Easy Green Tomato Pie






















5 Blessed is he whose help is the God of Jacob, whose hope is in the LORD his God, 
6 who made heaven and earth, the sea, and all that is in them, who keeps faith forever; 
7 who executes justice for the oppressed, who gives food to the hungry. The LORD sets the prisoners free; 
8 the LORD opens the eyes of the blind. The LORD lifts up those who are bowed down; the LORD loves the righteous.  - Psalm 146:5-8





2 large green tomatoes 
Smoked Salt and cracked black pepper to the taste
1 sleeve Ritz crackers
Butter, cut into tiny pieces, enough to dot the top of pie
1 c Cheese, I used Colby Jack


Chop tomatoes into tiny chunks.
Salt and pepper.
Spray pie plate with Pam.
Crush Ritz and cover top, very slightly stir, leaving most of the Ritz on top.
Dot with butter then cheese.
Bake 350 degrees in preheated toaster oven for 30 minutes then cover lightly with foil and cook 10 more minutes.
This is delicious!!
