Mediterranean Flounder Filets

 


 

 

 



 

Psalm 25:16-18


    [16] Turn to me and be gracious to me,

        for I am lonely and afflicted. 

    [17] The troubles of my heart are enlarged;

        bring me out of my distresses. 

    [18] Consider my affliction and my trouble,

        and forgive all my sins.



5-6 thin pieces of Flounder Filets 

1 T c parsley for finishing 


Sauce for pre-cook dip then lightly add crust

5 T fresh lemon juice

5 T extra virgin olive oil

2 T melted butter

Mix

Add garlic later

3 T roasted garlic, mashed 


Crust

1/3 c all-purpose flour

1/4 panko

1 t cilantro 

3/4 t sweet Spanish paprika

3/4 t toasted ground cumin

3/4 t salt

1/2 t black pepper


Preheat oven to 400 degrees.

Mix together the lemon juice, olive oil, and melted butter in a shallow bowl 

(do not add the garlic yet). 

Set aside.

In another shallow bowl, mix the all-purpose flour, panko, spices, salt and pepper. 

Set next to the lemon sauce.

Pat the fish dry. 

Dip the fish in the lemon sauce then sprinkle with the flour mixture. 

Shake off excess flour/panko.

Reserve the lemon sauce for later.


Place Filets on sheet pan lined with parchment.

To the remaining lemon sauce, add the minced garlic and mix. 

Drizzle all over the fish fillets.

Bake in the heated oven until the fish flakes easily with a fork (7 minutes should do it. 

If you want a deeper color broil quickly. 

Remove from the heat and sprinkle chopped parsley.

Thawed flounder Filets 

Seasoned salt and Pepper 

Cajun seasoning 

Smoked paprika 

Potato starch for dredging, season with salt and pepper 

Lemon for serving 

Clarified butter for frying 


Season fish with your desired amount of each seasoning 

Melt enough butter to fry Filets 

Add potato starch to bag 

Add Filets and shake to coat

Add to hot butter

Fry until crispy about 4 minutes 

Serve with lemon

Jacked Up Spicy Shrimp Ramen for Two

2-1/2 c water

Seasoning packet from Ramen

1 t Soy sauce

1 t olive oil

1 T brown sugar

1/2 t garlic chili sauce

1 t pickled Ginger, diced

1/4 c Thin sliced Cabbage 

1/4 c Thin shreds of Carrots

1/4 c Thin sliced Onions

1/4 c Thin sliced Sweet red peppers

Place into pot, bring to boil

Cook 10 minutes 

Add 1 pkg chicken flavor Ramen noodles

Cook 5 minutes, stirring to separate noodles

Cut off heat

Add rest of ingredients 

8 Jumbo raw frozen Argentina Red shrimp tail off 

Let sit 3 minutes 

To serve add a Squeeze of lime and Cilantro to garnish

3 c left over shrimp boil (potatoes, onions, spicy Cajun sausage and corn shaved off cob

1/2 c of the juice from cooking of the boil

1-1/2 c milk

1/2 c half and half

1/2 c grated Hoop cheese

1/2 c grated Gruyere cheese 


To air fry shrimp 

1/4 stick of melted butter

Drizzle of oil

2 T Sauvignon Blanc 

2 T Old Bay

8-10 jumbo frozen cleaned and tail removed shrimp

Wrap in foil

Air fry 450 degrees for 13 minutes 

Shrimp is done when it's looks like a c shape 

Add to soup right after it's cook and off heat just before serving

Frozen Tilapia Filets cut into strips, thawed (Aldi) season

Cornmeal dust to roll fish in 

Lemon slices

Seasoning of your choice (I used Cajun, salt and pepper) 

Avocado creama

Pico de gallo

Tortilla chips

 

Dust 

Grind cornmeal in grinder to make a dust

 

Avocado creama

Mayo

Sour cream

Salt, pepper, and toasted cumin

Mash together


Pico de gallo

Diced Ripe tomatoes 

Diced Onion

Diced Jalapeño 

Salt, pepper and toasted cumin

Mix

Pan Seared Italian Seasoned Salmon with Lemon Caper Sauce

3 salmon Filets 

1 T Italian seasoning 

Black pepper and salt to taste


Sauce

1 T olive oil

2 T butter

1 T roasted garlic

2 chopped green onion

2 T capers, rinsed

1 t lemon zest

2 t lemon juice

Finish with a little cilantro 


Dry salmon off with paper towels 

Grease salmon with a tiny bit of olive oil 

Season salmon

Melt butter in skillet 

Add seasoned side down in hot butter

Cook 4-6 minutes and flip

Cook additional 2-3 minutes 

Remove to plate

Add garlic, onions, capers, zest to butte

Sauté 3 minutes 

Add juice

Remove from heat

Spoon over salmon

Garnish with cilantro

BBQ Rub Seasoned and Seared Shrimp Cocktail

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 13:5


    [5] But I have trusted in your steadfast love;

        my heart shall rejoice in your salvation.



12 jumbo raw cleaned shrimp, thaw in cold water and remove tail, dry with paper towel 


BBQ seasoning rub (this will do shrimp and 3 salmon pieces)

2 T brown sugar 

2 t course black pepper 

1 t kosher coarse salt

1/2 t dried basil

1/2 t garlic granules 

1 t smoked paprika 

1-2 T lime zest

Toss shrimp in rub and set aside


Cocktail sauce

2 c chopped and seeded fresh ripe tomato 

1/4 c ketchup 

1 t Cholula 

2 T chopped fresh cilantro 

2 t sweet chili Thai sauce

3 diced green onions

1 T fresh lime juice

1 t kosher salt 

1/4 t horseradish 

1 t olive oil

1/2 t black pepper 

Mix and set aside to meld flavors 


Fry seasoned shrimp in clarified butter/olive oil 

Shrimp is done when it has a slight curl but not a tight curl 


To assemble 

Place cocktail sauce in a footed desert cup

Add your desired amount of shrimp to the rim

Serve with lime or lemon wedges


Serving suggestions 

BBQ salmon

Sticky rice

Steamed broccoli

Steak Seasoning Pan Fried Whiskey Shrimp

Frozen Jumbo Shrimp, raw, peeled, de-veined ( I used 6 because I made steaks)


1 T or more Clarified Butter

2 T Whiskey

Steak seasoning on both sides of shrimp after cooking for 1 minute 


Frozen shrimp instructions 

On medium, heat butter to melt

Cut heat off and add whiskey

Wait a few seconds

Stand back and turn eye back on medium 

It will sometimes catch fire in skillet but burns out quickly 

Add frozen shrimp, cook 1 minute, flip and sprinkle steak seasoning, cook 2 minutes 

Flip, season, cook 2 minutes 

Shrimp is done when it has a slight pink shade and shrimp curls

May cook an additional 1 minute each side

Do not cook over 4 minutes

Crab Claw Cakes

8 oz crab claw meat ( Target $8.99) 

Pick and clean

Put in ice water for 10 minutes 

Mash in a sieve to remove water

Squeeze lemon over meat

Mash again 

Add to a medium size bowl

Set aside


Mix together 

1 beaten egg

2 chopped green onions (rinsed and cleaned)

2 T Mayo

1 t Dijon 

1 t Soy sauce

1/2 t hot sauce

Squeeze of lemon 

1/3 c panko

1/2 t salt and pepper

Add crab meat

Stir to combine 


Heat enough peanut oil to cover bottom of cast iron skillet

Add cakes to hot oil

Fry 3 minutes each side until crispy

Fry additional time if needed

Drain on paper towels 


Easy Remoulade Sauce 

1/3 c Sweet chili Thai sauce 

1/2 c Mayo 

Squeeze of lemon juice

Red pepper flakes(optional)

Whisk 


Makes 6 cakes

Squeeze lemon and add sauce

Skillet Butter BBQ Salmon

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

1 Peter 4:19


[19] Therefore let those who suffer according to God’s will entrust their souls to a faithful Creator while doing good.



BBQ Rub 

2 T brown sugar

1/4 t Cinnamon 

1/4 t paprika 

1/2 t black pepper 

2 t kosher salt 

1/4 t cumin

1/2 t dry mustard


2 T clarified butter 

1 t olive oil

3 pieces of salmon with skin on

Heat skillet

Add oil

Place seasoned salmon skin side up

Cook 4 minutes until crispy

Flip cook another 2 minutes 

Temp should be 140 -145

Remove skin

Serve with sticky buttered rice and boiled cabbage
