Kickin Warm Bar Olives

































Psalm 49:7-9


    [7] Truly no man can ransom another,

        or give to God the price of his life, 

    [8] for the ransom of their life is costly

        and can never suffice, 

    [9] that he should live on forever

        and never see the pit.



Drizzle Olive oil in small skillet


1 c Castelvetrano Olives ( you could use different colored Olives for a prettier look)

2 -3 Lemon zest slices

1/4 t Rosemary

1/4 t Coriander 

1 T Roasted garlic

Pinch of red pepper flakes 

1 T Chopped Greek peppers (Pepperoncinis)

Pinch Black Pepper 

Pinch of Coarse salt before serving


Heat spices in oil, add garlic, add lemon zest slices, then olives.

Sauté until Olives start releasing water, about 5 minutes.

Add coarse salt and serve warm.

DIY Boursin Garlic Herb and Chive Spread

4 oz salted spreadable butter

4 oz spreadable cream cheese

2 t roasted mashed garlic

1/2 t each dried chives, parsley, oregano, thyme, basil, tarragon 

1/4 t black pepper


Place on a large paper plate.

Mash butter, cream cheese and garlic together with a fork, working in the herbs and pepper.

Work mixture until well incorporated.

Put in a plastic tub and store in fridge.

Instant Pot Bavarian Stew

An ej original recipe!



1 chopped Smoked sausage that has been seared in skillet 

1/2 lb Pork butt or country Boneless Ribs cut into 1/2 in cubes 

1 qt chicken bone broth

1-1/2 c water

1/2 of a Beer

3 T Apple cider vinegar

3 T Olive oil or vegetable oil


Seasonings

1/4 t Fennel seed

1 t Thyme

1/4 t Black Peppercorns 

Salt and pepper to taste

1/2 t sugar

Pinch of red pepper flakes


Have all veggies and meats cut and ready to use.

Turn IP to sauté and heat to hot, add oil, seasonings, celery, garlic and shallots.

When they are tender add meats.

Brown slightly.

De-glaze pan with Apple cider vinegar, then beer.

Add stock and water.

Next add all veggies.

Set pot to Stew mode and cook under pressure on for 60 minutes.


Veggies

1 diced Shallots

2 T roasted Garlic

1/8 c Celery

2 c chopped Potatoes or rutabaga 

1 large sliced Carrot 

2 c chopped Cabbage

1 c chopped Spinach or kale

6 Sliders buns(I used Hawaiian ones)

Quesadilla cheese

Pico de gallo or really drained well fresh salsa

Avocado creama*


1 lb of ground pork

1 t Beef base seasoning 

1 t steak seasoning 

1 t water


Mix steak seasoning and beef base in water.

Work into pork.

Make into 6 slider Patties.

Add a drizzle of olive oil to a medium skillet and heat.

Place Patties in hot oil and cook 5 minutes and flip.

You are looking for a nice crispy sear.

Cover loosely with foil and weight with another skillet.

Cook until Patties reach an internal temp of 165.


Top with avocado creama, fresh pico de gallo and Quesadilla cheese.

Avocado creama recipe

1 avocado, mashed with fork 

1 T mayo

1 T sour cream

1/2 t toasted cumin powder

Pinch of sugar 

A squeeze of 1/2 of a lime

Salt and pepper to taste

Steak Seasoned Pork Tenderloin

1 pork Tenderloin cut in half

Steak seasoning of your choice

1 t Clarified Butter

1 t Olive oil

Pinch red pepper flakes


Generously cover tenderloins with steak seasoning.

Place in ziplock bag overnight.

Add butter and oil to large skillet.

Add Tenderloins and fry 5 minutes each side.

Cover with foil sheet and weigh down loins, add 1/2 c water.

Steam till water cooks out. 

Off heat, drizzle with Bourbon.

Cook just till whiskey dissipates.

Internal temp needs to get 150-155. 

Remove to cutting board and rest 5 minutes before slicing on diagonal.

Preheated 350 degree 

Cook 45 min-60 minutes 

If crackers start browning too much, lay foil loosely on top



1 large roll of Ritz crackers, crushed 


Layer in a 13x9 greased pan

1 medium head of cabbage, chopped 

1 stick of butter, divided 3/4 for Casserole and 1/4 for crackers to be tossed into

1 medium sliced onion

1/4 t garlic granules 

Salt and pepper to taste


Mix together 

1 can Cream of chicken soup

1 c Mayo


Dollop on top of Casserole and spread over top, top with cheese and buttered crackers


Topping

Cheddar cheese

Buttered Ritz crackers 


I made a half size of this recipe. 

It fit perfectly in a deep dish pie plate!

Truly Crispy Seasoned Hash Browns































 

Best hash browns I've ever had!



 

 

Psalm 35:9


    [9] Then my soul will rejoice in the LORD,

        exulting in his salvation.


 

 

1/4 c Parmesan for finishing

 

 

4 medium Yukon Gold potatoes 

Peel and cover in cold water 

Let sit 10 minutes

Dry potatoes 

Grate

Squeeze dry


Add in

1/4 c cornstarch 

1/2 t Garlic granules 

1/2 t Onion powder

1/2 t Seasoned salt 

1/4 t Pepper

1 T Cilantro 


Cook in

4 T Clarified butter, separated set aside 2 T

Add to large skillet.


Heat 2 T clarified butter on medium.

Add seasoned dry potatoes, mash flat.

Fry until slightly browning and flip.

Press the cheese in.

Add the reserved 2 T of clarified butter to non-fried side.

Fry until crispy, flipping to insure crispness.

Roasted Cubanelle Velveeta Party Dip

1 tube of sausage, cooked

3 green onions, chopped

1 T toasted cumin

1 t sugar

1 T roasted garlic

1/4 c roasted Cubanelle peppers

1/2 t chipotle peppers in Adobo

1 c drained thick salsa

1/8 c half and half

1 small Velveeta, chopped

1/4 c Quesadilla cheese



Brown sausage with garlic, cumin, green onions and sugar.

Add salsa and chipotle in Adobo.

Transfer to crock pot.

Add cheeses and cream.


Ham Turkey and Cheese Party Rolls with Shallot Butter Sauce

 1/2 stick melted butter

 1 T Dry mustard

 1 T  Worcestershire sauce

 1 t poppy seeds

 1 T dehydrated shallots

 12 Hawaiian sandwich rolls

 1/4 lb shaved Bourbon Ridge ham

 1/4 lb shaved Maple Honey Turkey

 1/2 lb thin sliced White American cheese



Directions


Preheat oven to 350 degrees. In a bowl, mix together melted butter, dry mustard, Worcestershire sauce, poppy seeds, and shallots. Separate the tops from bottoms of the rolls, and place the bottom pieces into the baking dish. Layer the meats onto the rolls cut bottoms. Arrange the cheese over the meat and top with remaining meat slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls. Bake until the rolls are lightly browned and the cheese has melted, about 15 minutes. Slice into individual rolls to serve.

Ground Chicken Chorizo Breakfast Hash

    Turn not your servant away in anger,

An ej original recipe!!



 

4 c water

3 medium Yukon Gold Potatoes, chop small

1 t salt

 

In a 12 inch non stick skillet bring 4 c water to boil. 

Cook on med heat for 5 minutes. 

Drain and set aside.


8 oz ground pork

Set aside


Quick homemade chorizo spice

3 T olive oil

1 T pasilla ancho chili powder

1 T smoked paprika

1-1/2 t oregano

1-1/2 t coriander 

3/4 t smoked salt

1/2 t black pepper

1/4 t cinnamon 

Pinch of allspice

Pinch cayenne 

Bloom spices in oil for 3 minutes.

Remove from heat.


Add :

3 T apple cider vinegar

2 T sugar

1 T roasted garlic

Return to heat for 1minute.

Remove from heat and cool 5 minutes.


Add ground pork.

Mix into spice mixture.

Turn on medium heat.

The fat will render as it cooks.

When pork us done add the potatoes back in.

Cover and turn to low, cook 8 minutes.

Set aside.


Serve topped with fried egg, sour cream and salsa.
