Chinese 5 Spice Shrimp







For from him and through him and to him are all things. To him be glory forever. Amen. Romans 11:36





20 Shrimp, I used frozen cooked, remove tail
1 T soy sauce, toss shrimp 

1/2 t 5-spice Chinese seasoning, really strong don't use more
3 green onion, cut on diagonal 
1 t roasted garlic
7 baby carrots, julienned
1t olive oil
1/4 c white wine
1/4 c water
1 t sesame seeds
1/8 t sugar

Cooked Basmati rice

Sauté carrots, onions, sesame seeds and garlic in oil. Add soy sauced shrimp, 5-spice, water, wine, and sugar.
Cook 5 minutes. Serve over rice.

Meatball Lasagna

Bake 375 degrees.

Meat sauce:

1 large package of Publix meatballs or 2 pgks Walmart Parmesan meat balls
1 red bell pepper, diced
1 small onion, diced
2 t roasted garlic, mashed
1/2 c Fresh basil, chopped
3 ice cube of Fresh spicy oregano, I froze mine from my plants back in the summer
1 c Parmesan
1/2 c Jim Beam
1 T coarse smoked salt

Sauce:
1 Prego Traditional Sauce, 45oz
22 oz water

White layer:
40 oz Cottage cheese
3 eggs
1/2 c Mascarpone 
Salt and pepper
1/2 c Parmesan cheese

1 lb shredded Mozzarella  

Lasagna noodles, cooked 8 minutes


13x9 pan covered lightly with foil 25 minutes, then uncovered 25 minutes.

In a large cast iron Dutch oven, add a tiny amount of olive oil to sauté onions and peppers. Add meatballs and as they brown, mash with a potato masher. When browned add whiskey, then sauce and water.

To assemble:
Spoon a light layer of sauce on bottom.
Follow with noodles which I cut to fit pan, white sauce, mozzarella, meat sauce and then noodles, repeat to top of pan.
End with Parmesan and mozzarella.
Let it sit for 15 minutes before you cut it.
We ate the small one and froze the other.

This made 1 pan of 3-layer 13x9 lasagna and 1 pan 2-layer 13x9 pan.

Mac and Cheese for Two

1/2 box of elbow macaroni, cooked al dente, I use Dreamfields 

1/2 stick butter, cut into slices
1 1/4 c milk
1 egg
Smoked salt, to taste
Cracked black pepper, to taste

1 1/4 c sharp cheddar, shredded

Smoked paprika to sprinkle on top

With a whisk and a small bowl, beat egg and milk. 
In a buttered casserole, place noodles, cheese and butter, stir.
Add milk-egg mixture and swirl with a fork.
Sprinkle with smoked paprika.
Bake 350 degrees for 25 minutes, turn on broiler and slightly brown top.

Cuban Roast Beef for Sandwiches






4 Let there be no filthiness nor foolish talk nor crude joking, which are out of place, but instead let there be thanksgiving.

Slightly spiced beef with a hint of citrus and orange.

Crusty bread, I used White Mountain bread from Publix bakery

Chuck Roast, cut into 4 chunks
Cuban Dry Rub, this blog under Rubs tab
Olive oil for searing meat
2 onions cut in half and sliced
A few turns of Salt and pepper on the onions
1/2 c Cabernet Sauvignon 
1 c water
1 T dried orange peel
2 T lime juice
6 Turns of smoked salt on the meat before cooking

2 sliced avocados for sandwiches


In a skillet, add a little olive oil, heat oil and place roast pieces that have been generously rubbed with Cuban dry rub. Set aside after searing.

In a pressure cooker, place a 1 T of olive oil, heat and add onions, cooking until translucent. Add wine, water, juice and orange peel. Cook for 5 minutes and add meat, then the smoked salt. Put on cooker top and pressure gauge and bring to a steady rocking motion. Cook on medium heat for 30 minutes. Place in sink and run cold water over top. Do not remove top until you hear the pressure release, it will be a hissing sound and the pop off valve in the top near the handle will fall down. Remove meat to a cutting board and slice, reserve gravy. Toast bread, top with meat and gravy. Add slices of avocado. Yum!!

2 T cumin 

2 T paprika

2 t garlic powder

1/2 t crushed red pepper

2 T Cajun seasoning

1 T coarse sea salt

Milk Makers Cookies

These cookies are for lactating mothers but they are delicious for anyone!!!

1 cup self raising white whole wheat flour (if you have plain flour, add 1/2 tsp baking powder)
1/2 cup low fat butter (for a healthier option, use organic, virgin coconut oil instead which is super good for you!) ( I used the coconut oil) if it has gotten solid, nuke it 5 seconds, then another 5 seconds, it needs to be like softened butter!
3/4 cup brown sugar 
2 tablespoons flaxseeds (can be found at Walmart or a health food store
1 egg
2-3 tablespoons of water (depends if you prefer moister cookies)
1 tablespoon vanilla 
1 teaspoon cinnamon 
1-2 tablespoons of brewers yeast (buy at Whole Foods in the vitamin section, Bluebonnet brand is best) (do not substitute with bakers yeast or any other yeast).
1/2 teaspoon salt (use himalayan salt if possible) I just used coarse sea salt!
1 & 1/2 cups oats (get the thicker cut oats if you can) I used old fashioned oats!
1/2 of a 60% chocolate cocoa bar, chopped with knife( I used Ghirardelli)

DO NOT leave out or substitute the brewers yeast for any other products or yeasts… it’s one of the main ingredients that makes them work.

Nutritional yeast and bakers yeast are different – don’t use these

In a large mixing bowl, using a whisk, cream the butter and sugar then add the egg and vanilla. Mix well.
In a separate bowl, combine the flaxseed and water, let sit for a few minutes before adding to mix.
Add the dry ingredients (apart from the oats and your additional ingredients) and mix well again.
Finally, stir in the oats and your additional ingredient.
Using a teaspoon to dip out, roll into ball and flatten, just a little, in the middle. 
Bake for 10 minutes, at 345 degrees, worked perfect for a soft center and a lightly crunchy edge.

Creamed Chicken and Rice with Stir Fried Kale





Acts 14:

16 In past generations he allowed all the nations to walk in their own ways.
17 Yet he did not leave himself without witness, for he did good by giving you rains from heaven and fruitful seasons, satisfying your hearts with food and gladness."
18 Even with these words they scarcely restrained the people from offering sacrifice to them.










1 c prepared Stir Fried Kale, recipe this blog under Vegetables tab
2 c Rotisserie chicken, chopped
1 c cooked rice

1/2 c leeks
1/2 c onions 
4 mushrooms, sliced
1 t olive oil
1 t butter
1 t chicken base seasoning

1/4 c lemon juice
1/4 c white wine, I used Sauvignon Blanc
1 c water
1/4 c cream


3 T cream cheese 
1/4 c Mozzarella, grated
 A few turns black pepper
Sauté chicken base seasoned leeks, onions and mushrooms in oil butter mixture. Add chicken, lemon juice, cream, wine, water and cheeses. When sauce is reduced and thickened add cheeses. As cheeses melt add kale and rice.

Cabbage Rolls Italian Style





Acts 4:
10 let it be known to all of you and to all the people of Israel that by the name of Jesus Christ of Nazareth, whom you crucified, whom God raised from the dead-by him this man is standing before you well.
11 This Jesus is the stone that was rejected by you, the builders, which has become the cornerstone.
12 And there is salvation in no one else, for there is no other name under heaven given among men by which we must be saved."









Meat mixture:
1/2 lb ground beef
6 Parmesan meat balls, Walmart or Publix make these
1/2 c cooked Rice
1/4 c minced onion
2 t Worcestershire sauce
1/4 c Parmesan  
2 T tomato concentrated paste, from tube
Sea Salt and fresh ground black Pepper to taste
Mix all ingredients together. 

1 large cabbage, cored and outer tough leaves removed
Pull off at least 8 large leaves 
Steam 8 -12 leaves for 4 minutes, cool,
On the back side of the larger leaves, there is a thick spine that you need to shave off with a sharp knife.


Sauce:
Prego Traditional
1 c cream 
Mix together.

Spread some sauce in bottom of pan, reserving most of the sauce to cover tops.
Take a 1/4 c of meat mixture and put in the cabbage leaf. Make into a roll, tuck in sides and put seam side down in the sauce.
Bake for 1- 1 1/2 hours, covered with foil, on 400 degrees. 
Let cool 10 minutes before serving.

Cajun Creole Butter Rum Pork Tenderloin






Acts 9:
15 But the Lord said to him, "Go, for he is a chosen instrument of mine to carry my name before the Gentiles and kings and the children of Israel.
16 For I will show him how much he must suffer for the sake of my name."






One Pork tenderloin, I cut mine in half
1 bottle Creole Butter marinade

Pan steaming ingredients:
1/2 c rum
1/2 c water

Marinate loin in creole butter overnight.
Sear in skillet.
Place rack on pan, cover bottom of pan with rum and water.
Place loins on rack after searing.
Bake in toaster oven on 450 degrees for 20 minutes on each side.
Let rest 5 minutes and slice.
So tender, juicy and delicious!!!!

Don't Make These Sweet Potato Chips






Acts 7:
54 Now when they heard these things they were enraged, and they ground their teeth at him.
55 But he, full of the Holy Spirit, gazed into heaven and saw the glory of God, and Jesus standing at the right hand of God.
56 And he said, "Behold, I see the heavens opened, and the Son of Man standing at the right hand of God."

Warning: these are addictive!!!



1 sweet potato, use a mandolin on thinnest setting
Coarse sea salt

You can be creative with the spices, I liked onion powder and ancho chili powder.

Fry daddy with olive oil

Fry until pretty brown, drain on paper towel and add half twist of salt, will crisp as they cool!

Green Chili Cream Sauce Chicken Bake





Acts 5:
30 The God of our fathers raised Jesus, whom you killed by hanging him on a tree.
31 God exalted him at his right hand as Leader and Savior, to give repentance to Israel and forgiveness of sins.




Green chili cream sauce:
Small can green Chili's
2 T half and half
1/4 c sour cream

Chicken mixture:
Rotisserie chicken breast
1/2 onion, chopped
1/4 c bell pepper, chopped
2 T Salsa Verde
1 T taco seasoning
1/4 c black beans
1/2 c cheddar cheese, shredded
Salt and pepper to taste

Crushed taco chips
1/2 c cheese

Sauté onions and bell peppers in olive oil. Add the rest of the ingredients until heated through.
In a pie plate, spread half of the cream sauce then 1/2 of the chicken mixture. Next repeat, ending with crushed chips and a sprinkle of cheese. Bake 350 degrees for 30 minutes.
