Sous Vide Instant Pot Steak Fajitas

Who knew? I certainly did not know this. 
I just happened to see a guy on YouTube do it. 


I tried it and boy it was delicious! 
Everyone knows that skirt steak is hard to chew but this was not!!
Out of bounds!!


Skirt steak ( I bought a piece that was already trimmed and it cost less than $5.00)  We ate out of it twice!
Salt 
Pepper
Garlic granules 

Thin sliced Bell peppers
Thin sliced Onion
Sliced Tomatoes

Tortillas 
Sour cream
Cheese

Gallon size freezer Ziploc bag

Fill inner Instant pot with hottest tap water.
Add to Instant pot, set to warm setting, then press less button.
Press all air out.
Add seasoned meat to ziploc. 
Submerge in water bath.
Cook, lid on, for 80 minutes.

Remove from ziploc. 
At this point I added more seasoning.
I sprinkled a small amount of toasted cumin powder and smoked paprika.

Add clarified butter and olive oil to iron skillet.
Fry veggies.
Add meat and sear in a hot cast iron skillet.
Cut off skillet and splash some Bourbon on meat. 
Turn back on to just evaporate Bourbon.
Add meat to board and thin slice against the grain.
Serve with toppings and tortillas.

Pinwheel Pepper Spread

3 slices Maple honey turkey thin sliced ( I like Boars Head)

3 medium sized Tortillas

Spread
1/4 c Spreadable cream cheese
1 t diced Red bell pepper
1 t Parmesan cheese
Pinch of Sugar 
1/4 t smoked paprika
1/4 t fresh jalapeƱo, diced 
1 peperoncini, diced

Lightly spread cream cheese on the 3 tortillas.
Add ham and roll tightly.
Cover and put in freezer for 15 minutes.
Slice into pinwheels and serve.

Air Fryer Eggplant Fries

EJ original recipe!

These were very tasty!!



2 small Eggplant, peel and cut into 1/4 inch fries

2 beaten eggs

1/2 c Flour

1/2 c panko 
1/2 t Greek seasoning
1/4 t seasoned salt
1/4 t onion powder

Put flour in 1 bowl, beaten eggs in another and seasoned panko in another.
Dip in flour first, then egg and last panko.
Set in plate.

Preheat air fryer to 350.

Spray basket with nonstick spray.
Don't crowd basket, single layer works best.
I cooked in 2 batches.
Toss in 1/2 t olive oil, each batch, before cooking

Spray basket.

Cook 350 degrees for 4 minutes.
Flip and repeat.
Crispy outside and creaming inside!!

Asian Beef Short Ribs

1 tiny can pineapple juice (These come in a 6 pack)
1 Apple, sliced up ( I used Pink Lady) You could use a pear if you prefer!
1/4 c brown sugar
1/8 c soy sauce
1/8 c fresh lemon juice
6 green onions 
1 inch length of ginger
1 t roasted garlic
1 T toasted sesame oil
4 boneless beef ribs ( I bought mine at Costco )

Put solids in mini food processor and pulse until chopped.
Add seasonings and liquids and pulse.
Add beef.
Add to gallon size ziploc bag and marinate overnight.


Preheat oven to 350.
In a greased Dutch oven, brown beef.
I did not use the marinade in the cooking of the beef.
Add 1 c water.
Cover, bake for 2 hours.
I made au jus using Beef base seasoning, leeks, some of the shredded beef, Cabernet Sauvignon and water.
I served with sticky rice and stir fry cabbage.
