Cucumber Sauce and Persillade Ground Chicken Meatballs with Bow Tie Pasta

My husband said he could eat the whole thing!!

Must be delicious!



2 c uncooked Bow Tie Pasta cooked 12 minutes in 4 c water, reserve 2 c pasta water. 

Set aside.


2 c sliced and seasoned cherry tomatoes 

Set aside


Meatballs 

1 lb ground Chicken 

1 t Greek seasoning 

1 t beef base 

1 T cucumber sauce 

1 T persillade 

1/4 t each salt and pepper

Stir well and drop by heaping T in hot skillet with 2 t clarified butter.

Brown well. 

Add sauce ingredients.

Cook until slightly thickened and add pasta.

Top with cut and seasoned cherry tomatoes.


Sauce ingredients 

1/2 c half and half 

Salt and pepper to taste

1/4 Trader Joe's Unexpected cheddar  

Pasta water to get desired consistency of sauce.


Greek and Steak Seasoned Beef Sliders with Persillade and Cucumber Sauce

Pinch Greek seasoning 

Pinch Steak seasoning 

8 ground beef Sliders 

Place a pinch of seasoning on each side.

Fry in clarified butter.

Top with Havarti 

Place slider bun on top.

1/2 of a English cucumber, diced

1/4 c diced onion

Salt and pepper

1/2 lime, juiced

1 T Roasted garlic

1/4 c Mayo

1 c full fat Yogurt

Ground Pork Shepherd's Pie

Layer 1

1 lb ground pork

1 can evaporated milk

Cornstarch slurry for thickener 

1 T chopped flat leaf parsley


Prepare the pound of pork by adding

1 t steak seasoning 

1 t beef base seasoning 

1/4 t onion powder

1/4 t garlic granules 

Pinch of salt and pepper

2 t water

Mix these ingredients and mash into ground pork.

Brown pork, add evaporated milk and slurry.

Add chopped parsley.

When gravy is thickened set aside.


Layer 2

3 c chopped Cabbage 

1 chopped onion

1 t chicken base seasoning 

1 T bacon grease

Stir fry veggies in grease, set aside.


Layer 3

2 grated carrots


Layer 4

6 medium Yukon Gold potatoes cooked knife tender

1 t roasted garlic 

Boil in chicken stock and garlic.

Drain

Mash 

Add in

1/4 c sharp Cheddar 

1/4 c Parmesan 

1/4 c Mayo 

1/4 c sour cream


Add to layer 1 to 13x9 sprayed casserole pan, then layer 2, 3, and top with 4.

Bake preheated 375 degree oven for 45-50 minutes until top lightly brown.

Thin slice


Artisan bread 

Fill with meat, cheese and toppings 

Toast in clarified butter


Russian Dressing

1/4 c Honey

1/2 c BBQ sauce or ketchup

1/2 c olive oil

3 T water

2 T fresh lemon juice

1 t Apple Cider vinegar 

1/2 t each salt, black pepper and smoked paprika 

1/2 t celery seeds

1 T Worcestershire sauce

Whisk together.

Refrigerate


Toppings

Havarti cheese

Thin sliced Onions

Thin sliced Cabbage 

German sour kraut

1 t black peppercorns 

1 T smoked paprika

1 T coarse kosher salt

3/4 T granulated garlic

2 t dill weed

3/4 T red pepper flakes

3/4 T onion powder

3/4 T ground coriander 

3/4 T mustard seed


Using a pestle and mortar, grind seeds.

Add all ingredients together and store in a shaker top bottle.

Dressing 

1/8 c Olive Garden dressing

1/8 c Mayo

Drizzle of olive oil

1 t juice of Pepperoncini jar

1 t sugar

1 t seasoned salt

1/2 t black Pepper 

Pinch of red pepper flakes 

1/2 t each oregano, rosemary and thyme

1 t roasted garlic



2 left over fried chicken tenders, heated and sliced


2 c Bow tie Pasta cooked al dente set aside


Salad fixins

Lettuce strips

Cucumbers chunks

Cherry tomatoes, sliced in half

Onions thin slices

Pepperoncini strips

Unexpected Cheddar crumbled

Bolillo Dough Cinnamon Rolls

This dough is awesome!


1 batch of Bolillo dough*

I used half to make cinnamon rolls and half to make bolillos.


I patted dough down to make a rectangle shape. 

Be careful not to get dough too thin.

I rubbed spreadable butter all over leaving a 1/2 inch empty space close to edge.

I mixed 3/4 c sugar and 3 T cinnamon together and sprinkled over butter.

Roll tightly and pat ends in.

Pinch seams.

Cut in half then each half in rolls.

I got 12.

Spray pan heavily with nonstick.

Bake middle rack, preheated 375 degrees for 20 minutes or until golden brown.

Cool 10 minutes before frosting.


Frosting

1/4 c spreadable cream cheese 

1/4 c spreadable butter

1 t vanilla 

1/4 c powdered sugar

Mix well with a fork.

Fried Chicken Torta

2 Bolillos, cut in half, inside soft bread  removed so it can be stuffed 

Clarified butter for skillet toasting of Bolillos

Yeasty Fast Rise Bolillos

        and sought refuge in his own destruction!”

3-3/4c AP flour

2 T yeast (3 packets active dry)

1-1/4 c warm water

1/4 c olive oil

5 T sugar

1 beaten egg

1-1/4 t kosher salt




Add 2 T of yeast to 1.25 cups of warm water. Whisk 5 T of sugar and 1/4 c olive oil.  Let sit for 5-10 minutes.


Add 3.75 cups flour, 1-1/4 t salt, and 1 egg. Mix with a spatula and then place onto a parchment sheet on counter.  Knead with your hands until you have a smooth ball of dough. Add additional flour if it's sticking to your hands.

Using spatula cut into eight equal parts. Roll into balls.  


Flatten into oval shapes. Flip 1/4 of the disk towards you and seal. Now pull that part towards you and seal again. Continue until you have a tube of dough. Give a quick roll while putting pressure on the ends to get the traditional bolillo shape.


Cover and let rise for 10-30 minutes. Using kitchen shears, snip a lengthwise 1/4 inch deep slit on the bolillos just before baking. 

Bake preheated oven for 8-15 minutes at 425F.

Cool.



Instant Pot Sunday Beef Roast with Gravy and Veggies






























Psalm 51:1-2


Create in Me a Clean Heart, O God


To the choirmaster. A Psalm of David, when Nathan the prophet went to him, after he had gone in to Bathsheba.


    [1] Have mercy on me, O God,

        according to your steadfast love;

    according to your abundant mercy

        blot out my transgressions. 

    [2] Wash me thoroughly from my iniquity,

        and cleanse me from my sin!



Based on Amy and Jacky IP recipes!!




3 lb well marbled chuck roast, pull apart into 2 roast, tie and season on both sides with coarse salt and black pepper


Heat IP on sauté until hot, add 2 T olive oil and sear each side for 10 minutes.

Remove to plate.

Add seasoning veggies.

Sauté in Roast drippings.

De-glaze pan with 1 T of gravy ingredients.

Add all of gravy and the roast back in.

Set to pressure and cook 40 minutes.

Do a 15 minute release.

Remove roast and cover with foil.

Add veggie mix to gravy.

Set to pressure, cook 10 minutes.

Remove veggies. 

Using a cornstarch slurry, thicken gravy.

To serve, chunk roast, add veggies and ladle gravy over both.

Serve with crusty bread and a green salad.



Seasoning veggies

1/4 c each Leeks, mushrooms 

1 T roasted garlic

2 T celery


Gravy ingredients 

2 c beef broth ( I made mine from beef base)

1 t each balsamic vinegar, Worcestershire sauce and Soy sauce

1/2 t each rosemary, thyme and bay leaf powder 

Mix well and set aside


Vegetables

2 c Carrot chunks

2 c Potato chunks
