DIY Full Fat Ricotta

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Proverbs 13:24


    [24] 

    Whoever spares the rod hates his son,

        but he who loves him is diligent to discipline him.


Line a colander with cheese cloth and place in large bowl

Set aside


Use non reactive pot and utensils 


8 c cold whole pasteurized milk (not ultra pasteurized)

3 T (or more if necessary for curdling) white vinegar  

Salt according to your preference (I used 1/2 t)


Over medium low heat bring milk to 185 degrees, stirring constantly

This takes about 20 minutes 

Add vinegar, lightly stir, reduce heat to simmer 

Curds should form immediately 

Simmer 1 minute 

Remove from heat

Salt

Cover

Let sit 20 minutes 

Use slotted spoon to remove most of the curds

Carefully pour liquid into cheese cloth covered colander 

Lift up cheese cloth

Carefully drain liquid from bowl

Add curds back to cheesecloth 

Replace cheese cloth in colander and drain an additional 10 min

Remove ricotta to bowl with lid and refrigerate 

Use within 3 days for maximum flavor

You will make the best Lasagna or Rigatoni ever!!

Air Fryer Feta Stuffed Fresh Figs Bacon Wrapped





























Psalm 150:6

    Praise the LORD!



Preheat 2 minutes 

Air fry 450 degrees for 20-25 minutes 

Until bacon is crispy 


15 Ripe figs, split in half

Regular Hickory smoked bacon, cut in half

Feta cheese, cut to fit split fig

Coarse Black pepper for top of Stuffed fig


Glaze 

2 T Maple syrup 

1 t Balsamic vinegar 

1/2 t Black strap Molasses 

Mix and set aside to brush wrapped figs

Homemade Cottage Cheese


































Psalm 130:7-8

I've always wanted to make homemade cottage cheese

This was a success 

Creamy and delicious 



Part 1

1 gal whole milk

3/4 c white vinegar


Part 2

1 t kosher salt 

1/2 c heavy cream( optional but it makes it so creamy)


Pour milk into large heavy pot

Heat on medium low heat to 190 degrees, stirring often to keep milk from scalding

If milk doesn't reach 190 degrees it will not curdle


Once milk reaches 190 degrees, remove from heat

Add vinegar in thirds stirring with wooden spoon 

It should curdle immediately 

Rest, covered, 30 minutes 


Prepare a colander and large bowl

Line with colander with cheesecloth and set in bowl


After the 30 minute rest, use a slotted spoon to to dip out solids into the cheesecloth lined colander

Rest another 30 minutes 


Remove cheesecloth with the curds

Squeeze out liquid while you run cold water over cheesecloth ball

Set in another bowl

Loosely separate curds 

Add salt and slightly stir 

Add cream 2 T at a time to add creaminess 


Chill, cover and serve after 1 hour

Should last 5-7 days

Mine will last 5 days because my milk expires the end of the month

Easy Cheese Straw Crackers































Revelation 22:17


[17] The Spirit and the Bride say, “Come.” And let the one who hears say, “Come.” And let the one who is thirsty come; let the one who desires take the water of life without price.



4 oz freshly grated white cheddar 

3 & 1/2 oz freshly grated mild cheddar

1/2 oz freshly grated Parmesan 

1 & 1/2 stick room temp butter

1/2 t salt

1/2 t garlic granules 

1/2 t red pepper flakes 

2 c AP flour


Cream butter and cheeses with mixer 

Add seasonings

Add flour a little at a time 

Pat into 4 equal size logs

Place in plastic wrap

Freeze 30 minutes 

Preheat oven 350 degrees

For baking use large sheet pan lined with parchment 

Using sharp knife, slice each log fairly thin

Each log should make a pan full of straws

Leave a little space in between each straw

Bake 15 minutes

Bake one pan full at a time

Philly Cheese Steak Poutine
































Psalm 69:30

An ej original recipe!

 

 

1 c Left over steak, sliced into thin small chunks


3 servings Shoestring Fries, air fried

Set aside

Gravy 

1 t olive Oil

1/2 of a Onion, sliced 

1 t Roasted garlic 

Pinch red pepper flakes 

Pinch thyme, rosemary, oregano 

1/2 t of wood fired garlic seasoning 

Pinch of salt and pepper

1 t Worcestershire sauce

1-1/2 c beef broth

Stir fry onions, garlic and seasonings in oil.

Add steak. 

Add broth and Worcestershire sauce.

Reduce and thicken with cornstarch slurry.

Add cheese, melt in microwave.

Garnish with green onions.

1 c Cheese mix

Cheddar 

Smoked Gouda

Extreme cheddar

Slightly Spicy Smoked Pimento Cheese

3/4 c smoked Cheddar 

3/4 c Colby 

1/2 c sharp White Cheddar 


Freshly shredded cheese is best!!


1/4 c chopped Green onions

1/8 c Mayo up to a 1/4 c

1/8 c Spread cream cheese up to a 1/4 c

Salt and pepper

1 t Sugar

1/8 c diced Roasted red pepper

5 slices diced pickled Jalapeño 

1 t juice of pickled Jalapeño 

Big Pinch Aleppo pepper


Mix well.

The amount of Mayo and cream cheese is according to how moist you would like your Pimento cheese.

Refrigerate.

Serve on crackers, taco chips, burgers, sandwiches etc!!

Bourbon Steak and Gravy Poutine

Left over Filet steak, cut into bite size pieces

Fried potatoes 

1 sliced thin Vidalia Onion

Gravy


Fried potatoes

4 microwaved Yukon Gold medium potatoes 

Peanut oil

2 minutes each side


Green onions for topping


Poutine Gravy 

1/2 t Beef stock

1 c Beef

1 t Olive oil

1 t roasted garlic 

1 t Flour

1 Onion

1 T Bourbon 



Fry potatoes.

Season with seasoned salt and garlic granules.

Make steak gravy.

Layer potatoes, meat and gravy then cheese and top with green onions.

Sour cream. Optional

2 c white sharp cheddar, fresh coarse grated  

2 c sharp cheddar, fresh coarse grated 

1/4 c chopped green onions

1/4 c Mayo 

1/4 c spreadable cream cheese

1/4 t garlic granules 

1/4 t black pepper 

Pinch of salt

1/2 t sugar 

1/2 t Jalapeño juice

2 t diced pickled jalapeño 

1/4 c diced jar roasted red peppers 


Mix well.

Serve on crackers, bread for sandwiches, bugles, soft or hard pita triangles.

Fruit salad is a great side!

1 1/2 blocks of Cream cheese
1 T Heavy cream
10 slices of Pickled Jalapeño
5 T Cherry syrup
10 Dark sweet cherries in heavy syrup, chopped
Salt
pepper
1/2 c powdered sugar
Pecans, salted with seasoned salt and sprayed with cooking spray and roasted then chop after they cool

Let cream cheese soften at room temperature. Cream cheese with a fork, adding cream, cherry syrup, salt, pepper, and powdered sugar until combined. Next add cherries and jalapeño. Put in fridge and chill for 1 hour. Form into 2 balls and roll in pecans

Bacon Tomato Breakfast Pie

An ej original recipe!!

2 large tomatoes, peeled, sliced and lightly salted 
1-1/2 c sliced sweet 100 cherry tomatoes 
1 regular pie crust, baked set aside to cool (I love Piggly Wiggly brand pie shells)
Seasonings of your choice
3/4 c sharp cheddar, grated
3/4 c Italian blend cheese, Parmesan-Asiago-Pecorino 
1/4 c Mayo

6 slices of bacon, fried crisp and crumbled 
1/4 sliced onion, cooked tender in bacon grease and drained
Set aside

Bake in preheated 450 degree oven for 8 minutes.
Take fork and poke pie.
Lightly sprinkled with both cheeses.
Set aside.

Slice large tomatoes and lightly salt, put on several layers of paper towels to drain.
I let mine drain 10 minutes, then I slightly mashed them.

Into the cooled pie shell, lay large tomato slices. 
Lightly sprinkle with both cheeses.
Add sliced sweet 100's.
Add cooked onions.

Take remaining cheese and mix with Mayo.
Take dollops of Mayo/ cheese mixture and scatter over tomatoes.
Turn oven down to 350 degrees.

After baking for 15 minutes, take pie out, using a fork spread cheesy gooey mixture evenly over pie.
Add crumbled bacon.

Return to oven and bake an additional 10-15 minutes with the oven off.

Manchego Cherry Cheese Ball

An ej original recipe!



1 room temp full fat cream cheese block
1/2 c grated Manchego cheese
5 canned dark red cherries, diced
1/4 c powdered sugar
2 t cherry juice
5 slices pickled  jalapeño, diced

Mix well, roll into 2 equal balls.
Chill.

1 c butter toasted salted Pecans, chopped

Roll chilled balls in Pecans. 
Serve with crackers.
