Cheater Chicken Gravy Biscuits































For I have no pleasure in the death of anyone, declares the Lord GOD; so turn, and live." - Ezekiel 18:32




I'm sharing this recipe because it's a time saver for busy mom's!
No cooking fried chicken, just buy it!
This can be a breakfast, lunch or dinner dish.
You can use Chicken fingers or a breast from a deli.
The amount of chicken depends on how large a crowd you are serving.
I've have used Publix, Zaxby's, Chick Fil A or Walmart. 
I use Mary B's buttermilk biscuits because they taste like scratch biscuits.

This amount will serve 2.
4 Chicken fingers or a whole fried breast, cut into bite size pieces
1 c Milk
3 T Heavy cream
Salt and pepper to taste
1/2 t Garlic granules 
3 T Flour
3 T Olive oil

Place oil in a large skillet and heat.
Add chicken, it should sizzle.
Begin to fry, sprinkle seasonings over chicken.
Add the flour over the chicken as it fries.
You might have to add more oil if the flour is still dry. 
You want the grease to absorb the flour.
Add the wet ingredients, stirring to incorporate. 
The gravy should begin to thicken pretty quickly.
Taste and adjust seasonings for your taste.

Cream Cheese Chive Wontons





















By faith we understand that the universe was created by the word of God, so that what is seen was not made out of things that are visible. - Hebrews 11:3







Wonton wrappers
1/2 bar cream cheese, softened
2 T chives
2 T honey
1 t soy sauce 
1 t toasted sesame oil
1 t Sriracha 

1 beaten egg
To seal wontons 

Mix well.
Take each wonton and turn it onto a plastic cutting board.
It should be turned to resemble a diamond shape, a point towards you.
Place a small amount of cream cheese mixture on the wrapper.
Place egg mixture on top point. 
Fold over half way up.
Just like rolling an egg roll.
Fold left point over the top point, add egg glue and then bring right point over the left.
Fry in a Fry Daddy till they float and are lightly browned.

Moo Shu Pork





























5 For they deliberately overlook this fact, that the heavens existed long ago, and the earth was formed out of water and through water by the word of God,
6 and that by means of these the world that then existed was deluged with water and perished. - 2 Peter 3:5-6




2 c Pork tenderloin, thin sliced
3 T Mirin
2 T soy sauce
2 T cornstarch 

Mix Mirin, soy and cornstarch, and add to ziplock bag.
Add pork and massage around the pork to coat meat.
Let the mixture marinate, in the fridge, 
for 1 hr.

Add 4 T olive oil to hot wok.
Add pork and stir fry.
This cooks quickly because of the high heat and the thinness of the pork.
Remove pork to plate.

2 c Cabbage, shredded
1 Leek, sliced
2 T roasted garlic
1 T fresh ginger, grated
1 c button Mushrooms, sliced
2 T olive oil

In a wok, heat oil, add garlic and ginger to oil.
Stir around and add veggies.
When veggies are done, add in cooked pork.
Add sauce stir fry one minute
Swirl in the beaten egg with a fork.
Serve on rice or tortillas.

Moo Shu sauce
3 T soy
2 T hoisin
1 T Mirin
2 T honey

To finish
1 beaten egg

White Wine Pork Tips

























20 knowing this first of all, that no prophecy of Scripture comes from someone's own interpretation.

1 lb. Pork tenderloin, cut into tips
3 T Olive oil
1/2 c White wine, I used some Trader Joe's Sauvignon Blanc (Charles Shaw)
1/2 t Seasoned salt
1/2 t Smoked paprika
1/2 t Garlic granules 
1/2 t Toasted cumin
1/2 t Dried Cilantro 
1/2 t Dried Basil
Place pork tips in plate, toss in oil, toss in wine , season with all seasonings and herbs. 
Let marinate for 20-30 minutes while you prepare the veggie mixture.
Stir fry in a wok or hot large non stick skillet.
Cooks quickly.
Meat should only take 7 minutes or so.
Remove to plate.

Veggie mixture 
Splash of olive oil
1 Bell pepper, sliced thin
1 Onion, sliced thin
6 button Mushrooms, sliced thin
1/4 of a Celery stalk, sliced thin
1 small piece of ham, diced 
Smoked salt and Cracked black pepper, to taste
Heat wok or skillet, add oil.
Stir fry until veggies are slightly soft.
Season. 
Add cooked pork.

Fresh herbs mix
3 leaves Sage
2 stems Oregano, use leaves only
1 sprig Rosemary
3 twigs of Thyme, leaves only
2 Sweet basil leaves
Finely dice.
Sprinkle herb mix on top of finished dish.

Cheesy Onion Broccoli Cornbread Skillet Casserole

1-2 onions, sliced into rings, enough to cover bottom of skillet
3 T Butter
Melt butter in a 10 inch cast iron skillet.
Add onions and lightly brown.

Mix dry ingredients.
2 c yellow cornmeal
1/2 c flour
1 T baking soda 
1 t salt

Mix wet ingredients.
1/2 c Buttermilk
1/2 c Cottage cheese
3 T honey
1 T Olive Oil
1 egg 

Add wet to dry mixing well.

Fold in add-ins.
1/2 c Colby jack cheese
1 c broccoli, cooked in microwave, cut into pieces, drain on paper towels to remove moisture 

Bake preheated in 400 degrees oven for 25 minutes.
Cool. 
Flip onto a plate.

Italian Asian Fusion Garlic Shrimp

An EJ original recipe

1 lb. cleaned shrimp, tail off, I used frozen pink gulf shrimp from Costco 
1/8 c mixed fresh herb blend, sweet basil, thyme, rosemary, oregano 
1 c broccoli florets
1 leek
1 ear of fresh corn, shaved
3 T roasted garlic
4 T butter
1 t chili oil, I used Lee Kum Kee Chiu Chow or more if you are brave
1/4 c Limoncello 
1/4 c Trader Joe's shredded blend (Toscana, Parmesan and unexpected Cheddar)
1 T mascarpone 

Melt butter, add chili oil, add mashed garlic and sauté, 1 minute.
Toss in veggies, herbs, and leeks, sauté 3 minutes.
Toss in shrimp and mascarpone, cheese and Limoncello.
Sauté on medium high until shrimp turn slightly pink. Do not over cook!
This was an outstanding creation!!

Shrimp Toast



























1 Let every person be subject to the governing authorities. For there is no authority except from God, and those that exist have been instituted by God.

These are delicious!!!

8 oz. cleaned, peeled shrimp, no tail
1 egg
1 T chives
Pinch of Smoked Salt 

Bread, I used Sara Lee Artesano, remove crust and cut in half on the diagonal to make a sort of a triangle shape.
I did enough to get 8 triangles.


Panko 
Oil for frying

Pulse the shrimp, egg, salt and chives a few times in food processor until you have a paste. 
Place in bowl.
In a plate put some panko.
Dip bread triangle in shrimp paste, then in panko.
Also dip plain side in panko.
Fry in oil.

Sauce for dipping
3 T mayo
2 T Sweet chili Thai sauce
2 T Hoisin 

Mix well.

Teriyaki Beef



























9 For the commandments, "You shall not commit adultery, You shall not murder, You shall not steal, You shall not covet," and any other commandment, are summed up in this word: "You shall love your neighbor as yourself."
10 Love does no wrong to a neighbor; therefore love is the fulfilling of the law.

2 pieces of Beef, really thin sliced and cut into strips, I used boneless beef short ribs from Costco

Marinade
3 T Olive oil
1 T Honey
2 T  Sake
2 T Mirin
2 T Roasted garlic, mashed
3 T Soy sauce
1 t Toasted sesame oil
Pinch Pepper flakes

Make marinade in ziplock bag.
Add beef and marinate overnight.
I did mine 2 days and it was great.
Take beef out of marinade and put in a plate and drizzle with cornstarch.
Discard marinade.
Stir beef around until the cornstarch dissolves.
Beef has some oil so drizzle only a little olive oil in a large skillet.
Fry beef until slightly crispy, remove.
Wipe out pan.
Stir fry veggies in a splash of olive oil.
Add beef back in, mix to combine.
Serve over basmati rice.

Veggies
1 c Broccoli florets 
1 Leek, sliced
1/2 of a Red Bell pepper, cut into strips
2 Carrots, matchstick cut

Steamed Seasoned Olive Oil Tossed Veggies
























15 The eyes of all look to you, and you give them their food in due season.

2 c Broccoli florets
1 sweet Onion
1/2 of a Red bell pepper, sliced 

Drizzle Olive oil
1/2 t Tuscan seasoning
1/2 t Cajun seasoning
1/2 t Parsley
1 t chives

Using a Steamer made for the microwave, place veggies in steamer. 
I have an old Pampered Chef one that I love which I used. 
Drizzle with oil and season with all herbs and seasonings. 
Steam 5 minutes.
Add no water, the veggies and oil are sufficient.
Quick and delicious!!

Cream Cheese Chopped Tomato Beef Fajitas
























13 For "everyone who calls on the name of the Lord will be saved."
14 How then will they call on him in whom they have not believed? And how are they to believe in him of whom they have never heard? And how are they to hear without someone preaching?
15 And how are they to preach unless they are sent? As it is written, "How beautiful are the feet of those who preach the good news!" - Romans 10:13-15





Marinated boneless beef short ribs, thin sliced
Marinate for 1 hr.

Marinade for Beef:
1/8 c olive oil
1 lime, juiced and the zest too
1 t Smoked cumin
1 t Smoked paprika 
Smoked salt and Cracked black pepper, to taste
Pinch of sugar
1 chipotle in adobo, mashed
Garlic granules 

Brown in meat and onion in skillet.
Don't add oil because the marinade has enough.
Add the following ingredients when meat is almost done.

1/4 c Cream cheese, softened 
1 Sliced tomato

Serve on warm tortillas.
Add avocado slices and cheese.

Beer Braised Chipotle In Adobo Beef Stew

An EJ original!

2 lbs boneless short ribs of beef, cut into chunks, I get mine from Costco 
3 T clarified butter
1/2 of a chipotle in adobo, mashed, these vary in heat so you never know what the heat will be
3 T double strength tomato paste, in the tube
2 T roasted garlic, mashed
1 onion, chopped
1 small beer or half of a large
1/2 c water
4 large red potatoes, cut into chunks
4 large carrots, chunked 
Smoked Salt and pepper
Fresh sage, fresh thyme, fresh oregano
1/2 t sugar

Set instant pot to sauté and add 3 tablespoons of clarified butter. Heat and add chipotle, garlic, sugar, herbs and onion. 
Sauté until onions are translucent, then add the beef.
Brown.
Add tomato paste, beer and water.
Set to meat setting and add 45 minutes to cook time.
Use pressure to cook.
After 45 minutes, place hand towel over vent, release pressure. 
Add potatoes and carrots, bring pressure back up and cook 12 minutes.
Remove pressure and enjoy.
