Green Goddess Chicken and Pasta




























 

 

 

Psalm 35:27-28

3 T Clarified butter

1 c Onions, sliced thin 

1 c Mushrooms, chopped 

2 T Roasted garlic

1/2 t sugar

3 T Green Goddess dry seasoning 

Salt and pepper to taste

Sauté veggies and seasonings

Add sauce ingredients 

 

Sauce

1/4 c Sauvignon Blanc 

1/4 c Heavy cream

1/2 c mascarpone 

1/4 c water

Simmer and let sauce reduce 

Add chicken

Add cooked pasta

Add toppings


Fettuccine or Angel Hair, cook and set aside


Topping 

Snipped scallions and fresh parsley 


Sam's club has Green Goddess seasoning or you can make your own


Green Goddess dry seasoning 

Grind these ingredients 

1 t Dried onions

1 t Dried garlic

1/2 t Salt

1/2 t black Pepper

1 t Dried green onion powder 

1 t Dried Spinach powder

1 t Dried lemon powder

1 t Dried parsley

1 t dried chives

1 t dried basil

1 t dried Dill

1/2 t tarragon 

Mix

Game Day Dip for Two

1 t olive oil

1 small onion, chopped

1 t Toasted ground Cumin 

1/2 t garlic granules 

1/2 t onion powder 

1 T cilantro 

1 t chili powder 

1/2 t sugar

2 chicken burgers*

1 c Velveeta 

1/4 c Havarti cheese

1/4 c Mateo gourmet salsa

1/2 c heavy cream

1 T Taco Bell mild sauce

2 heaping T spreadable cream cheese


Sauté veggies in olive oil, sugar and seasonings

Brown chicken burgers

Add cream, both of the cheeses, cream cheese, salsa and Taco Bell sauce

Heat on low stirring constantly 

Serve with tostadas chips

10 brined cooked wings for each sauce*


Hot Honey Mustard

1/8 c Honey

2 T Texas Pete (more if you want the hotter)

1 t yellow mustard


Buttery Lemon Pepper

1/4 stick salted melted butter

2 t lemon pepper seasoning

1/2 t lemon powder or 1 t fresh lemon juice


Chinese 5 Spice

1/8 c Soy sauce

1/2 t (5) spice powder 

1/2 t toasted sesame oil

1/2 t hoisin 

1/2 t honey 

1/2 t sweet chili Thai sauce

 

Just toss 10 wings in each sauce!

Brined and Air Fried Wings

































Psalm 29:11


    [11] May the LORD give strength to his people!

        May the LORD bless his people with peace!


These can be eaten naked or sauced

I made three sauces

Hot Honey

Chinese Five Spice

Buttery Lemon Pepper 

 

 

 

1 qt water 

3 pieces Parmesan rind 

2 T kosher salt 

1 T sugar

2 T peppercorns 

2 medium lemons, cut in half

3 T roasted garlic 

2-3 bay leaves

4-5 lbs chicken wings, cut

2 T extra virgin olive oil

Boil 10 minutes

Cool down and add ice to speed cooling 

Using large container add wings and pour brine over wings

Brine 4-6 hours but no longer


To cook, remove wings from brine, dry off wings

Brush with olive oil, both sides

Cook in batches

Air fry 400 degrees for 20 minutes on one side flip and cook an additional 20 minutes

4 Chicken patties made from Meatball recipe *

2 Maple honey ham slices torn in half

2 Maple honey turkey slices torn in half

4 Pepperoni slices

4 slices Havarti cheese

4 Hawaiian Brioche Slider buns

Onion slices

Tomato slices


Special sauce 

1 T Mayo

1 t yellow mustard 

1 t BBQ sauce

Meatball ingredients 

1 lb ground chicken 

1/2 pkg mortadella, process in mini food processor until fine

1/4 c (3 cheese Italian blend)

1 small Shallot, diced

1 t dried Rosemary 

1 t dried Thyme 

1/2 t dried Oregano 

1/2 t dried basil

Salt and pepper to taste

1/4 c Panko

2 T Tomato paste concentrate 

3 T heavy cream

Mix by hand until they just come together 

Place in freezer 30 minutes 

Makes 4-6 Sliders 

Fry in skillet

Chicken and Mushrooms in Cream Sauce

































Isaiah 59:1-2


Evil and Oppression


    [1] Behold, the LORD’s hand is not shortened, that it cannot save,

        or his ear dull, that it cannot hear; 

    [2] but your iniquities have made a separation

        between you and your God,

    and your sins have hidden his face from you

        so that he does not hear.



2 Boneless skinless chicken breast cut in 3 inch pieces 1/4 -1/2 inch thick


1/2 c AP flour

1/2 t kosher Salt 

1/2 t coarse black pepper 

Mix

Lightly coat chicken pieces 

Set aside


Add 2 T olive oil to large fry pan

Heat and add chicken pieces 

Sear 3 minutes on each side and remove to plate

Chicken is almost done 


Add 2 additional tablespoons of olive oil to skillet 

Add veggies

6 large button mushrooms, sliced 

1 small onion, sliced

2 T Roasted garlic 

Sauté 3 minutes 

Add 

1-1/2 c chicken stock

Add chicken pieces back

Chicken needs to cook to temp of 165

Simmer 3 minutes covered 

Ck temp

Remove chicken 

Add

1 c heavy cream

1/2 t each Salt and pepper 

Cook just till thickened

Add chicken back and spoon sauce over pieces 

Serve with rice or mashed potatoes

Herb Dry Brine Chicken Thighs






























Psalm 22:30-31


    [30] Posterity shall serve him;

        it shall be told of the Lord to the coming generation; 

    [31] they shall come and proclaim his righteousness to a people yet unborn,

        that he has done it.



10 bone in skin on thighs


Dry Brine 

1/8 c kosher salt

1/8 c coarse pepper

2 t lemon powder

2 t dried ground Ginger

2 t fresh diced Sage

4 t fresh cilantro 

1 t sugar

Just enough olive oil to make herbs stick together

Mix and set aside


Gently pull skin loose to create a pocket

Put a little under skin and a little on back side 

Place in gallon zip bag and marinate 24 hrs 

Flip a few times 

Remove to counter 30 minutes prior to baking 

Slather oil butter mixture on thighs


Bake covered 20 minutes

Check temp, should be 155

Uncover and bake until lightly browned and temp is 175


Butter sauce 

Melted butter

Olive oil

Smoked paprika

White Wine Chicken Pot Pie































Psalm 19:14

        O LORD, my rock and my redeemer.



2 pie shells non frozen (in the biscuit isle)

2 c Rotisserie chicken breast, shredded or chopped 


350 degrees 40-45 minutes

Cook bottom crust 

Set aside


Veggies

1/4 c Onion

1/4 c Leeks

1/4 c Celery

1 Carrot, diced 

1/4 c frozen English Peas (green sweet)

1/4 c cooked potatoes, chopped

3 T Butter


3 T flour

2 T chicken base seasoning

1 t soffritto, dried

1/2 t each Rosemary, thyme, Sage

1/4 c Sauvignon Blanc

2 c half and half 


Sauté veggies in butter

Add seasonings, herbs and flour 

Sauté until flour is dissolved 

Add wine and sauté 

Add cream and sauté 

Set aside

Lay bottom crust in pan, pierce with holes Bake 20 minutes

Fill crust

Top with other crust

Clip vents in middle

Brush with beaten egg


3 T flour

2 T chicken base seasoning

1/2 t black pepper

1/2 t salt

1 t soffritto, dried

1/2 t each rosemary, thyme, sage

1/4 c Sauvignon Blanc

2 c half and half

Parmesan Crusted Roasted Chicken




























 

 

 

Romans 7:18


[18] For I know that nothing good dwells in me, that is, in my flesh. For I have the desire to do what is right, but not the ability to carry it out.




Air fry 425 degrees for 16-18 minutes 


1 chicken breast, cut 5-6 (thin) slits across the short sides of breast (these slits will hold the Parmesan mixture)

1/2 t oil

1/2 of a lemon juiced

Salt and pepper to taste


Grease with oil

Squirt with lemon

Season breast with salt pepper mixture 

Set aside


Prepared 15 minutes before needed

1/4 stick softened butter

1/4 c Parmesan 

1/4 c panko

1 t Horseradish 

Mix and set aside in fridge for 15 minutes 


Fill slits with Parmesan mixture 

Bake according to directions above

Chicken and Pan Fried Noodles

1/2 of pkg Thinnest Rice Noodles, blanch and set aside or fresh chow mien noodles, blanched

1/2 c neutral oil for frying

Fry and set aside on plate


1 t oil 

1 c chopped Cabbage 

4 sliced on bias Green onions white part, reserve green for finishing dish

Salt and white pepper

Fry veggies

Add chicken 

Add sauce

Add noodles on top

Add green onions 


2 c Rotisserie breast, chopped 


Sauce 

1/4 t anchovy paste

2 t cornstarch 

1 T Soy sauce

1 T Shaoxing wine

1 t toasted sesame oil

1 T brown sugar 

Mix


2 c chicken broth
