Pina Colada Cheesecake Delight

 

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 135:5


    [5] For I know that the LORD is great,

        and that our Lord is above all gods.



An ej original recipe! 


Pineapple compote(make and cool completely)

1 20 oz can Pineapple chunks plus juice

2 T lime juice

1/4 c sugar

1 t vanilla extract 

1 t lime zest

1 cinnamon stick 

1/4 t Almond extract 

2 T cornstarch whisk with 1 t water

Heat pineapple and juice, zest and seasonings 5 minutes on medium heat then simmer 5 on low

Remove from heat

Remove cinnamon stick 

Add extracts and cornstarch slurry and stir

Cool completely in fridge 


Crust:

16 whole graham cracker (Crush in a ziplock and leave coarse) 

1/4 c granulated sugar

3/4 c butter, melted

Preheat Air Fryer to 350°

Spray a 9X13 inch baking dish with nonstick cooking spray; set aside.

In a large bowl, mix crushed Graham crackers with melted butter and granulated sugar

Press into the prepared baking dish

Air fry in preheated oven until crust edges are golden, 10-12 minutes 

Cool completely


Cream cheese layer

1 16 oz spreadable cream cheese

1/4 c sour cream

8-oz tub Cool Whip, thawed 

3/4 c confectioners sugar

2 t vanilla extract

In a large mixing bowl, cream together cream cheese and sour cream with an electric mixer until combined

Add the confectioner's sugar and vanilla and beat for 1 minutes

Gently fold in the Cool whip until well combined

Spread the cream cheese mixture over the cooled crust

Refrigerate overnight

To serve, add cooled pineapple Compote

Perry's Steakhouse Knock Off Chocolate Tower

 


 

 

 

 

 

 

 

 

 

Proverbs 15:3

The eyes of the LORD are in every place,

keeping watch on the evil and the good.



Crispy Crunchy Crust

6 oz semi sweet chocolate chips, chopped 

1 c Trader Joe's cookie butter 

2 c Frosted Flakes

Melt chocolate and cookie butter in microwave for 30 seconds increments until you can stir it smooth 

Add frosted flakes 

Mash into a parchment lined 13x9 pan

Freeze for 30 minutes 


Chocolate ganache 

6 oz semi sweet chocolate chips, chopped 

2 oz dark chocolate chips, chopped 

8 oz heavy cream

1/4 c (2 oz) Butter, chopped into bits

Heat cream in microwave just till hot

Stir in both chocolates

Let Chocolate melt in hot cream for 2 minutes 

Whisk until smooth 

Add butter

Whisk until shiny

Pour over Crust 

Top with crushed toasted macadamia nuts

Put in freezer for 1-1/2 hrs

Remove parchment sheet with the bars to a cutting board

Cut to serve 

You can stack if you like but not needed 

Must store in fridge

So good with coffee

Date Walnut Bread with Whiskey Cream Cheese Glaze

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Proverbs 3:19-20


    [19] The LORD by wisdom founded the earth;

        by understanding he established the heavens; 

    [20] by his knowledge the deeps broke open,

        and the clouds drop down the dew.



15 dates, pitted 

1 c hot milk

2 eggs

1/4 c sour cream

1 t vanilla extract

1 1/4  self-rising flour 

3/4 c chopped walnuts


Instructions 

Soak the dates: Add pitted dates to a bowl and pour hot milk over them. 

Let them soak for at least 30 minutes, until softened.

Preheat oven to 350°F.

Blend: Transfer soaked dates and milk to a blender and blend until smooth.

Mix wet ingredients: 

Pour the date mixture back into a bowl. Add eggs, sour cream, and vanilla. 

Whisk until combined.

Add dry ingredients: Add flour over the wet mixture. 

Gently stir until just combined—don’t over mix! 

Fold in chopped walnuts.

Bake: Pour the batter into a greased and lined 8-inch loaf pan. 

Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Slice and keep in loaf pan.

Pour sauce over slices.

Cover with plastic wrap.

Let sauce soak into slices.



Whiskey Cream Cheese Sauce

2 t Whiskey 

1 t vanilla 

1-1/2 c Powdered sugar

1/4 c Spreadable Cream cheese 

1 t Heavy cream, more if needed 

Whisk

Pour over slices

[18] so that by two unchangeable things, in which it is impossible for God to lie, we who have fled for refuge might have strong encouragement to hold fast to the hope set before us.



2 mini muffin pans generously sprayed with non stick

2 minute Preheated 325 degree air Fryer 

Air fry time 12-14 minutes until top is set and starts to crinkle



1 stick of butter

1 c semi sweet chocolate chips

2/3 c white sugar

2 eggs, room temp(important)

2/3 c AP flour

1/4 c cocoa powder

1/4 t salt

1 c chopped toasted walnuts

1/4 c chocolate chips


Melt butter and chocolate chips in microwave in 30 second increments stirring after each 30 second time 

It took me 2 times and a good amount of stirring 


Stir in sugar and keep stirring 2 minutes 

Add eggs and stir a full 2 minutes 

Gently fold, by thirds, flour, cocoa and salt

Fold in nuts and chocolate chips


Using a small cookie scoop, fill each muffin hole

Bake

Cool in pan 


To serve, drizzle with caramel sauce and spray whip topping

Psalm 37:39-40


    [39] The salvation of the righteous is from the LORD;

        he is their stronghold in the time of trouble. 

    [40] The LORD helps them and delivers them;

        he delivers them from the wicked and saves them,

        because they take refuge in him.



Wet ingredients 

1/3 c sourdough discard 

1/3 c milk

1-1/2 t Apple cider vinegar 

2-1/2 T olive oil

1/2 t vanilla extract 

1/2 t almond extract


Dry ingredients 

2/3 c AP aerated flour

1-1/2 t baking powder

1/2 c sugar

1-1/2 t salt


Topping 

Powdered sugar 


Whisk wet ingredients in small bowl 

Whisk dry ingredients in medium bowl 

Add wet to dry and stir just to incorporate 

Spoon batter into ziplock 

Cut corner 

Push down batter to tip

Spray muffin top pan with non stick

Grease muffin top pan with a drizzle of oil

Bake 350 degree oven for 10 minutes 

Cool 5 minutes in pan

Loosen sides and center circle with off set spatula 

Roll in powdered sugar

Sourdough Discard Brownies

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

These are delicious!


The fool says in his heart, “There is no God.”

        They are corrupt, they do abominable deeds;

        there is none who does good.


2 stick butter

2 c sugar

2 oz semi sweet chocolate chips 

1 c cocoa powder

1/2 c sourdough Discard 

3 eggs

1 T vanilla 

1-1/4 c AP aerated flour

1/2 t baking powder 


Add ins

1 c toasted walnuts 

1 c chocolate chips


Preheat oven to 350 degrees 

Line pan with parchment 

Spray with non stick

In Pot, melt butter and sugar over medium heat

Stir constantly 

Cook 1 minute after butter is melted

Remove to counter to cool 10 minutes 

Stir in cocoa and chocolate chips 

Stir in sourdough discard, eggs and vanilla 

Sift dry ingredients into chocolate mixture 

Add add ins

Stir to combine

Batter is thick

Spread in 13x9 parchment lined pan

Bake 28-35 minutes or until sides are set and middle is slightly firm but not completely set(still jiggly)

Sides will be firm

Cool 30 minutes before cutting

Jenn's Mom Date Layer Bars

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 16:9-10


    [9] Therefore my heart is glad, and my whole being rejoices;

        my flesh also dwells secure. 

    [10] For you will not abandon my soul to Sheol,

        or let your holy one see corruption.



1/2 c shortening 

1 c brown sugar

Using electric hand mixer, cream together 

Add in 

1-1/2 c sifted flour

1 t baking soda

1/2 t salt

1-3/4 quick oats 

Mix with spatula until crumbly but will stick together if mashed 

Put 1/2 of oat mixture in bottom of 13x9 pan, press down firmly


Fruit mixture 

3 c dates, chop in processor (I used dried figs)

1 c water

1 c sugar

Place in pot, stir often and cook until jam consistency 

Add 1 c chopped walnuts 

Spread on top of pressed down oat mixture 

Put rest of oat mixture on top and press firmly

Bake preheated 350 degree oven for 30 min

Cool 20 minutes before cutting

Sourdough Discard Orange Rolls

 

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

1 Corinthians 11:12


[12] for as woman was made from man, so man is now born of woman. And all things are from God.



Glaze

1/2 c spreadable cream cheese

1 t orange juice concentrate, thawed

1 c powdered sugar

Mix and set aside



Filling

3/4 c softened butter

1/2 c sugar

1/2 t vanilla 

1 t orange juice concentrate, thawed 

1 T orange zest

Mash together with a fork

Set aside



1 c warm water

2 t quick yeast

1/2 c sourdough discard

3 T melted butter

1 egg

3 c flour

1/4 c sugar

1/2 t salt


Add ingredients to bread machine in this order

Select dough cycle 

At end of cycle remove and shape into dough ball 

Rest for 1 hr in warm place, covered

Roll into a 13x9 rectangular 

Add filling

Roll tightly 

Cut into desired size

Place rolls touching each other

Bake preheated 350 oven for 25-28 minutes or until tops are lightly browned 

Cool 10 minutes and glaze

        so that you will no longer suffer reproach.



13x9 pan


Crust

2 sleeves Ritz, crushed

1 stick melted butter

4 T sugar

Mix 

Press into pan


1 Can Eagle brand

6 oz frozen orange concentrate, thawed

2 large Can Mandarin oranges, drained and chopped

20 oz Can crushed pineapple, drained

1 c toasted chopped pecans

Mix together


Fold in 

10 oz Cool whip

Add to Ritz Crust 

Chill several hours before eating
