil
2 T Dijon mustard
1 1/2 t smoked paprika 
1/2 t dried thyme
1 t smoked salt
1/2 t cracked black pepper
Whisk with a fork

6 medium potatoes, I used Yukon Gold
I microwaved mine 2 minutes on each side, then split in half to cool. 
After they cooled, I cut them into steak fries.


Make paste in a large bowl.
Toss potatoes in paste.
Bake on a parchment lined sheet pan, in preheated 425 degree oven for 15 minutes on each side.

Sauvignon Blanc Lime Cream Sauced Grouper





























7 For none of us lives to himself, and none of us dies to himself.
8 For if we live, we live to the Lord, and if we die, we die to the Lord. So then, whether we live or whether we die, we are the Lord's.

Fresh lime juice from a half of lime, squeeze over fish and let sit 10 minutes
Grouper, season with smoked salt, cracked black pepper

Rub 
1/2 t garlic, 1/2 t smoked paprika, pinch smoky chipotle seasoning and 2 T fresh cilantro 
Sprinkle over fish 

1 diced Shallot 
1/4 c Sauvignon Blanc 
2 T Clarified butter
2 T Heavy Cream 
1/4 c Parmesan 

Put butter in skillet. 
Heat medium heat and add shallots.
Cook 1 minute, add seasoned fish.
Cook 2 minutes each side.
Add wine, cheese and cream.
Cook 3 more minutes.
Serve over ginger rice.
