Puff Pastry Birria Chicken Empanadas

Birria Chicken*(freezes great and tons of uses)


Puff pastry thawed ( I used half)

Flour parchment sheet

Roll out out Pastry so you can cut out 10- 4 inch circles

Put 1 heaping T of filling on half of circle

and put egg white on the other. 

Pinch seams together and crimp with fork.

Using shears cut 2 slits in top.

Set on parchment lined and non stick sprayed sheet. 

After 10 empanadas are filled and sealed,

brush with egg white.

Bake preheated 425 oven for 17-18 minutes until golden brown.

1 Bell pepper

1 Jalapeño 

1 Leek

1/2 t sugar

Salt and pepper

1/2 T olive oil

Sauté and set aside to cool.


1 egg white


1/2 c Quesadilla cheese

1 heaping T spread cream cheese

1-1/4 c Birria Chicken 

Pepper Leek mix

Mix cooled ingredients together to make filling.

2 c left over cooked Shrimp, potato, Andouille Sausage from boil / bake, chopped 

1 diced fresh Jalapeño 

Pinch of sugar 

1/4 c chopped onion

1/4 c spread cream cheese

1 t BBQ sauce 

1 T ranch dressing 


Mix together in a bowl, warm in microwave and place into a small cast iron skillet.

Top with

1/4 c Cheddar cheese blend 

1/4 c Quesadilla cheese




Toppings

Chopped Green onions 

Chopped Fresh cilantro 

Guacamole salsa

Salsa Verde

Salsa Rojo

Instant Pot 12 minute Birria Chicken Thighs

8 boneless skinless chicken thighs, whole

3 T Birria seasoning

2 T Steak seasoning 

Pinch of salt and pepper

1/2 of a lime juiced


Mix dry seasoning and cover chicken.

Place in gallon ziplock and massage chicken until its cover with seasoning.

Squeeze lime over chicken and massage again.

Marinate at least 4 hrs or overnight. 

I did mine over night.


Cooking liquid 

Mini coke

2 T Concentrated Tomato paste

1 t Birria seasoning 


Set IP to sauté and heat to hot, add 2 t olive oil.

Sauté chicken for 5 minutes and flip, sauté another 3 minutes.

Add coke and tomato paste.

Change setting to pressure and adjust time to 12 minutes.

Place lid on.

After cook time let IP sit for 8 minutes with pressure on. 

Place hand towel on top and release pressure.

We ate 3 thighs whole with slaw and potato salad.

The rest I shredded by hand for tacos.

Hot Honey Birria Pork BBQ

An ej original recipe!



3 lb pork butt, cut in 3 inch chunks, trim some fat

1 mini coke 

Mix 1/8 c Birria seasoning with 1/8 c steak seasoning, sprinkle over pork chunks.

2 t olive oil, in a Dutch Oven, bring to smoking hot to sear pork chunks

Turn off heat, add coke

Put on lid

Add to a 350 degree oven and cook 2 hours

Pull pork

Lightly drizzle hot Honey Birria sauce over meat



Hot Honey BBQ Sauce

1/2 c BBQ sauce 

1 T Apple cider vinegar 

1t Birria seasoning 

3 T hot Honey

2 T Rendered fat from pork 

1/8 c water

1/4 t coarse black pepper 

1/4 t salt


Put in microwave safe bowl on a hot pad

Microwave in increments of 25 seconds until sauce is hot

Use on Birria pork

Order of preparation 

Tostitos Scoops 

Taco Bell Ground Chicken* (I keep this cooked in the freezer) 

Salsa

Cheese of your choice

Chopped together scallions and cilantro 



Line pan with foil

Lay taco cups down

Fill in order listed

Air fry 400 degrees for 5 minutes 

Lower to 350 degrees and fry additional 2 minutes

Top and enjoy!



Toppings after toasting, if you like

Sour cream

Squeeze of lime

Ground Chicken Fried Jalapeño Turkey Bacon Slider

Chicken burger recipe( I make these and keep in freezer)

1 lb ground Chicken 

1/4 c chopped Green onions

1/4 c Italian cheese blend

3 T buttermilk 

1/4 c panko 

Salt and pepper to taste

1/2 t onion powder 

1/2 t garlic granules 

Mix just to incorporate.

Make into 6 Slider patties.

Fry in a tablespoon of olive oil.

Fry onions and peppers also.

Build Slider.


Pan fried sweet onion slices

Pan fried slices of Jalapeño, seeds removed ( makes them smoky tasting)

Cheddar Cheese slice

Crisp turkey bacon slices 

Slider buns(Sam's club bakery) keep in freezer

25 Minute Instant Pot Birria Beef Tacos

































Psalm 119:114

2 lb beef chuck roast, cut in thirds then 1 inch chunks


Birria seasoning 

1 /2 c  Guajillo chili powder made from dried chilis (Clean chilis removing seeds and tear into pieces, pulse in coffee grinder to make powder)

1 T smoked paprika 

2 T chicken base seasoning 

1 T onion powder 

1 T garlic granules 

1 t salt

1 t black pepper 


Instant Pot ingredients 

Beef

3 c Hot water 

2 large carrots

2 bay leaves

3/4 of the Birria seasoning

Reserve rest to sprinkle on taco 


Soft Corn tortillas 


Toppings

Quesadilla cheese

Green onions

Cilantro 

Lime


Add hot water, beef, carrots, bay leaves and seasoning to IP

Process on pressure setting for 25 minutes 

Quick release

Add 1/2 inch of oil to skillet 

Heat

Remove beef to container 

Add 1 c juice to beef

Shred or chop beef

Dip corn tortillas in juice 

Add to hot oil

Fill taco with meat and cheese

Fold 1/2 of shell over to make the taco

Deep fry and flip

Top with toppings 

Enjoy

Toasted Chili Pork Tenderloins

        is firmly fixed in the heavens. 

    [90] Your faithfulness endures to all generations;

        you have established the earth, and it stands fast. 

    [91] By your appointment they stand this day,

        for all things are your servants.



2 pork Tenderloins(I got mine at Aldi) 2 to a pkg $8.00 

1 T coarse salt (heaping)

rub all over 

Marinate 8 hrs in fridge

Remove from fridge

Dry off 

Salting pork over a long period refrigerated gives a really juicy texture.


Rub

2 T Toasted and ground Ancho and Pasilla Chilis powder  ( I make my own)

2 T brown sugar 

1 t toasted cumin

1 t Garlic granules 

1 T Mexican oregano 

1/4 t coarse black pepper 

Add the 3 T citrus juice of your choice to make a paste to the spice rub

Rub pork all over


Lime, lemon or ruby red grapefruit (your choice) 3 T fresh juice


Bake on rack for 450 degree preheated for 25-35 minutes until pork is 145 degrees.

Rest, loosely covered at least 5 minutes but 10 is better and slice to serve.

Knock Off Taco Bell Ground Chicken Tacos

1 lb ground Chicken

1 c beef stock

1 T cornstarch 

1 envelope of Taco Bell seasoning

Salt to taste


Put in skillet and cook 15-20 minutes until done, mash the chicken while cooking to look like Taco Bell beef (we like to use chicken)


Crunchy Taco shells, heat according to pkg directions 


Toppings

Mild Taco Bell sauce

Chopped Tomatoes 

Chopped Lettuce

Sour cream 

Cheese (used smoked shredded Gouda)

Roasted Poblano Chicken Noodle Soup

Sauce

1 T butter

1 T flour

Sauté in heavy bottom pan.


Add following ingredients 

1/4 c guacamole salsa (Herdez)

1/4 c salsa verde (Herdez)

1 t sugar

1 t toasted cumin

1 c Chicken stock

Cook until slightly thickened 

Cool 5 minutes 

Whisk in 

1 c full fat sour cream 

Simmer along with following ingredients 


2 c Rotisserie chicken breast

2 fire roasted Poblano peppers, seeded, cut into thin strips

1 qt Chicken bone broth 

1 medium sautéed cut into strips Onion in 1 t olive oil, 

1/2 c Havarti Cheese

1/8 c fresh tinga salsa *

Sour Cream Cilantro Sauce Peruvian Chicken Black Bean Enchiladas

Fajita size flour tortillas 


 

Chicken filling

2 c left over Peruvian chicken, shredded *

1 can black beans drained well

2 c cheddar Cheese blend

1/2 c sour cream sauce

1/2 c green onions, chopped 

Heat chicken and green onions in microwave for 1 minute.


Sour cream sauce directions

2 T butter

3 T AP flour

Heat butter in pan, add flour, make roux.

Add chicken stock, stir, thicken, remove from heat.

Cool and add sour cream and cilantro cream.

Set aside.


Sour cream sauce ingredients 

2 c chicken stock

1/4 t salt

1/2 t pepper

1/2 t toasted cumin

1 c full fat sour cream

1/4 c left over cilantro cream


Baking directions

13x9 foil pan

Ladle of sour cream sauce in bottom of pan.

Fill tortillas, roll seam side down.

Cover all enchiladas with sour cream cilantro sauce.

Preheat air Fryer to 400 degrees.

Bake covered 20 minutes.

Add cheese.

Bake uncovered 15 minutes.
