Roasted Red Pepper Rice Pilaf

































Psalm 109:26-27


    [26] Help me, O LORD my God!

        Save me according to your steadfast love! 

    [27] Let them know that this is your hand;

        you, O LORD, have done it!



1 c Jasmine rice (rinse until water is clear, 4 or 5 times, drain and set aside 


In a thick bottom pan melt 

2 T butter

Add

1/2 c diced onion

1 T roasted garlic

1/4 c chopped roasted red bell peppers 

Cook 2 minutes 

Add drained rice

1 T chopped parsley 

Stir fry rice 5 minutes continually moving rice 

Add 

2 c chicken stock

Cover, set to simmer and cook 15 minutes stirring once

Serve with salmon and steamed broccoli

Soffritto Seasoned Chicken and Rice

1 c Smoked chicken, chopped or pulled

1 c Butter salted rice

2 T Soffritto seasoning

1 T Clarified butter

1/2 c Onions 

1/2 c Bell pepper 

Salt and pepper to taste

1/2 of a Lime juiced

1/4 Sauvignon Blanc

1/4 c half and half

1/4 c water

1/4 3 Italian cheese blend 


Sauté peppers, onions and seasonings

 in butter.

Add water, wine, lime juice, cream and cheese to make sauce.

When it's slightly thick, add chicken and rice.

Sous Vide Perfect Sushi Rice

I did 3 batches, but I was able to separate into 4 containers that held plenty of rice. 

It was around 4 qts which I will freeze for quick easy meals!!


Cook temp 197 degrees

Cook time 43 minutes


1 c Basmati Rice, rinse rice under cold water 4 x, drain then place in gallon ziplock bag

1-1/4 c water

1 T butter

1/2 t kosher salt


Put rinsed rice into bag, add water, salt and butter.

Mash out air.

Set temp and time, start Sous Vide.

My machine has a metal rack that goes in top of plastic tub.

I clipped my bags to it with those black clips.

This was perfectly cooked.

Let cool 5 minutes.

Rice will be in a blob.

Cut a tiny air vent in bottom corner, mash rice then remove for use.

I placed mine in black take out containers for the freezer.

Cooked Basmati rice, I keep Instant Pot cooked in freezer

1 T chopped Pimentos from jar

2 T chopped Greek peppers from jar

2 T roasted Garlic

1/4 c chopped Green Onions

1 t Greek seasoning

2 T Butter

3 T Parsley

1/2 t Sugar


Stir together.

Heat slightly.

Serve.

1 package Trader Joe's frozen basmati rice, cook according to directions and set aside

Into a small skillet add:
1 T olive oil
1/2 t chicken base seasoning
1/2 t toasted cumin
1/2 t chili powder

Bloom seasonings in oil for 2 minutes on medium heat. 
Then add:
A few turns black pepper
1 T double concentrate tomato paste

Cook another 2 minutes.
Stir into cooked rice.

Lemon Sage Butter Rice

1 t Fresh sage, side
1 T Butter
1/2 of a Fresh Lemon juiced
1/2 t dried Tarragon
1 bag microwaved Trader Joe's frozen basmati rice

Microwave rice according to box.
Place in a bowl, add herbs, butter and lemon juice.

Lime Ginger Garlic Cilantro Rice

1 pack of Jasmine Rice(I use Trader Joe's frozen)
1/8 c fresh cilantro, chopped
1 t roasted garlic, mashed
1 t fresh ginger, grated
1 T clarified butter
Pinch of sugar
1/2 t chicken base seasoning
1/2 of a lime juiced

Microwave rice, set aside.
Place butter in skillet, add all seasonings, garlic, ginger, and sauté one minute.
Turn off heat and add rice. Stir in lime juice and cilantro.

Buttery Parmesan Sage Brown Basmati Rice




7 Each one must give as he has decided in his heart, not reluctantly or under compulsion, for God loves a cheerful giver.

1 T Butter
2 T fresh Sage
1 T roasted garlic
1/2 c Onion, chopped
1 c Brown Basmati Rice, takes 50 minutes to cook but so worth it
1 c Water
1/4 c Cream
1/2 c Parmesan
1 T Lemon juice 
1 t Lemon zest
Smoked salt 
Cracked black pepper

Prepare rice, set aside.
Sauté onion, garlic and sage in butter. 
Add seasoning, lemon juice and zest.
Next add cooked rice, water, half and half and parmesan. 
Stir until incorporated and sauce is thickened.

Smokehouse Almond Rice Pilaf

MONDAY, JULY 21, 2014 




Acts 7:

58 Then they cast him out of the city and stoned him. And the witnesses laid down their garments at the feet of a young man named Saul.
59 And as they were stoning Stephen, he called out, "Lord Jesus, receive my spirit."
60 And falling to his knees he cried out with a loud voice, "Lord, do not hold this sin against them." And when he had said this, he fell asleep.


1 c Basmati rice, cooked
1/2 c shredded carrots
1 sliced leek and stir fried in 1/2 t butter 

6 pieces bacon, fried and chopped
1 heaping T chicken base seasoning
1/2 c half and half
1/2 c cooked and chopped cabbage
1/2 c chopped smokehouse almonds

Bring rice and shredded carrots to a boil in 2 c water seasoned with chicken base. Simmer 20 minutes with a lid. Remove from heat, add rest of ingredients. Eat and be happy!!!

Brio Tuscan Sweet Potato and Chicken Risotto

1 O LORD, you have searched me and known me! 
2 You know when I sit down and when I rise up; you discern my thoughts from afar. 
3 You search out my path and my lying down and are acquainted with all my ways. 
4 Even before a word is on my tongue, behold, O LORD, you know it altogether. 
5 You hem me in, behind and before, and lay your hand upon me. 
6 Such knowledge is too wonderful for me; it is high; I cannot attain it. 




2 ounces olive oil
4 ounces pancetta
12 ounces sweet potatoes, roasted (recipe below)
8 ounces asparagus, grilled, cut on a diagonal
24 ounces chicken stock (may be purchased)
24 ounces risotto, cooked (recipe below)
12 ounces pulled oven-roasted chicken
4 tablespoons unsalted butter
8 tablespoons Reggiano or Parmesan cheese, shredded
4 pinches salt and pepper
4 teaspoons pine nuts, toasted (place in 350 degrees oven for five minutes and toast till golden brown)
4 teaspoons fresh thyme, chopped

Heat oil in a sauté pan.
Add pancetta and sauté until golden brown and crispy.
Add sweet potatoes, asparagus, chicken stock and risotto.
Stir to combine and cook risotto.
Add chicken, butter, Reggiano or Parmesan and salt and pepper.
Stir to mix.
Place on a serving plate and garnish with pine nuts and thyme.

Roasted sweet potatoes
Dice 2 sweet potatoes, mix with salt and pepper and olive oil to coat. Place in a 350 degree oven for 35 minutes and cook until slight browning occurs.

Risotto
1 quart chicken stock
2 cups water
1 tablespoon extra-virgin olive oil 

1 small onion, chopped
2 cloves garlic, finely chopped or grated
1 cup Arborio rice
1⁄2 cup white wine
2 tablespoons butter, cut into small pieces

In a large pot, heat the stock and 2 cups water over medium low heat.
In a risotto pot or large skillet with a rounded bottom, heat the extra-virgin olive oil over medium to medium-high heat.
Add the onions and garlic to pan and saute to soften 3 to 4 minutes.
Stir in the rice and heat the rice for one to two minutes, then add the wine and cook until evaporated.
Add in the hot stock a few ladles at a time and stir for a minute with each addition to develop the starch and the creamy aspect. Total cooking time will be about 18 minutes or so. Keep adding stock each time the pan starts to become dry at the edges.
When rice is cooked to al dente, stir in the butter and cheese. Season with salt and pepper, to taste and transfer to a sheet pan and cool.

Oh My Goodness Smoky Chicken and Rice

Made this for lunch today, oh my goodness!!
                                                                                                                       



Ecc.9:3 This is an evil in all that is done under the sun, that the same event happens to all. Also, the hearts of the children of man are full of evil, and madness is in their hearts while they live, and after that they go to the dead.

2c Quick Rice(I used Minute Rice)
1/2 stick butter
1t olive oil

Melt butter and oil in large non stick skillet, add uncooked rice and sauté rice until it slightly browns.

Chicken;
6-8 chicken tenderloins (season one side with onion powder and smoked paprika, the other
side season with garlic salt and smoked paprika)

Remove rice.

Using the same skillet melt 1/2 stick of butter and 1 t olive oil.
Sauté chicken until done, pulling it into bite size pieces as it cooks. Right before the chicken is done, add:
1c sliced mushrooms
1c sliced leeks
2 slices pancetta 

Add the rice and:
1/2 t bacon grease
Juice of 1/2 lemon
Few shakes of smoky hot sauce
1/2 c cream
2c chicken stock
Simmer 15 minutes, uncovered, yum!!

Risotto Milanese

                                                                                                                                       
7 cups of chicken stock
1/4 cup olive oil
1/2 cup onions, diced
1 c mushrooms, sliced
few slices of pancetta, chopped
2 cups Arborio rice
1/2 cup of dry white wine
4 saffron threads or 1/8 tea. powdered
1 tablespoon butter
2/3 cups Parmesan cheese, grated
Salt and Pepper to taste

In a large sauce pan, heat the chicken stock but don’t let it come to a boil. Just let it simmer.
Heat the oil in a separate heavy-bottomed pot over medium heat.
Add the onion and mushrooms, cook slowly until translucent. Add chopped pancetta, cook until crispy.
Stir in the rice until the grains of rice are coated with the oil. This will keep them from sticking together.
Cook for a couple of minutes until the rice gives off a nutty smell.
Start by adding 1 cup of hot stock, stirring continuously.
As the rice absorbs the stock, begin adding ½ cup of stock at a time, stirring continuously
until all the stock is used. (15-20 minutes)
Remove from heat, stir in the wine, saffron threads, butter and Parmesan cheese.

Serve immediately.
