Creamed Left Over Smoked Turkey





























Hebrews 9:27


[27] And just as it is appointed for man to die once, and after that comes judgment,



1-1/2 c chopped left over turkey

1 Shallot, diced

1 T roasted Garlic

Pinch Red pepper flakes

1 t olive oil


Sauté Shallot, garlic and pepper flakes in oil.

Add turkey


To the turkey mixture add

1/4 c heavy cream

1/4 c half and half

1/4 c water

Salt and pepper 

Sauté until turkey is creamy 

 

Serve over mashed potatoes or rice

Air Fryer Rotisserie Style Turkey Club

4 slices for each sandwich, bread of your choice, toasted, crust removed

Mayo

Thin turkey slices 

Thin sliced Apple 

Thin sliced sweet onions 

Lettuce

Crisp Turkey bacon

Cheese of your choice


De crust bread 

Slightly toast bread in air fryer until cheese melts

Remove

Place cheese bread on bottom

Add Apple slices

Add next slice of bread

Spread desired amount of mayo

Add lettuce, tomato, onions and turkey bacon

Add Mayo to next slice

Add turkey slices

Add Mayo to last bread sliced

Gently mash down

Cut on diagonal with sharp knife

Serve with kosher dill pickle

Air Fryer Turkey Breast for Sandwiches






























Isaiah 13:11


    [11] I will punish the world for its evil,

        and the wicked for their iniquity;

    I will put an end to the pomp of the arrogant,

        and lay low the pompous pride of the ruthless.




 

3 lb or so skin on Turkey breast, thawed


Marinade

1/4 t dry mustard 

1/4 t black pepper 

1/8 t lime juice

1/8 c peanut oil

1/8 c low sodium Soy sauce

1 t Honey

1 t tomato paste concentrate 

1/2 t hickory liquid smoke

Place in ziplock and marinate 24 hours

Remove to counter for 20 minute rest

Reserve marinade for basting

Add rub 


Dry Rub

1 t kosher Salt

1 t black Pepper

1/8 t White pepper

Pinch red pepper flakes 

1/2 t Onion powder 

1/2 t Garlic granules 

1/2 t dried Thyme

2 t Smoked paprika 

Add rub all around even under skin.


Directions

400 degrees for 10 minutes skin size down

Flip over, lower temp to 325 degrees, air fry 25 minutes, at 15 minutes mark moisten with 1 small ladle of reserved marinade 

Flip again after 15 minutes, moisten again

Cook another 15 minutes flip again and moisten, final cook until a temp of 165 degrees.

Remove, tent with foil making sure temp is 165 degrees, check after 10 minutes, slice a little to eat now.

Wrap and freeze rest of turkey breast for 2 hours so that you can slice thin for deli sandwiches.

Spinach Smoked Turkey Pappardelle Pasta in Sage Cream Sauce

An ej original recipe!



2 c Left over turkey from freezer, pulled or chopped

Fresh baby spinach

8 oz Pappardelle pasta, cooked al dente and reserve 1 c pasta water

1 Leeks

2 T roasted Garlic

1 t Thyme

1 t Rosemary 

1 t Sage

3 T Butter

Salt and pepper to taste

2 T fresh lemon juice

1 can evaporated milk

1 c Havarti cheese

1/4 c Parmesan 

1c Pasta water


Sauté garlic, Leeks and spinach in butter.

Add turkey, lemon juice and seasonings.

Add cheeses and evaporated milk, and pasta water simmer.

Using tongs, swirl in pasta.

Serve with crusty bread and salad.

Baking Bag Smoked Brown Sugar Turkey Breast

Baking bag with 1 T flour(size up to 8 lbs)

6 lb Smoked Turkey Breast ( Publix)

Yellow mustard

Brown sugar

Coke mini


Preheated 325 degree oven.

Add turkey breast to floured bag.

Cover breast with yellow mustard.

Pat with brown sugar.

Pour coke around sides.

Tie bag, make 3 slits in top of bag.

Place in 13x9 foil pan.

Cook for 3 hours, rest 15 minutes and slice.

Pour yummy juice over slices.

Freezes well!!

Left Over Frozen Smoked Dark Turkey Tetrazzini

    [9] Whoever is wise, let him understand these things;

        whoever is discerning, let him know them;

    for the ways of the LORD are right,

        and the upright walk in them,

        but transgressors stumble in them.



An ej original recipe!


2 c left over turkey, chopped or pulled

4 c cooked al dente spaghetti pasta, reserve water

Set these two ingredients aside.



3 T clarified butter

1 Shallot 

1 T roasted garlic 

2 tiny sweet bell peppers

1 t each dried Thyme, rosemary, Sage 

Pinch of roasted red pepper flakes

2 t chicken base seasoning 

Sauté spices, seasonings and veggies in clarified butter.

Add 1/2 c pasta water to de glaze-pan.

Then add all the rest of the sauce ingredients.

Keep adding pasta water until you get the amount of sauce you want.

Lastly add the turkey and pasta.



Sauce ingredients 

1/4 c Sauvignon Blanc 

1/8 c half and half

2 T spreadable cream cheese

1/2 c Parmesan 

1/2 c Mozzarella

Leftover Mustard Brown Sugar Turkey and Cabbage Pan Fried Dumplings

































1 Peter 4:12-14


Suffering as a Christian


[12] Beloved, do not be surprised at the fiery trial when it comes upon you to test you, as though something strange were happening to you. [13] But rejoice insofar as you share Christ’s sufferings, that you may also rejoice and be glad when his glory is revealed. [14] If you are insulted for the name of Christ, you are blessed, because the Spirit of glory and of God rests upon you.


 

An ej original recipe!!


 

1/2 c leftover turkey, White and Dark

Set aside


16 Round dumpling or won ton wrappers


1 c chopped Cabbage 

1/4 c chopped Onion

1/4 c sliced mushrooms 

1 t roasted garlic

Pinch pepper flakes 

1 t toasted sesame oil


Stir fry veggies in oil.

Add seasoning sauce to Cabbage mixture.

Cool


Seasoning sauce 

1 t Mirin

1 t Ponzu sauce

1 t brown sugar

1/4 salt and pepper


Place veggie mix in mini food processor pulse. 

Add turkey to make a paste.

Place a teaspoon amount in middle of wrapper and seal edges with water.


For dipping, serve with Sweet Chili Thai sauce.

Brown Sugar Mustard Smoked Turkey



































Job 9:25


    [25] “My days are swifter than a runner;

        they flee away; they see no good.



1 smoked turkey ( already thawed, mine came from Sam's)


Turkey size baking bag

1 t flour

1/2 c Yellow mustard

1 c Brown Sugar

Mini coke



Preheat oven 375 degrees.

Set timer for 1 hour 30 minutes or until temp reaches 145 degrees in multiple spots.

Place flour in bottom of bag.

Smear mustard over top of whole turkey.

Pat brown Sugar over mustard.

Place turkey in floured bag.

Add coke mini. 

Tie bag, cut 2 slits in top.

Place in heavy bottom pan.

Place on bottom rack.

Cook to internal temp of 145 degrees.

Check with thermometer in several places.

Creamy Skillet Leftover Turkey Tetrazzini


































Ephesians 4:4-7


[4] There is one body and one Spirit—just as you were called to the one hope that belongs to your call—[5] one Lord, one faith, one baptism, [6] one God and Father of all, who is over all and through all and in all. [7] But grace was given to each one of us according to the measure of Christ’s gift.



2 c cooked al dente angel hair pasta, drain and set aside

2 c chopped leftover turkey

2 t clarified butter

1 Shallot, diced  

1 c mushrooms, sliced 

3 T roasted garlic 

1/2 t rosemary 

1/2 t thyme

1/4 t sage

2 t chicken base seasoning 

1/2 c water

2 t flour

1/4 c Sauvignon Blanc

1/8 c half and half 

3 t spreadable cream cheese

1/2 c grated Parmesan 

1/2 c fresh shredded mozzarella 

 

 Add clarified butter to skillet.

Place veggies in skillet.

Saute until soft, add turkey and seasonings.

Add wine, saute 1 minute, add water, cream cheese, cream, base and reduce.

Add all other cheese. 

When cheese is melted, add pasta.

Baking Bag Bone In Turkey Breast
































Hebrews 3:7-11


[7] Therefore, as the Holy Spirit says, 


    “Today, if you hear his voice, 

    [8] do not harden your hearts as in the rebellion,

        on the day of testing in the wilderness, 

    [9] where your fathers put me to the test

        and saw my works for forty years. 

    [10] Therefore I was provoked with that generation,

    and said, ‘They always go astray in their heart;

        they have not known my ways.’ 

    [11] As I swore in my wrath,

        ‘They shall not enter my rest.’”



 

Thawed bone in turkey breast, spatchcock,  salt and pepper

Baking bag with 1 T of flour inside


Yellow mustard

Salt and pepper

Brown sugar

Coke mini


Add spatchcocked turkey to floured bag, cover breast with mustard and brown sugar. 

Add coke to bottom of bag.

Tie bag, put a few slits in in top.

Bake in preheated 350 degree oven for 3.5 hours or until breast reaches 170 degrees.


Make a glaze by cooking down drippings.

Kick It Up A Notch Turkey Bacon



































Turkey bacon is rather bland.

I've been experimenting with different flavors.

This was delicious as was the one with Texas Pete's and black pepper.



Romans 1:24-32


[24] Therefore God gave them up in the lusts of their hearts to impurity, to the dishonoring of their bodies among themselves, [25] because they exchanged the truth about God for a lie and worshiped and served the creature rather than the Creator, who is blessed forever! Amen.


[26] For this reason God gave them up to dishonorable passions. For their women exchanged natural relations for those that are contrary to nature; [27] and the men likewise gave up natural relations with women and were consumed with passion for one another, men committing shameless acts with men and receiving in themselves the due penalty for their error.


[28] And since they did not see fit to acknowledge God, God gave them up to a debased mind to do what ought not to be done. [29] They were filled with all manner of unrighteousness, evil, covetousness, malice. They are full of envy, murder, strife, deceit, maliciousness. They are gossips, [30] slanderers, haters of God, insolent, haughty, boastful, inventors of evil, disobedient to parents, [31] foolish, faithless, heartless, ruthless. [32] Though they know God’s righteous decree that those who practice such things deserve to die, they not only do them but give approval to those who practice them.


5 slices of turkey bacon 

Maple syrup 

Coarse black pepper

Pam spray 



Spray microwave bacon rack with Pam.

Lay slices on spray.

Spray bacon tops with Pam.

Brush tops with syrup, sprinkle with pepper.

Cover with paper towels.

Mine is crispy at 3 minutes 40 seconds.
