Skillet Asian Pork Tenderloin



































20 My soul continually remembers it and is bowed down within me. 

21 But this I call to mind, and therefore I have hope:

An ej original recipe!!



2 small Pork Tenderloin that has been marinated in 

1/8 c Soy Vay Hoisin garlic

1/8 c Sweet chili Thai sauce

2 t Mushroom soy sauce 


Add large cast iron skillet to a cold oven, bring heat up to 450 degree oven.

Add 2 T of butter to hot skillet.

Add drained Tenderloin to butter, put back in oven and cook 15 minutes.

Take out and flip, cook another 10-15 minutes.

Temp should be at least 150.

Do not overcook.

Rest and slice in 1 inch thick pieces.

Instant Pot 2 Hour Chicken Bone Broth

Chicken carcass, Costco Rotisserie is great

2 Carrots

1 quartered Onion

2 stalks Celery

1 T Salt 

1t Pepper 

1/2 t garlic 

Water filled to fill line

2 T Apple cider vinegar, softens bones


Place ingredients in pot.

Set manual time to 120 minutes.

Set lid to pressure.

At end of cook time let pot cook and return to no pressure.

Freeze or can broth.

If pressure canning your set your lbs according to your area. 

Mine is 10.

Process 25 minutes for quarts or 20 minutes for pints.

17 and he thought to himself, 'What shall I do, for I have nowhere to store my crops?'

19 And I will say to my soul, "Soul, you have ample goods laid up for many years; relax, eat, drink, be merry."'

20 But God said to him, 'Fool! This night your soul is required of you, and the things you have prepared, whose will they be?'

3 c fresh cooked greens mix, I used kale, turnip greens and mustard greens, seasoned with sugar, pepper sauce and Cajun seasoning, cooked in chicken stock

1- 2 cans drained Northern Beans 

1 sliced Onion

1 can Stewed tomatoes 

3 T roasted mashed garlic

1/8 c sliced Celery

2 c chopped Pan Fried or Oven cooked Smoked sausage

1 c chopped Ham

1/4 t Sriracha 

 

I used the stock I had cooked the greens in.

Just add everything and simmer.

Serve with cornbread.

Green Tomato Salsa Verde

6 large green tomatoes 

1 small Onion, chopped

2 JalapeƱo, diced 

3 T roasted Garlic, diced

Juice of 1/2 of a small lime

1 t sugar

1/4 c fresh chopped cilantro 

Salt and Pepper to taste

1 t Toasted Cumin

1/2 t Oregano 


Blend in food processor.

Put in pot and heat to a boil, stirring occasionally.

Simmer on low for 5 minutes.

Put in jar and refrigerate until use.

Suggested uses:

Sauce for Enchilada, Tacos, Nachos

Tuscan Haricots Vert Green Beans and Potatoes

An ej original recipe!


1 pack Haricots Vert

Water just up half the way of the veggie filled pot

1 small Onions, sliced

1 c button Mushrooms, sliced 

1 t roasted Garlic

1 t Tuscan seasoning 

1/2 t Pepper

1 t Chicken base seasoning 

Drizzle of Olive oil


Place ingredients in a pot.

Boil until potatoes are tender.


Tuscan Lemon Chicken and Rice





































15 And the prayer of faith will save the one who is sick, and the Lord will raise him up. And if he has committed sins, he will be forgiven.

2 Rotisserie chicken breast, shredded

1 small Onion, chopped

1 c button mushrooms 

1 T roasted garlic

1 t clarified butter

Drizzle of olive oil

3 T Italian blend cheese

1/4 c Sauvignon Blanc

1/2 c water

1/2 c half and half

2 t Tuscan seasoning*

1/2 t black pepper

1 t chicken base seasoning

1/2 of a lemon juiced and zest of half of lemon

Prepared Jasmine Sticky rice*

In a large skillet add oil and butter, heat to medium high.

Add mushrooms, onions, garlic and all seasonings.

SautƩ until onions are soft.

Add wine, reduce slightly.

Then add water and cream.

Sprinkle in cheese, lemon zest and juice stir and add chicken.

Reduce slightly and add cooked rice.

Delicious!!


I have used this rice recipe numerous times and it's always perfect. 

I do large batches, one recipe at a time and freeze. 

It does great, thaw on microwave defrost.

I use this rice in soups, gumbo, and skillet meals.

Pressure Canned Mardi Gras Taco Shredded Beef

10-11 lb pressure

6 Pint jars

Pressure Canning time 75 minutes


Clean jar rims with a paper towel wet with vinegar after filling.



3 lb beef stew meat

1 large Shredded onion, I did mine with a mandolin 

3 Heaping T roasted Garlic


Mix the following spices together!

1/4 c Mardi Gras seasoning

3 T Dried or fresh cilantro 

2 T Dried oregano

Pinch of sugar 


1 qt  Beef stock, brought to boil and kept warm


Refer to pressure canner for instructions.


Raw pack jar with beef 3/4 way, press down, add around1/4 c onions, then a teaspoon of roasted garlic and a teaspoon of seasoning, mash down again.

Fill with beef stock leave 1 inch head space.

Clean rim.

Finger tight ring.

Add to prepared pressure canner on the rack.

Process.

Creamy Refried Beans Made from Pressure Canned Pintos

































3 He put a new song in my mouth, a song of praise to our God. Many will see and fear, and put their trust in the LORD.

5 You have multiplied, O LORD my God, your wondrous deeds and your thoughts toward us; none can compare with you! I will proclaim and tell of them, yet they are more than can be told. 

6 In sacrifice and offering you have not delighted, but you have given me an open ear. Burnt offering and sin offering you have not required.

What a time saver!! 

I'm loving the convenience of pressure canned Pinto beans!!



2 T olive oil

1 pint pressure canned dried Pinto beans

1/2 c chopped onion

2 T roasted garlic

1/2 t kosher salt

1/2 t cracked black pepper 

1 t chili powder

1 t toasted cumin

1/2 c cotija cheese 

1/2 c Jack cheese

 

Garnish

Fresh cilantro

cotija cheese


Put oil in skillet along with the onion, garlic and spices.

Spices will bloom as the onions and garlic   cook.

Add beans and fry for 5 minutes, mash with a potato masher.

Add cotija cheese, stir. 

Remove from heat and add jack cheese.

Garnish if desired!

Yummy!!

Tuscan Mardi Gras Pasta

An ej original recipe!


 

Angel hair pasta cooked and set aside, reserve water 

2 left over Mardi Gras Skillet Chicken* 

thighs, shredded

1/2 of a Onion, sliced

1 ear of sweet corn, shaved off

1 c shredded cabbage

Drizzle of olive oil

1/2 t chicken base seasoning 

1 t Tuscan seasoning*

1/4 c evaporated milk

1/4 c pasta water

1/2 c bruschetta* 

1/4 Italian cheese blend

Sprinkle sweet basil over to serve.


Fry onion, corn and cabbage in oil. Season with Tuscan seasoning and chicken base seasoning until cabbage is al dente.

Add shredded chicken, milk, water, pasta, bruschetta and cheese.

Sauce will thicken quickly.

To serve add sweet basil.
