Bread Machine Made Dough Oven Baked Onion Fold Overs

 

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 90:3


    [3] You return man to dust

        and say, “Return, O children of man!”



Filling

1/2 c dehydrated onions 

1-1/2 c boiling water

Pour over onions, let sit 30 minutes, drain well

Add to 

1 T olive oil

1/2 t poppy seeds

1/4 t salt 


Bread machine sourdough 

1 c cool water

1/3 c sourdough discard 

1-1/2 t kosher salt

1-1/2 t sugar

1-1/2 T oil

3 c aerated bread flour

1-1/2 t quick yeast 

Add ingredients in this order and use dough setting

After dough setting remove to parchment sheet

Lightly grease hands and rub top and bottom with oil

Cut into 2 equal pieces

Roll into 2 logs 12 inches long, seal seam and tuck edges and rise covered 10 minutes

Cut out 6-8 pieces of each log according to the size roll you want

Mash each one into rectangular shape around 4x5

Add 1 t filling to each one

Fold one side of the rectangle to middle and fold the other side over the top

Smear a little filling on top

Lightly mash 

Place on parchment lined sheet pan

Cover and rise 10 minutes 

Bake preheated 350 degree oven for 15-20 minutes until browned

    [1] Lord, you have been our dwelling place

        in all generations. 

    [2] Before the mountains were brought forth,

        or ever you had formed the earth and the world,

        from everlasting to everlasting you are God.



1 (10 ounce) bag baby spinach leaves

10 oz cheese blend, shredded

4 hard-cooked eggs, peeled and sliced

1 c sliced cooked mushrooms

4 strips crisply cooked bacon, crumbled

½ c toasted slivered almonds

1 T olive oil

1 large shallot, minced

1 t roasted garlic, mashed

⅓ c white wine vinegar

⅓ c Dijon mustard

⅓ c honey

2 strips crisply cooked bacon, crumbled

salt and pepper to taste



Place spinach into a large serving bowl; top with cheese, hard-cooked eggs, mushrooms, 4 crumbled strips of bacon, and almonds.


Heat olive oil in a small skillet over medium heat. Stir in shallots and garlic; cook and stir until shallots are softened, about 2 minutes. Whisk in vinegar, Dijon mustard, honey, and 2 crumbled strips of bacon until heated through; season to taste with salt and pepper.


Pour hot dressing over spinach and toss to coat.

    [1] I will sing of the steadfast love of the LORD, forever;

        with my mouth I will make known your faithfulness to all generations.



Wet ingredients 

1/2 c creamy peanut butter

1/2 c mashed creamy avocado 

1/4 c maple syrup

1 egg

2 T olive oil

1 t vanilla 

Mix well


Dry ingredients 

1-3/4 c quick oats 

1 t cinnamon 

1/2 t salt

3/4 c raisins 

3/4 c nuts, chopped 

1/2 c milk chocolate chips

1/3 c coconut 

Mix 

Add wet to dry and mix well

Use a small cookie scoop sprayed with non stick

Add to sheet pan lined with parchment 

Lightly pack mixture in the scoop

You can put these close because they do not spread

Use fork to mash and slightly flatten cookie

350 preheated oven for 15 minutes 

Cool 15 minutes and enjoy

1-1/2 c dill pickle juice

1-1/2 c buttermilk

2 T Cholula hot sauce

2 T BBQ dry rub

Stir

Add chicken 

Marinate over night in covered bowl


Versatile BBQ rub 

1/2 c brown sugar

1/2 c paprika 

1 T onion granules 

1 T garlic granules 

1 T chili powder 

1/2 T cayenne powder 

1 T salt

1/2 T coarse black pepper 


Preheat oven to 400 degrees

Dry chicken off after overnight marinade

Roll in rub

Line sheet pan with foil

Place rack on foil

Spray with non stick 

Put 1/2 c water in pan

Place chicken pieces on rack 

Bake 45 minutes until a 165 degree internal temp is reached

Remove from oven 

Tent loosely with foil

Rest 10 minutes 

Drizzle with BBQ sauce 

Enjoy

Hawaiian Roll Dough Bread Machine

    [8] The eye of him who sees me will behold me no more;

        while your eyes are on me, I shall be gone.



1 c pineapple juice

1 large egg

1⁄3 c milk

4 T butter

1-2 t coconut extract

1⁄2 t ground ginger

1 t salt

1⁄3 c sugar

1⁄2 c instant potato flakes

3 1⁄2 c flour

2 1⁄4 t quick yeast

Melted butter, for brushing on roll tops


Bring all cold ingredients to room temperature (pineapple juice, egg, milk, butter).

This will take about 30 minutes.

Add the pineapple juice to your bread machine.

Beat the egg and add to your bread machine.

Add the milk to your bread machine.

Divide the butter into small pieces (no larger than 1t ) and add to the bread machine.

Add coconut extract, ground ginger, salt, sugar, potato flakes, and flour to the bread machine, in that order.

Make a small well in the flour, and pour the yeast in the well.

Run your bread machine on the dough cycle to knead the dough.

After the kneading cycle, let the dough rise until doubled in size - about 1 hour. (I let mine rise in the bread machine for 1 hour 15 minutes).

Grease a 13"x9" light colored pan.

Divide the dough into 12-15 rolls and place next to each other in the pan (this will get them soft sides).

Do NOT add more flour! 

It will toughen your rolls. 

I just kept wetting my hands and that work great.

The dough was very fluffy.

Cover with a towel and let rise until doubled in size - about 1 hour - in a warm place. 

I turned on the oven light and set the pan in there.

I took the pan out after forty minutes and turned the oven on to preheat to 350 degrees.

I sat the pan near the vent at back of stove for rest of the time left which was 20 minutes 


Bake rolls in preheated oven for 20-25 minutes or until golden on top.

Immediately upon removing the rolls from the oven, brush the tops with butter.

Let cool in the pan until the rolls are cool enough to handle. 

Then remove from pan.


TIP: If you will not be eating the rolls right away, transfer the rolls to a large enough bowl to hold them. 

Place a lid on top and vent it, taking care that no rolls touch the lid. 

I used a microwave cover and it worked great.

Closing the airflow off while they are warm will make the rolls soggy. 

Leaving them out in open air will make the rolls crusty. 

Keeping them in a vented bowl until they are completely cool is very important for obtaining soft rolls! 

Once the rolls are completely cool, seal the bowl.

Lettuce leaves washed and dried

Sliced sweet onions 

Shredded cheese

Set aside to build Wraps 



Costco pkg of 6-8 Boneless Beef short ribs, lightly season with meat tenderizer and Birria seasoning, sear in olive oil

1 stale beer

1 c water

1/8 c sugar

3 T Molasses 

3 T tomato concentrate 

1 Leeks, sliced

1 Roasted Poblano Pepper, sliced

2 T clover Honey 

10 baby potatoes cut in half

Juice of 1 lime


After searing beef in large Dutch Oven, add veggies and sear 1 minute

Add beer, water and the rest of the ingredients 

Add lime juice

Add potatoes 

Bring to boil, add lid, remove to a preheated 325 degree oven 

Bake for 1-1/2 - 2 hours until meat will slice thin and be tender with a good tender chew 

Make lettuce wraps and serve with potatoes

Light sprinkling of garlic granules 

1/8 c Sauvignon Blanc 

1/8 c heavy cream

1/4 c sour cream

1 can Cream of chicken soup


Sleeve of crushed Ritz crackers for top

Light sprinkling of black pepper on top of crackers

2 large ripe tomatoes, sliced thin

3 Campari tomatoes, sliced thin

1/2 of a small sweet onion, sliced thin 


Dressing

2 T roasted garlic, mashed

1/2 t each dill, basil, parsley, cilantro

1/4 c olive oil

2 T balsamic vinegar

1 T honey

Kosher salt and coarse black pepper to taste


Slice the tomatoes thin 

Salt and pepper tomatoes 

Combine all ingredients to make dressing 

Cover tomatoes with dressing 

Let sit 15 minutes 

Enjoy

Deep Dish Pie Crust, Baked and Cooled


Filling

2 large eggs

2 large egg yolks

1½ c coconut milk 

1½ c half and half or whole milk 

1 c granulated sugar 

5 T cornstarch 

¼ t salt

¼ c butter, cubed

1⅓ c sweetened shredded toasted coconut


Topping

8 oz Cool Whip

Toasted coconut 


Freeze filled Crust for 3 hours

Frost with cool whip

Sprinkle with toasted coconut

8 oz glass bowl or jar with lid

I used canning jar but I think bowl would be easier 


Fill containers in this order of ingredients 


1/4 c Hash browns from fresh section in grocery store 

1 T onions

1 T peppers

1/4 c Cheese of your choice 

1/4 Meat of your choice (must be precooked) ex. Chopped ham, bacon bits, frozen chicken sausages, thawed etc.

1 t Mayo( will not be able to taste it) 

Top with lid and refrigerate 

Make enough for 5 days


To cook

Remove lid

Just add 1 large egg

Stir all the way through 

Place on cozy or paper plate

Cover with microwave lid

Cook 1 minute 

Remove and stir

Cook additional 20-30 seconds

Dump on paper plate 

You can eat on a small burrito 

It makes 2 

Season

6 large radishes, washed cut in half and sliced thin

1 small English cucumber, sliced thin  

1 small sweet onion, sliced thin  

2 small sweet red peppers, sliced thin


I mixed ranch and Italian for the dressing

Salted with seasoning salt, Mrs Dash table and Cajun seasoning 

Original recipe calls for Mayo instead of the one I made
