Air Fryer Greek Pork Tenderloin and Potatoes






























Ezekiel 18:26-27


[26] When a righteous person turns away from his righteousness and does injustice, he shall die for it; for the injustice that he has done he shall die. [27] Again, when a wicked person turns away from the wickedness he has committed and does what is just and right, he shall save his life.



Ingredients


2 pork tenderloins trim extra fat and silver skin

1/2 c olive oil

2 t lemon pepper

1 lemon, juiced

1 t dried oregano

1 t Greek seasoning 

2 t roasted garlic

salt and pepper to taste


2 t mayonnaise

1/8 c Sauvignon Blanc 

1 & 1/2 pounds mini potatoes, microwaved, cooled and split in half


In a gallon ziplock mix the olive oil, lemon pepper, lemon juice, Greek seasoning, oregano, and garlic. Add the tenderloins and coat. Place in the fridge for 6 or more hours. Turn occasionally.

1 hour before dinner, take the pork out of the fridge.

Preheat the Air Fryer to 400 F

Microwave the potatoes, 2 min each side.

Cool potatoes.

Meanwhile, heat a large fry pan on the and sear tenderloins.

Reserve drippings in fry pan.

Add the browned tenderloins back to the marinade and air fry, uncovered, until desired doneness. The internal temperature is 145-150 degrees.

Should only take 7 minutes each side.

While the pork is air frying, slice the potatoes in half and toss in Mayo wine mixture.

Add to the same pan as drippings.

Brown the cut side on high temperature. Set aside.

Remove the pork to cutting board and cover with foil to rest.

While pork rests, add the potatoes to the pan with the marinade drippings, salt and pepper, to taste, and add mayonnaise wine mixture. Coat thoroughly.

Add the fry pan back to air fryer and let the potatoes continue cooking while the pork has rested about 10 minutes.

Slice the pork after rest.

Serve with Molasses mixed greens

Cucumber Sauce and Persillade Ground Chicken Meatballs with Bow Tie Pasta

My husband said he could eat the whole thing!!

Must be delicious!



2 c uncooked Bow Tie Pasta cooked 12 minutes in 4 c water, reserve 2 c pasta water. 

Set aside.


2 c sliced and seasoned cherry tomatoes 

Set aside


Meatballs 

1 lb ground Chicken 

1 t Greek seasoning 

1 t beef base 

1 T cucumber sauce 

1 T persillade 

1/4 t each salt and pepper

Stir well and drop by heaping T in hot skillet with 2 t clarified butter.

Brown well. 

Add sauce ingredients.

Cook until slightly thickened and add pasta.

Top with cut and seasoned cherry tomatoes.


Sauce ingredients 

1/2 c half and half 

Salt and pepper to taste

1/4 Trader Joe's Unexpected cheddar  

Pasta water to get desired consistency of sauce.


Greek and Steak Seasoned Beef Sliders with Persillade and Cucumber Sauce

Pinch Greek seasoning 

Pinch Steak seasoning 

8 ground beef Sliders 

Place a pinch of seasoning on each side.

Fry in clarified butter.

Top with Havarti 

Place slider bun on top.

Grilled onion slices 

Tomato slices

Cucumber sauce *

Persillade *

Fried Chicken Greek Bow Tie Pasta Salad

Dressing 

1/8 c Olive Garden dressing

1/8 c Mayo

Drizzle of olive oil

1 t juice of Pepperoncini jar

1 t sugar

1 t seasoned salt

1/2 t black Pepper 

Pinch of red pepper flakes 

1/2 t each oregano, rosemary and thyme

1 t roasted garlic



2 left over fried chicken tenders, heated and sliced


2 c Bow tie Pasta cooked al dente set aside


Salad fixins

Lettuce strips

Cucumbers chunks

Cherry tomatoes, sliced in half

Onions thin slices

Pepperoncini strips

Unexpected Cheddar crumbled

Greek Spicy Ground Chicken Sliders

































Isaiah 43:11


    [11] I, I am the LORD,

        and besides me there is no savior.



An ej original recipe!



1 lb ground chicken 

1/2 of a Onion, diced

1/2 of a Jalapeño, diced

1 t roasted Garlic 

Squeeze of lime or lemon 

1/8 c crumbled Feta

1/2 t dried Oregano

1/2 t dried Thyme

1/2 t dried Rosemary 

1/4 t cinnamon 

Pinch of sugar

2 T Buttermilk 


Make into Patties and set in freezer 20 minutes.

Sprinkle lightly with paprika.

Oil fry pan with a little bacon grease.

Fry until 165 degrees.

Serve on toasted brioche buns!

Thin Sliced Tomato

Lettuce

Thin sliced sweet Onion

Peperoncini slices 

Tzatziki Sauce

Tzatziki Sauce Beef and Chicken Salad

1/2 of a English cucumber, diced

1/4 c diced onion

Salt and pepper

1/2 lime, juiced

1/4 c Mayo

1 c full fat Yogurt

Make at least 1 hr ahead to let flavors bloom!!



Baby Bibb lettuce salad

Tomatoes chopped and seasoned 

Sweet peppers sliced thin



Make the salad. 

Top salad with warmed meats and onions.

Use cucumber sauce as dressing.

Salad 

1/2 of the box of Rotini pasta cooked al dente, rinse, drain and set aside

1 English Cucumber, chopped

10 Cherry Tomatoes, sliced in half

1 small Carrots, slice paper thin

1 small Red Onion, sliced paper thin

10 Castelvetrano Olives, sliced in half 

1/2 c Unexpected Cheddar, crumbled, from Trader Joe's 



Dressing

1/4 c Olive Garden Italian dressing

1 t white wine vinegar 

1/2 of a lemon juiced

1 T Greek seasoning 

1 t sugar

1 t Greek yogurt 

Salt and black pepper to taste

Whisk together and set aside.

Prepare and set aside.


Pour dressing over pasta and veggies.

Add crumbled cheese.

Before serving, drizzle additional Olive Garden and toss.

Greek Instant Pot Chicken and Potatoes

2 Boneless skinless chicken breast cut into strips

2 Yukon Gold potatoes cut into large quarters, tossed in oil and seasoned with seasoned salt, paprika and pepper.

1/2 c low sodium chicken stock


Greek Chicken marinade 


1/4 c plain Greek Yogurt 

2 T Greek seasoning 

A few drizzles of olive oil

1/2 of a lemon juiced

1 t roasted and mashed Garlic

1/2 t Dill 

A dash of Salt and pepper 

Marinate at least 1 hour in a ziplock bag.

Drain.

Dry with paper towel.


Heat IP on sauté to hot.

Add 1 T olive oil.

Sauté chicken until slightly browned.

Remove, hit cancel.

Set to Meat, set time to 10 minutes with pressure.

Add 1/4 c low sodium chicken stock to bottom of pot.

Place rack in pot on top of cubed and seasoned potatoes.

Place chicken back in on rack.

After cook time do a natural release for 15 minutes.

Chicken must be 165 degrees.

Sear chicken and potatoes under broiler on foil sprayed with non stick.

1 head Romaine Lettuce, washed and chopped 

1 English Cucumber, chopped

Cherry Tomatoes, sliced in half  

1 small Carrots, slice thin

1 small sweet Onion, sliced thin

8 Castelvetrano Olives, sliced in half 

1/4 Unexpected Cheddar, Trader Joe's 



Dressing

1/4 c Olive Garden Italian dressing

1 t white wine vinegar 

1/2 of a lemon juiced

1 T Greek seasoning 

1 t sugar

1 t Greek yogurt 

Salt and black pepper to taste

Whisk together and set aside.
