Salt Roasted Cajun Peanuts

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 22:27-28

After a few different combo of seasonings, this is the winner!!

Slightly spicy and salty, drink with a coke mini or a root beer mini!!


2 c rinsed in water, drained, raw red skin on peanuts

4 c coarse kosher salt

4 T Slap Your Mamma Cajun seasoning 

4 T Old Bay seasoning 


Heat salt on # 5 setting on gas cook top in an iron clad large Dutch oven

Add Cajun seasonings 

Stir well

Add rinsed peanuts

Stir continuously for 11 minutes 

They will burn so keep um moving

At the 5 minute mark, the skins should be a deeper red color

Using a large skimmer, with holes, shake peanuts gently to separate from salt

Pour onto a large piece of parchment to cool

Store in a large glass jar

2 qts shelled raw peanuts( I buy mine on Amazon) you can salt roast or boil

1-2 T kosher salt, according to taste

1-2 T Cajun seasoning, according to taste

1 seeded and cut in half JalapeƱo 

Water just to cover


Setting - Pressure cook 

Time - 50 minutes 

15 minutes rest before taking pressure off

Dry Pan Roasted Salted Peanuts


































1 Corinthians 10:26


[26] For “the earth is the Lord’s, and the fullness thereof.”



This worked great!


2 c raw shelled peanuts with skin on

4 c kosher coarse salt 


Before roasting rinse peanuts with water and drain.

Set aside.

Place salt in cast iron Dutch oven and heat on #4 setting on gas top burner.

Must stir constantly with a long wooden spoon.

When salt gets warm to touch, add peanuts. (just lightly touch cause it's scalding hot) 

Stir constantly for 11 minutes.

Remove pan from heat.

Using a large spider gently shake to remove salt.

Place parchment on sheet pan and place the peanuts there to cool.

Reserve salt to do next batch of peanuts.


Did whole pecan too and it took 7 minutes!

Spicy Honey Roasted Cashews





























16 For by him all things were created, in heaven and on earth, visible and invisible, whether thrones or dominions or rulers or authorities-all things were created through him and for him.

2 c raw cashews
3 T Honey
Pinch of sea salt
Pinch of Cayenne pepper
1/2 t olive oil 

Preheat oven to 250 degrees.
In a large bowl, add Honey, salt, pepper and oil.
Place parchment in a large jelly roll pan.
Bake nuts for 7 minutes, take out and place warm cashews in the bowl with the honey mixture.
Mix well and place on pan keeping nuts separate.
Bake 250 degrees for 1 1/2 hours.
Every 30 minutes, flip with spatula.
Cool until the nuts become crisp.
These are delicious!!

Spicy Honey Roasted Pecans































Serve the LORD with fear, and rejoice with trembling.  - Psalm 2:11



3 c pecans
1/8 t cayenne pepper
3 T honey
Salt, a pinch sprinkled over nuts


Cook pecans, single layer, in preheated 250 degree oven for 7 minutes on parchment.
Remove and place in a bowl. Add honey and cayenne.
Stir well then sprinkle with salt.
Put back on parchment and bake another 
1 1/2 - 2 hours. 
Cool and put in air tight container.

Mesquite-Smoked Salt-Spiced Pecans

Pam cooking spray
Mesquite BBQ seasoning
Alderwood  smoked salt
Granulated Garlic 

Preheat toaster oven to 350.
*Spray and season nuts.
Place nuts in oven and cut oven off.
Leave nuts for 7-10 minutes. 

* Season according to your taste.

Cheese Ball

                                                                                                                                   

  • 2 packs of cream cheese (8 oz. each)
  • 8 oz. cheddar cheese (shredded)
  • 1 tsp. fresh lemon juice (or from the plastic lemon squirt ball)
  • 2 tsp. Worcestershire sauce
  • dash cayenne pepper (about 1/4 and then to taste)
  • 1/8 tsp. salt (seasoned salt is fine here too)
  • 1 cup pecans (chopped fine)



  1. Let the cream cheese sit out for an hour or so. It's much easier to mix when warm.
  2. Put the cream cheese and shredded cheddar cheese in a bowl and mix well. Add the seasonings. Mix well.
  3. Put the mixture in the refrigerator for an hour or so. Then, you can form the cheese into a ball. You can do it before, but it's hard to make a ball out of warm cheese.
  4. This recipe easily makes two cheese balls. Either roll the cheese ball around in the finely chopped pecans or gently pat the pecans into the cheese. I generally use a combination of rolling and patting.
  5. That's the basic southern cheese ball recipe.
  6. You can use different cheese such as white cheddar. You can also use different nuts for rolling the cheese ball. You also can add dried fruit to the cheese ball or dried or fresh herbs.

Honey Roasted Nuts

1/2 cup honey
1/4 cup raw sugar
1/2 teaspoon sea salt
1/4 teaspoon cayenne pepper
1 cinnamon stick
1 cup unbroken nuts


Directions:
1 Combine honey, sugar, salt, cayenne and cinnamon in a small pot over medium heat,.
2 Stir once then cook 3 minutes till sugar dissolved.
3 Add walnuts, stir to coat.
4 Simmer 5 - 7 minutes or until syrup is lightly browned.
5 Drain through a coarse sieve, discard cinnamon stick.
6 Place walnuts on a wire rack over a rectangular slice pan.
7 Cook in moderate oven 180 for about 8 minutes or until nuts have darkened slightly.
8 Remove from oven, cool on wire rack.
9 Nuts will crisp as they cool.

Crock Pot Cajun Boiled Green Peanuts

                                                                                                 



2 lbs green peanuts(do not shell)
1/2 cup salt
1/4 c Cajun seasoning
2 jalapeno peppers
2 chipotle pepper in adobo

Use a large crock pot, put peanuts in first. Add water to cover slightly. Add salt and cajun spices, stir. Add the sliced ( lengthwise) peppers to the top. I put mine on to cook at bedtime and eat them for
breakfast!!! Yummy!!

Best Ever Cheese Ring

1 lb sharp Cheddar Cheese(grated)                   
1 c chopped pecans
3/4 c mayo
1 med. onion (grated)
1 clove minced garlic and dash of garlic salt
1/2 t Tabasco
1 c Strawberry preserves

Combine all ingredients in a food processor except preserves. Mix well. Put into ring mold or press into ring shape by hand. Chill. At serving time un-mold and fill center with preserves. Serve with assorted crackers.
