Mexican Lime Dill Pickle Juice Marinade






Cast your burden on the LORD, and he will sustain you; he will never permit the righteous to be moved.  - Psalm 55:22








Marinade
1/4 c dill pickle juice
1/2 fresh lime, juiced
1 t sugar
1 t smoked paprika
1 t cumin
1 t ancho chili powder
3 T olive oil
1 t Jim Beam


This chicken was delicious!!!
I was unsure of the flavors when I started developing this recipe, but they definitely work well together.

Chicken tenderloins, cut in half and chopped
Onion, sliced
Bell pepper, sliced
Fresh cilantro, chopped

Make marinade in a gallon size plastic bag and place chicken in the bag. 
Marinate for 30 minutes.
Heat a skillet with a small amount of oil.
Drain marinade from the bag and dump chicken in the hot oil.
Add peppers, cilantro and onions
Sauté until chicken is done.
Sprinkle with cheese.
Serve with salsa and chips.

Drunken Shrimp Andouille Pasta

This was delicious!! 
It took me awhile to get this written up. 
When I'm developing a recipe, I get so excited.
I kept changing things but I'm delighted with the way it turned out!!


1 T clarified butter
1 shallot, diced
1 t roasted garlic, mashed
1 T fresh ginger root, minced
12 large shrimp, cleaned and tail off
1 c Asparagus, chopped
1⁄8 c Limoncello
Splash Jim Beam 
1 T honey
1 t molasses 
1⁄4 c heavy cream
1/2 c Andouille sausage, diced 
Smoked salt
Cracked black pepper
Fresh lemon thyme

Fresh angel hair pasta, cooked and set aside.


In a large skillet,  over medium-high heat, add shallots, butter and andouille cook until soft.
Add the garlic, asparagus and ginger, salt and pepper, then saute for 1 minute.
Add the shrimp, limoncello and whiskey to the pan and cook until the shrimp are pink.
Add the honey, molasses and cream to the pan and cook until thickened.
Sprinkle fresh lemon thyme over the top.
Serve immediately over pasta.

Two Squash Stir Fry

2 zucchini 
2 yellow squash
1 c Baby Bella's
1 onion
1 T Roasted garlic, mashed
1 t Greek seasoning
1/8 c Clarified butter, Trader Joe's 
2 T fresh cilantro 
Pinch of Red Pepper flakes
Salt and pepper to taste

Place clarified butter in skillet, heat, add seasonings and cilantro.
Add veggies, onions and mushrooms, sauté until slightly soft.
Add salt and pepper. 
You could add rotisserie chicken to make a meal.

Instant Pot Mexican Pulled Beef

1 lb. chunks of beef cut from a chuck roast, I buy a two pack from Costco and cut up and freeze
2 T Ghee, clarified butter
1/2 t Ancho chili powder
1/2 t Cumin 
1/2 t paprika 
Few turns cracked black pepper
1 Leek, chopped
1/4 c Cilantro, chopped
1 bell pepper, chopped
1 Celery stalk
1/4 c Whiskey
2 T Tomato paste 
1 T liquid smoke, mesquite flavor
1 Roasted jalapeño, seeded and chopped 
1 heaping teaspoon of chicken base seasoning
1/4 c mango, chopped
1/4 c water


Add ghee to instant pot.
Heat the instant pot on the sauté setting.
Put the beef in a bowl.
On a plate squirt the tomato paste, add all the seasonings, mix and then add to the meat and toss, making sure the meat is covered.
Set aside.
When the pot is heated, sauté meat, then add veggies, cilantro, mango, whiskey, liquid smoke and water. 
Sauté for 5 minutes.
Cut off pot and change setting to meat/stew, pressure to on setting and set time to 45 minutes. 
The aroma of this cooking was incredible and the taste was so good.
I served mine with tostada chips and fresh mango salsa but it would be good served on crusty bread!


Fresh Mango Salsa

1 mango, sliced
1 onion, quartered 
1/2 t salt
1/4 c Cilantro 
1/2 of a Roasted jalapeño, seeded and chopped
1 t Sugar
1/2 t Smoked paprika
1/2 t Cumin
1/4 t Garlic
1/2 t Ancho chili powder
1 - 28 oz. can of whole peeled tomatoes, I love the 3 pack from Costco, Nina brand
Smoked salt and cracked black pepper to taste

Add the onions, jalapeño, and mango into a food processor, pulse until desired size.
I did 3 - 4 pulses. Then add the seasonings and the tomatoes along with the juices. Pulse another time 3-4 pulses. This makes 2 1/2 pints of fresh salsa. Yum!!!

This recipe was generously given years ago by Whole Foods!
I use rotisserie chicken instead of baking chicken.

Dressing 
1 cup mayonnaise 
4 teaspoons apple cider vinegar 
5 teaspoons honey 
2 teaspoons poppy seeds 
Salt and freshly ground pepper to taste 

Salad 
2 chicken rotisserie breast, chopped
3/4 cup pecan pieces, toasted 
2 cups red seedless grapes, cut in half 
3 stalks celery, thinly sliced

In a bowl, combine mayonnaise, vinegar, honey, poppy seeds, salt and pepper. Refrigerate until ready to dress the salad. This can be prepared up to 2 days ahead. 

Dice chicken breast into bite-size chunks and transfer to a large bowl. Stir in pecans, grapes, celery and dressing.

Serve on crackers or toasted croissants.

Mojo Cuban Style Pork Tenderloin

Cuban Mojo Marinade:
1/4 c Orange juice
1/2 of a Lime juiced
1/8 c Honey
2 T Greek Oregano
1 t Dill
1 Onion, chopped
1/4 c Olive oil


Pork tenderloin
Cracked black pepper
Alderwood Smoked salt


Cut pork tenderloin in half, pound with a mallet.
Place marinade in a ziplock and add loin.
In the fridge, marinate loins for 2 hrs flipping every 30 minutes.
Grill or bake until internal temp is 150 degrees. 
Let rest, covered with foil for 20 minutes.
Carve on the diagonal. 
Yum!!
