Tender Pork with Leeks and Gravy




































Answer me, O LORD, for your steadfast love is good; according to your abundant mercy, turn to me.  - Psalm 69:16



An ej original!


One 3 lb pork roast, sliced and cut into thick chunks, trim some of fat away
Smoked salt
Cracked black pepper
2 T olive oil

Sear pork in oil.
Add leeks and mushrooms.
Add the rest of the ingredients below.

1 c Sauvignon Blanc
1 c water

In a Dutch oven, add to a preheated 400 degree oven and cook covered 1-1/2 hours, stir half way through.

To add after cooking to make the gravy.
Stir in:
1 c water
1 brown gravy packet

Serve over sticky rice, pasta or egg noodles.

Oven Roasted Cola Pulled Pork



































Let the peoples praise you, O God; let all the peoples praise you!  - Psalm 67:3



2 Lbs Boneless country pork ribs
Smoked Salt and pepper
3 T Olive oil
1 Onion 
3 T roasted garlic
1 small can of cola, I used Coke
1/8 c Jim Beam Bourbon 
1/8 BBQ sauce, could use ketchup 
1 t Thyme
1 smoked paprika 
1 T soy sauce
1 T Worcestershire sauce
2 T hickory liquid smoke

On medium heat, add oil to Dutch oven, add onions and garlic, sauté, add pork and brown.
Add rest of ingredients.
Stir well.
Cover, cook 2 hours in oven preheated 375 degrees.
After an hour, stir and use wooden spoon to chunk pork, return for rest of cook time.
Before serving pull pork with a fork.
This recipe makes its own sauce.
Served with sweet restaurant slaw ( this blog under slaw/salad tab and brown sugar baked beans.

Amish Oven Fried Chicken Tenders


































32 For God has consigned all to disobedience, that he may have mercy on all.

Preheat oven to 400 degrees.

5 big chicken Tenderloins,  I used Costco frozen which I thawed in microwave

1/4 c butter
1/4 c peanut oil

Put into foil pan and melt in a 400 degree oven.

Dredge added to gal ziplock bag
1 c flour
2 T seasoned salt
1 t garlic granules
1 t smoked paprika
1 t Cilantro 
1 t black pepper

Remove butter/oil mixture to stove top.
Using tongs coat kitchen in butter/oil mixture.
Dredge in the flour mixture 2 pieces at a time.
Place on plate until all pieces are coated.
Return to foil pan, leaving the butter/oil to help chicken fry in oven.
Bake 20 minutes flip and repeat.
Internal temp should be 165 degrees.
Remove chicken to plate.
To crisp up put into a non stick skillet, weight down with a smaller cast iron skillet. 
Watch carefully so as not to burn.
This chicken was the most tender, juicy and moist I've ever had!
Delicious!

Croque Monsieur









7 Truly no man can ransom another, or give to God the price of his life, 
8 for the ransom of their life is costly and can never suffice,

8 slices Honey Wheat bread 

9 slices Ham, I used Boars Head Maple honey
6 slices of Boars Head honey maple Turkey
1-1/2 c Shredded Gruyere 
1/2 c Blend of Parmesan, Fontina, Provolone and Asiago

BĂ©chamel sauce for the bread slices:
3 T salted Butter
3 T Flour
1 c Whole milk
Splash of cream
Cracked black pepper
1/4 t Dijon 
1/4 t Nutmeg


Preheat oven to 425 degrees.
Make sauce, cook just till thickened and set aside.
Using a large sheet pan covered in parchment, lay bread slices down.
Take each one and spread sauce being sure to cover from end to end.
Add ham and turkey slices to half of the bread. 
Top meat side with cheeses.
Also top the other side with cheeses.
Bake 6 minutes and take out.
Turn oven to broil.
Put tops on meat side with cheese side facing up and return to oven for 3-4 minutes or until slightly browned.
This sandwich was delicious!


Grilled Sumac Garlic Asparagus



































1 Hear my voice, O God, in my complaint; preserve my life from dread of the enemy.

1 bundle of tiny Asparagus 
Light Drizzle of Olive oil
Light sprinkle of Sumac
Light sprinkle of Garlic
Smoked salt, to taste
Cracked black pepper, to taste
To finish:
Shredded fresh Parmesan (optional)

Heat stove top griddle.
When hot, add asparagus.
Lightly drizzle with olive oil and season.
Leave al dente.

Apple Cider Vinegar Brown Sugar Beef Short Ribs

































6 But it is not as though the word of God has failed. For not all who are descended from Israel belong to Israel,

An ej original!!


1-1/2 lb. Boneless Beef Short Ribs, sprinkled and tossed with a little baking soda
1 T olive oil for browning meat, onions and garlic
A few turns Smoked Salt 
A few turns Cracked Pepper 
Sauté until brown.

Mix all of the below ingredients in a bowl.
Add sauteed beef and apples, marinate 10 minutes.
Add to instant pot, set to meat setting, set time to 50 minutes and bring pressure up.
Quick release after 50 minutes.

1/4 t Sumac
1/4 c Apple cider vinegar
1/4 c water
2 T olive oil
1/2 Apple, cut into chunks, I used Granny Smith
3 T Roasted garlic 
1/4 c Brown sugar
1 sliced onion

To the instant pot, after meat is done, add the below ingredients. 
Use meat setting, under pressure, set time to 20 minutes.
Quick release and enjoy.

3 Carrots, chopped
3 golden Potatoes, chopped
Pinch or more of red pepper flakes

This is a delicious and different take on beef stew, slightly sweet and spicy!!
I served it with crusty bread.

Beef and Broccoli

































Therefore, stay awake, for you do not know on what day your Lord is coming. - Matthew 24:42



2 pieces of Beef Boneless Short Ribs, got mine at Costco 
Spread baking soda on both sides.
This helps tenderize the beef.
Let sit for 20 minutes.
Rinse, pat dry and slice against the grain into thin uniform pieces.
Add to marinade.

Soy Vay Garlic Hoisin, found at Walmart

Marinade for Beef:
1 T Cornstarch 
1 t Sesame oil
1 T Brown sugar
2 T Soy sauce
2 T Mirin


2 c Broccoli 
1 Leeks, chopped
Set aside to add after Beef is cooked.


1 T Ginger
1 T Garlic
1 T Olive oil
In a large skillet, heat oil to hot, cut heat off and add ginger and garlic.
Cook until fragrant.

Cook the beef in the same skillet you used for the garlic and the ginger.
Heat skillet to hot.
Using tongs, remove beef from marinade.
Add beef pieces until bottom is covered.
Cook 3 minutes then flip.
Turn heat to medium cook another 3 minutes.
Add Broccoli, leeks, garlic and ginger back in and cook 2 minutes or until Broccoli is slightly tender.
To finish add 1/4 c Soy Vay Garlic Hoisin. 
Serve over sticky rice.

Mexican Pulled Pork Tapas with Avocado Salsa Verde

Avocado Salsa Verde






































For you have delivered my soul from death, yes, my feet from falling, that I may walk before God in the light of life.  - Psalm 56:13


1 avocado, chopped
1/2 c  salsa verde
3 T onion, chopped
Squeeze of lime
1 t sugar
1 T Mayo
1/2 t toasted cumin
Mix in food processor.

Pulse in a small food processor just till incorporated.

Sumac Corn on the Cob


































5 You have multiplied, O LORD my God, your wondrous deeds and your thoughts toward us; none can compare with you! I will proclaim and tell of them, yet they are more than can be told. 
6 In sacrifice and offering you have not delighted, but you have given me an open ear. Burnt offering and sin offering you have not required.

4 ears fresh Sweet corn, I got mine at Aldi
Sumac
Seasoned salt

Microwave corn on a plate covered 2 minutes each side.
I could fit all 4 ears on the plate.
Delicious!

Sumac Spiced Roasted Chicken
































5 Consequently, when Christ came into the world, he said, "Sacrifices and offerings you have not desired, but a body have you prepared for me; 
6 in burnt offerings and sin offerings you have taken no pleasure. 
7 Then I said, 'Behold, I have come to do your will, O God, as it is written of me in the scroll of the book.'" 
8 When he said above, "You have neither desired nor taken pleasure in sacrifices and offerings and burnt offerings and sin offerings" (these are offered according to the law),
9 then he added, "Behold, I have come to do your will." He does away with the first in order to establish the second.
10 And by that will we have been sanctified through the offering of the body of Jesus Christ once for all.
11 And every priest stands daily at his service, offering repeatedly the same sacrifices, which can never take away sins.
12 But when Christ had offered for all time a single sacrifice for sins, he sat down at the right hand of God,

1 organic whole chicken, spatchcock chicken, bought mine at Aldi
Olive oil

Optional but oh so good!!
Note: You can add some precooked potatoes in the water to cook under chicken.
Microwave whole potatoes for 3 minutes each side, cool, peel and slice into rounds.
Slice an onion and a carrot too.  
Carrots will be slightly crunchy.
Add 1 t salt to water.

Rub:
3 T Sumac
2 T Toasted cumin
1 T Smoked salt
A few turns of Cracked black pepper

Liberally oil chicken, both sides.
Liberally season chicken, both sides.

Preheated 500 degree oven, 55 minutes, middle rack or until breast is 165 degrees and thighs are 175 degrees.
Place on rack in pan with 1/2 c water in bottom.
Place spatchcock side up for 15 minutes, then flip chicken to breast side up.
Cook remaining time and check temp. 
This was so good.
The sumac gives a slightly lemon taste.
Served with sumac corn on the cob.
