Michoacán Region Mexico Carnitas



























 

 

 

John 10:17-18

Fried in peanut oil and bacon grease! 

Traditional is lard but I don't use that so I subbed!! 

Delicious!!


3-1/2 lb fatty pork roast cut into 3 inch chunks

Salt with 2 T coarse kosher for 1 hour, in fridge.


Add peanut oil and bacon grease in Dutch Oven. 

Just so it will be up the sides of pork chunks 3/4 of the way, you will be flipping to insure even light browning.

Bring temp up to 225 degrees, gently add chunks.

Do not cover.

Fry 20 minutes one side, pick up pieces periodically so they won't stick.

After 40 minute fry time, add all your other ingredients and spice mixture to meat oil mixture.

Don't brown but slightly.


Other ingredients:

1/2 c water with 1/2 c orange juice with heavy pulp

Small can evaporated milk (5 oz)

1 chopped medium onion

1/4 c sliced Leeks 


Spice mix

2 t Mexican oregano 

1 t Toasted cumin

1/4 t Black Pepper 

1 t ground Clove

2 bay leaves

3 T roasted garlic

Reduce temp to 200 degrees.

Cook, uncovered 1 hour 10 minutes.


Cook, uncovered, an additional 10 minutes after adding these ingredients 

1 small coke

1/4 c sugar


Remove pork from oil and in a plate pull pork with 2 forks.

Porky, crispy, tender deliciousness!!

Strain oil to use in other dishes like refried beans.

Lime juice

Pappardelle Cajun Chicken Pasta


































John 6:63

An ej original recipe!

 

 

2 c pulled rotisserie chicken breast

8 oz pappardelle pasta cooked al dent, reserve pasta water and set aside

1-2 t Cajun seasoning 

2 T  butter 

1 T olive oil

1 leek, sliced thin

3 T roasted garlic

4 T chopped sun-dried tomatoes 

1/4 t salt 

1/4 t dried sweet basil 

1/4 t ground black pepper 

1 can evaporated milk

Pasta water

1/4 c grated Parmesan cheese



Place chicken and Cajun seasoning in a bowl and toss to coat. 

In a large skillet over medium heat, sauté chicken, leeks and rest of spices in butter and oil. 

Reduce heat, add sun dried tomatoes and evaporated milk.

Lightly boil to reduce.

Add 1 c pasta water.

Add cooked pappardelle pasta.

Add Parmesan cheese.

Thicken.

Serve with crusty bread and salad.

Leek and Jalapeño Au Jus French Dip Beef Croissant



































1 Peter 3:18


[18] For Christ also suffered once for sins, the righteous for the unrighteous, that he might bring us to God, being put to death in the flesh but made alive in the spirit,



1 pgk crescent rolls (8 rolls)

1 Filet of beef (left over, thin sliced)

Sliced Cheese cut into long strips ( I used Emmental)

Open up crescent.

Place beef and cheese on wide part of crescent.

Place parchment on large jelly roll pan.

Roll, place seam down.

Bake preheated 375 degree oven for 13-15 minutes.

Dip in Au Jus.

Yum Yum!!


Au Jus for dipping

1/2 of a Jalapeño or a whole, diced 

1/8 c sliced leeks

1 T butter

1 T Worcestershire sauce

1/4 t Garlic granules 

1/4 t Onion powder 

2 t  flour

Salt and pepper, to taste

6 oz beef stock

Melt butter in small pot.

Add pepper and Leeks.

Sauté till tender, add spices and flour.

Sauté till flour is cooked and add broth, thicken.

Rotisserie Chicken Breast Stuffed Green Bell Pepper
































1 Peter 2:21-25


[21] For to this you have been called, because Christ also suffered for you, leaving you an example, so that you might follow in his steps. [22] He committed no sin, neither was deceit found in his mouth. [23] When he was reviled, he did not revile in return; when he suffered, he did not threaten, but continued entrusting himself to him who judges justly. [24] He himself bore our sins in his body on the tree, that we might die to sin and live to righteousness. By his wounds you have been healed. [25] For you were straying like sheep, but have now returned to the Shepherd and Overseer of your souls.

6 medium green bell peppers, cut top off, remove seeds, cut in half lengthwise 


3 T salt

3 T sugar

Bring salted and sugared water,  just to cover peppers to boil. 

Cut off and let peppers sit 3 minutes.

Remove to paper towels.


Filling

1 Rotisserie chicken breast shredded 

1 c Leeks, sliced

2 T roasted garlic

1/2 t onion powder

1/2 c Sauvignon Blanc 

1/2 can evaporated milk

3 T spreadable cream cheese

1 T Italian 3 cheese blend 

Salt and pepper to taste


Pan sauce

1/2 c Sauvignon Blanc 

1/2 can evaporated milk

3 T Italian 3 cheese blend

2 T sugar

1 t onion powder

Salt and pepper to taste

Pinch red pepper flakes 

Taste and adjust seasoning if necessary.


Place pan sauce divided between two 13x9 pans.

Fill peppers and place on top of pan sauce.

Cook covered with foil in preheated 400 degree oven 20 minutes.

Remove foil top.

Add stuffed pepper topping.

Return to oven and bake 10 more minutes until slightly browned.


Stuffed Pepper topping

1 c panko

3 T melted butter

1-1/2 c grated mozzarella 

 

Serve with greens and butter beans.


Arugula Rutabaga and Mixed Greens

[19] For this is a gracious thing, when, mindful of God, one endures sorrows while suffering unjustly.

2 c Arugula 

1 bag mixed greens

2 c Spinach 

1 qt. Chicken bone broth

1 medium Onion

3 T Sugar 

2 T roasted Garlic

1/2 t Cajun seasoning

2 T Bacon grease

3 T Pepper sauce

3 T Honey 

Salt and pepper to taste

1 small rutabaga, sliced 


Boil until greens are tender.

Serve with large white Butter beans and cornbread.

Goulash with a Twist

[6] For it stands in Scripture: 


    “Behold, I am laying in Zion a stone,

        a cornerstone chosen and precious,

    and whoever believes in him will not be put to shame.”



An ej original recipe!


1 T olive oil

1/2 of a diced chipotle in Adobo 

1 med onion, chopped

1 T roasted garlic

Sauté the above ingredients in oil.

When they are tender, add chicken, tomato concentrate, Worcestershire sauce.


1 lb ground Chicken 

When chicken is slightly browned add

3 heaping T Tomato sauce concentrate and 1 T Worcestershire sauce


Add the ingredients below to chicken mixture.

1 bay leaf

2 c beef broth

1 can diced tomatoes with Oregano, Basil and garlic

1-1/2 c small elbow macaroni 

Dash of Black Pepper

Simmer, covered for 20 minutes, stirring frequently to prevent sticking.

Remove bay leaf before adding cheeses.


Add cheeses last 10 minutes 

2 T spreadable cream cheese

1 c mozzarella 

1/2 c cheddar 


Swoon!

Puts hamburger helper to shame!

Mexican Pork Stew with Roasted Poblano, Potatoes, and Carrots

































1 Peter [24]

1 lb Stew meat 1/2 inch cut from shoulder, squeeze of fresh lime juice, toss in meat toss, set aside for 15 minutes 

Brown in Dutch oven in 2 T olive oil



1 qt chicken bone broth 


2 T masa, dissolved in warm broth and added the last 15 minutes 


Meat toss for pork

2 T Smoked garlic seasoning

1 t Mexican Oregano 

1/2 t Salt 

1/2 t Toasted cumin

2 T sugar

Mix together


1/2 of juice from fresh lime


Veggies 

1 Fire Roasted Poblano, diced 

1 Fire Roasted onion, chopped 

2 c sliced potato

2 c sliced carrots



Fresh cilantro and lime juice for finishing 

Serve over sticky rice with taco chips on the side

Poblano Leek Sauvignon Blanc Gravy over Chicken and Rice

































1 Peter 1:8-9


[8] Though you have not seen him, you love him. Though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory, [9] obtaining the outcome of your faith, the salvation of your souls.

2 c reserved chicken and broth from baking bag chicken, set aside  *

1 c water

1 t Chicken base

1/4 c Leeks

1 small seeded diced Poblano, usually green but mature to red

2 T roasted Garlic

Sauté in olive oil, add 1/4 t chicken base seasoning

1/4 c Sauvignon Blanc

1/4 c spreadable cream cheese

Cornstarch slurry to thicken gravy


After sautéing veggies add chicken, broth and wine to skillet. 

Bring to light boil, add slurry.

Thicken.

Serve over sticky rice.

Serve with squash casserole and fried okra.



Baking Bag Chicken
































Ecclesiastes 9:5-6


[5] For the living know that they will die, but the dead know nothing, and they have no more reward, for the memory of them is forgotten. [6] Their love and their hate and their envy have already perished, and forever they have no more share in all that is done under the sun.


 

An ej original recipe!

 

 

Up to 8 lb baking bag

1 t flour in bottom of bag

1/4 c Sauvignon Blanc

Lemon that was squeezed 


5-6 lb whole Chicken, trimmed of excess fat, spatchcocked to lay flat and injected with solution


Injection Solution

1/8 c Clarified butter

1/2 c Chicken stock

1 T bourbon

1/4 c Maple syrup 

1 T Worcestershire sauce

1/2 of a lemon squeezed

1 T smoked garlic seasoning

1 t onion powder

1/2 t white pepper 

1/2 t black pepper

Put in salt, onion powder and garlic, peppers in coffee grinder 

and pulse to dust

Heat for 15 seconds in microwave.

Whisk

Strain

Cool

Put in tall red plastic cup

Fill injector 

Gently Inject chicken in many spots

Grease chicken on outside with olive oil or butter, salt, pepper and garlic, dust with smoked paprika 

Put in chicken, tie legs, flip wings under

Bake, preheated 400 degree oven for 1 and 1/2 hour or until breast reaches 160 degrees

Let sit for 20 minutes so juices will redistribute

Temp with rise another 5 or more degrees while resting

Reserve broth and placed sliced chicken in broth

Serve with garlic Parmesan mashed potatoes, salad and peas

Two Meat Grinder on Focaccia with Baby Arugula




































Ecclesiastes 3:17-22

Such a good sandwich!!


Trader Joe's Parm and sun dried Tomato focaccia 

Boars Head Pepperoni, pre-cut thin sliced 

Boars Head Honey Maple Turkey, sandwich sliced

Baby Arugula 

Olive tapenade *

Thin as possible cucumber, carrot and onion


Toast bread.

Microwave meat for 30 seconds.

Place olive tapenade on toasted bread, add meats, Arugula, cucumber, carrot and onion.

Olive Tapenade 

1 c diced Castellano olives

1/2 c diced fire roasted red peppers 

1 small Shallot, diced

1 T hot Greek peppers, diced

2 T capers, diced

2 T roasted garlic

Put in a mini food processor and pulse to dice.

Remove to a bowl.

Add:

1/4 c olive oil

2 T red wine vinegar

1 t sugar

1/2 t each of dried oregano, cilantro and basil

Stir and let flavors meld for at least an hour.
