Instant Pot Wood Fired Garlic Rub Black Pepper Cola Pulled Pork

3 lb Pork butt, trimmed of some of the fat and cut into chunks and rubbed

Use half for BBQ and freeze rest for Stew  


BBQ sauce of your choice for serving


Rub ingredients 

2 T Kinder Wood Fired Garlic 

1 T Black pepper


Put rub on pork chunks

Sear in oil in the IP 

Add 2 coke minis

Set to meat setting for 55 minutes, do a quick release after cook time

Reserve 1 c drippings

Pull pork and cover with BBQ sauce, put in foil pan and broil in oven until little crispy bits form on meat

Pour a little juice from pot on meat and toss

Enjoy BBQ sandwiches, Nachos etc!!

Ground Chicken Asian Burger

An ej original recipe!!



1 lb ground chicken 

Small Shallot, diced 

1/4 c 3 cheese blend ( I used Italian)

1/8 c Panko 

1 t Heavy cream

Seasoned salt and black pepper, to taste

1 t Asian BBQ sauce( I like Bachans Japanese) 

Mix and form into 6 patties

Put in freezer 15 min

Add 1 t oil to skillet, heat and fry on one side 6 min and flip

Cook to a temp of 165

Serve on brioche bun with more Asian BBQ sauce, onion, thin cucumber slices and carrots

Philly Cheese Steak Poutine

1 c Left over steak, sliced into thin small chunks


3 servings Shoestring Fries, air fried

Set aside

Gravy 

1 t olive Oil

1/2 of a Onion, sliced 

1 t Roasted garlic 

Pinch red pepper flakes 

Pinch thyme, rosemary, oregano 

1/2 t of wood fired garlic seasoning 

Pinch of salt and pepper

1 t Worcestershire sauce

1-1/2 c beef broth

Stir fry onions, garlic and seasonings in oil.

Add steak. 

Add broth and Worcestershire sauce.

Reduce and thicken with cornstarch slurry.

Add cheese, melt in microwave.

Garnish with green onions.

Cheddar 

Smoked Gouda

Extreme cheddar

1 qt Chicken Bone broth 

2 c cooked thin noodles ( I used Angel Hair) reserve 2 c pasta water to add to soup


Rotisserie Chicken breast shredded 

1 t Olive oil

1 t Sesame oil

3 T roasted Garlic, mashed

1 T pickled Ginger, mashed

Pinch Red pepper flakes 

1/2 t each powdered ginger and garlic granules 

1 T brown sugar

1 T Mirin 

2 T light Soy 

Salt and pepper 


Add oils to Dutch oven, heat, add spices, carrots and chicken.

Sauté 5 minutes.

Add rest of ingredients except arugula and noodles.

Simmer 15 minutes, add noodles and arugula.



Veggies

2  Carrots, cut into thick planks

2 large Green onions cut on bias 

1 c Cabbage, sliced thin 

Large hand full of baby Arugula

Oven Roasted Salmon Sandwich

Roasted salmon from Costco 

Toasted Croissants

Sliced Onion

Sliced Tomato 

Baby Arugula 

Honey Lemon Caper Aioli


Aioli 

1/4 c Mayo

1 t Honey  

1/2 of a Lemon, juiced

1 t Capers, mashed

Salt and pepper to taste

Dark Chocolate Fudge Brownie Cake Covered With Ganache


































Matthew 24:5


[5] For many will come in my name, saying, ‘I am the Christ,’ and they will lead many astray.



2 13x9 foil pans

Spray with non stick

Set aside


Ganache 

1 c heavy cream

1 c dark chocolate semi sweet chips

Heat cream on low until warm.

Do not boil or simmer.

Remove from heat, stir in chips, cover for 10 minutes.

Stir with wood spoon to insure melting.

Keep stirring, pretty fast, until glossy.

Cool in fridge for 1 hour.


1 Betty Crocker Triple Chocolate Fudge cake mix

1 Ghirardelli Ultimate Chocolate Brownie mix

Make in separate bowls according to box directions.


Put half of the cake and half of the brownies in opposite ends of the 13x9.

Swirl together to incorporate.

Bake preheated 350 degree oven, bottom rack for 25 - 30 minutes until toothpick comes out clean.

If sides of pan start burning move to center rack to finish baking.


Set aside and cool.

Using a fork, poke holes in cakes.

Cover with ganache.

Beef Tenderloin Tails with Shallot and Red Wine Gravy

























 

 

 

Psalm 52:6-7

    but trusted in the abundance of his riches

        and sought refuge in his own destruction!”



Gravy prep

2 c beef broth

1 c Red wine ( I used Cotes-du-Rhône found at Costco)

Simmer and reduce to half, set aside.

Whisk in 2 T tomato paste concentrate.

Add 1/2 c diced cooked mushrooms.


Leeks prep

1-1/2 c sliced Leeks

1 T olive oil

Salt and pepper

Sauté in oven on 350 degrees for 15 minutes, stirring a few times.

Set aside.


Beef prep

Drizzle olive oil over beef

Lightly Salt and pepper beef adding a pinch of garlic granules, thyme and rosemary 

Using a cast iron skillet, sear all sides of beef tails in 1 T bacon grease, cook 15 minutes in a 375 degree oven until temp of 135 degrees. 

Remove to a plate. 

Tent with foil.

Reserve drippings.

To the drippings, whisk in 2 T flour.

Add gravy prep mixture and 1 t sugar.

Simmer until thickened.

Taste and adjust seasonings if necessary.

Slice beef into medallions, add to gravy.  

Serve with garlic mashed potatoes and salad.

Stuffed Strawberry French Toast

1/4 inch or 1/2 inch sliced Brioche bread slices( your choice) I got mine from Sam's


I made 3 stuffed French toast (6 slices)


Strawberries in light syrup

3 c chopped strawberries 

1 c sugar 

Stir until syrup forms.

Keep in fridge.


Stuffing

1/4 c Spreadable cream cheese

1 T Agave sweetener

3 T diced Strawberries in syrup, diced 


2 beaten eggs 

2 T Heavy cream

Coating for French toast 


Fry in butter

Serve with berries on top, maple syrup and whipped topping 

Add ham for extra yumminess!

Fresh Strawberry Cobbler



































Romans 4:18


[18] In hope he believed against hope, that he should become the father of many nations, as he had been told, “So shall your offspring be.”



3 c fresh chopped strawberries 

1 c sugar 

Stir until berries give off juice and make a syrup.

Set aside.


Dry ingredients 

1 c AP flour( aerate flour for accurate measure)

2 t baking powder 

1/2 t salt

1/2 c white sugar

Whisk together.


1 c full fat milk

1 stick of melted butter, cooled

1 t vanilla extract

Gently stir in liquid ingredients into dry ingredients, just till combined.

Using a slotted spoon, drain berries and gently distribute berries over top of cobbler.

Do not stir. 

Serve with vanilla ice cream!


Bake preheated 375 degree oven for 35-40 minutes 


Greased glass pan 11x 8-1/2

Peruvian Pan Roasted Chicken Marinade



































Matthew 16:26


[26] For what will it profit a man if he gains the whole world and forfeits his soul? Or what shall a man give in return for his soul?



Whole Chicken or just parts

( I used legs)



2 T Fresh Rosemary chopped or 2 t dried

2 T Fresh Oregano chopped or 2 t dried

3 T roasted Garlic

1/4 t toasted cumin

1/8 c white vinegar

1/4 c Soy sauce

1 T Hoisin 

1 t honey

1 lime juiced

1/2 of a light beer

Blend in blender


24 hr Marinade in bag in fridge


Bake preheated 400 degree oven, un-covered.

Cook 25 minutes and flip.

Cook on rack in a 13x9 foil pan in oven with marinade drizzled over and olive oil drizzled over.

Internal temp should reach at least 165 degrees.

Let Chicken rest for 10 minutes.

 

Make a cilantro  sauce for serving.

Peruvian Green Sauce




























 

 

Psalm 49:7-9

Stir fry 1/4 c chopped onion and 3 T roasted mashed garlic in 1 t olive oil.

Cool.


To a blender add:

Cooled onion/garlic mix 

1/2 c Mayo 

2 T vinegar

4 t yellow mustard

3/4 t salt

1/2 t black pepper

1 T Honey

1 seeded and chopped Jalapeño 

1 bunch cleaned chopped cilantro 


Pulse to incorporate.

Drizzle over chicken etc!

Store in fridge.
