Baked Tilapia

































3 if indeed you have tasted that the Lord is good.
4 As you come to him, a living stone rejected by men but in the sight of God chosen and precious,
5 you yourselves like living stones are being built up as a spiritual house, to be a holy priesthood, to offer spiritual sacrifices acceptable to God through Jesus Christ. - 1 Peter 2:3-5





2 Tilapia fillets
Clarified Butter
Old Bay
Lemon juice
Rinse fillets, add lemon juice and butter then seasoning.
Place on parchment.

Bake preheat 425 degree for 10-12 minutes. 
Do not overcook. 

Cashew Pork Tenderloin






























23 since you have been born again, not of perishable seed but of imperishable, through the living and abiding word of God;
24 for "All flesh is like grass and all its glory like the flower of grass. The grass withers, and the flower falls, 
25 but the word of the Lord remains forever." And this word is the good news that was preached to you.  - 1 Peter 1:23-25





Pork Tenderloin sliced thin, marinated in teriyaki ( I make mine own)  1/8 c hoisin, 1/4 c sweet chili Thai sauce, and 1 t soy sauce and 1/8 c Mirin

Marinate overnight for best flavor.
I usually do mine a couple of days.
Add 1 t oil to skillet and sauté 4 minutes.
Remove and set aside.

Stir fry in 1 T sesame oil until onion is tender.
1 Onion, sliced
2 c Broccoli florets
1/4 c Celery
1 T roasted Garlic
1 c Cashews
Add splash of soy and juice of half of a lemon at the end.
Add meat back in and add slurry.
Slurry of 2 T soy sauce, 1 T cornstarch, 1 T Honey, 1/4 c water, for sauce, stir fry until reduced.

Serve over sticky rice.

Quick and Easy General Tso Chicken


































18 For many, of whom I have often told you and now tell you even with tears, walk as enemies of the cross of Christ.

4 c Zaxby's chicken strips, chopped

1 T light olive oil
1 Thai chili, broken into pieces, these are really hot
2 T fresh ginger
1 Shallot, diced
1 T garlic, diced

Fry these in oil until fragrant.
Add chicken.
Add broccoli.
Add sauce and thicken.

Sauce
Make this first by whisking and set aside.
1/2 c chicken stock
2 T soy
3 T rice vinegar
2 t toasted sesame oil
2 T Mirin or Sake
3 T sugar
1 t light olive oil
2 t cornstarch 

Serve over sticky rice.

Fruit Dip

1 large Marshmallow Fluff
1 bar cream cheese

Bring cream cheese to room temp.
Place in large bowl with the marshmallow fluff.
With a hand mixer, beat until smooth.
Serve with bananas, fresh strawberries, peaches etc.

Baked 4 Cheese Squash Half Rounds

These were stinking delicious!!!

4 small yellow squash, slice in half then slice in half rounds

Seasoning 
Garlic granules 
Onion powder
Black pepper
4 cheese Italian blend, I used BelGioioso Asiago, Parmesan, Provolone, Fontina 

Next cooking, I'm adding a little panko to the top!!

Cover jelly roll pan with foil, spray with Pam.
Bake preheated 425 degree oven for 15 minutes on middle rack. Should be lightly browned, if not put under broiler, watch closely.

Sauvignon Blanc Sauce Chicken and Shrimp Enchiladas

2 c medium Shrimp 
3 Chicken tenders, thin slice on diagonal 
1 Leek, chopped
2 c Broccoli, stem removed and rough chopped
1 ear Fresh corn, shaved
1/2 of a Lime juiced, 1/2 lime reserve other half
1 t each Clarified butter/olive oil 
1/4 c Sauvignon Blanc
1 t Cornstarch/3 T water slurry
1 c Havarti cheese, reserve 3/4 c
1 c Gruyere cheese, reserve 3/4 c
1/4 c Enchilada sauce, +3/4 c 
1 t Sugar
Smoked salt 
Cracked black pepper

7 medium flour tortillas 

Squeeze 1/2 of a lime over chicken and shrimp.
Let set 5 minutes.
Sauté chicken in oil-butter mix for 3 minutes.
Remove and set aside.
Add veggies to drippings, sauté 2 minutes and add shrimp, sauté 1 minute, add chicken back in.
Add wine, 1/4 of both cheeses, 1/4 c enchilada sauce, sugar and salt/pepper.
Sauté 2 minutes and add slurry.
Squeeze other half of lime over meat/sauce mixture.
Thicken sauce and remove from heat.
Ladle a little enchilada sauce in bottom of 13x9 pan. 
Stuff tortillas, roll and place seam side down in pan. 
Ladle rest of enchilada sauce over stuffed tortillas.
Sprinkle rest of cheese.
Cover with foil and bake preheated 375 degree oven for 30 minutes.
Put under broiler to slightly brown.

Peach Strawberry Mango Old Fashioned Cobbler





























37 And the Father who sent me has himself borne witness about me. His voice you have never heard, his form you have never seen,

13x9 pan
Bake preheated 350 degrees for 1 hour and 15 minutes.
1 stick of butter melted in pan

Fruit prep:
3 c fresh peaches, chopped
3 c fresh strawberries, chopped
1 mango
1/2 sugar
A squeeze of fresh lemon juice
Place fruit in bowl.
Add sugar and lemon juice, stir.
Set aside while you make batter.

Batter prep:
1-1/2 c AP flour
1-1/2 c sugar
1/2 t salt
2 t baking powder
1/2 t cinnamon 
1/4 t allspice
Whisk 

To flour mixture add:
1-1/2 c Milk
1 t Vanilla 
Whisk until smooth.
Pour batter over melted butter.
Do not stir.
Dump fruit on top.
Do not stir.
Bake.

E J 'S Scratch Lasagna































19 So Jesus said to them, "Truly, truly, I say to you, the Son can do nothing of his own accord, but only what he sees the Father doing. For whatever the Father does, that the Son does likewise.
20 For the Father loves the Son and shows him all that he himself is doing. And greater works than these will he show him, so that you may marvel.

This makes a 13x9 pan.
I use foil pans from Costco.
I double this and make 2 pans.
Bake covered 375 degrees for 25 minutes, then uncovered for 25 minutes.
Put under broiler to brown.

Box of curly lasagna noodles, I like Sprouts brand, cook al dente, drain, set aside

1 can Nina San Marzano Italian tomatoes ( from Costco) 28 oz.
1/2 c water
6 cloves garlic ( I use roasted) mash it with a fork
3 T olive oil
1/4 c total Fresh herb mix, of each (oregano, thyme, sweet basil, cilantro, Rosemary) 
1 T Sugar
1/4 c Red wine( I used Cabernet Sauvignon)
1/2 c  shaved Italian blend, found at Trader Joe's) 
1/2 t Red pepper flakes
Pepper, a few turns
1 T Fine Kosher salt

Add tomatoes to a bowl.
Squish tomatoes with hands.
I use disposable gloves.
Add 1/2 c water.
Heat oil in pan in a large skillet and add Garlic.
Cook one minute.
Then add tomatoes and water.
Add all seasonings, herbs, sugar, wine and cheese.
Simmer for 15 minutes.


Meat Balls

1 lb. 80/20 lean ground beef( I used Sprouts)
1/8 c panko bread crumbs
1/8 c fresh cilantro, Rosemary, oregano, sweet basil, make a herb mix, diced 
1 diced shallot
1/8 c whole buttermilk
2 T double concentrated tomato paste( I used Cento)
1/4 c shaved Italian blend, ( found at Trader Joe's) 
1/4 c ricotta, full fat, reserve the rest for white sauce
1/4 t salt
A few turns of cracked black pepper

Make balls about the size of a golf ball.
Add oil to skillet and brown slowly. 
Flip to insure even browning, covering to help steam.
Mash and add sauce.

White sauce
1 8 oz. cottage cheese
2 beaten eggs
ricotta 4 oz. 
1/4 c Italian blend from Trader Joe's

Fresh Mozzarella from Sam's club, 
8 oz. sliced, pinch off pieces  

Layer some sauce in bottom of pan.
Add 3 noodles, then more sauce.
Spoon white sauce, then pinch pieces of the fresh mozzarella and scatter over white sauce.
Repeat until pan is full.


Quick and Easy BĂ©arnaise For Two






























God is spirit, and those who worship him must worship in spirit and truth." - John 4:24





1 t butter
1 egg yolk, beaten
1 T heavy cream
1/2 t Dry mustard
1/4 t Onion powder
Smoked salt and pepper, to taste
1 t fresh lemon juice

Melt butter in microwave.
Set aside.
In another bowl, whisk egg yolk and whip in all ingredients except butter.
Next drizzle butter in whisking as you do. 
Heat 15 seconds or until sauce thickens.
Serve on toasted English muffin filled with Canadian bacon, fried egg, and Havarti cheese.

Loaded Baked Potato Casserole








14 For this reason I bow my knees before the Father,
15 from whom every family in heaven and on earth is named,
16 that according to the riches of his glory he may grant you to be strengthened with power through his Spirit in your inner being,
17 so that Christ may dwell in your hearts through faith-that you, being rooted and grounded in love,

19 and to know the love of Christ that surpasses knowledge, that you may be filled with all the fullness of God.

6 golden medium Potatoes microwave 2 minutes each side, peel, cut into chunks
1/2 c Plain yogurt made with whole milk
1/2 c Miracle Whip
1/4 c heavy cream
4 slices crisp Bacon, rough chopped
1 c Shredded Cheddar Cheese
3 T chives
4 T Parsley
1/4 t salt 
1/2 t pepper
1/4 t onion powder 
1 c Ground up plain potato chips

Mix, heat until cheese melts, add to potatoes 
and bake 400 degrees for 30 minutes

Asian Pork Burger





























13 But now in Christ Jesus you who once were far off have been brought near by the blood of Christ.
14 For he himself is our peace, who has made us both one and has broken down in his flesh the dividing wall of hostility
15 by abolishing the law of commandments expressed in ordinances, that he might create in himself one new man in place of the two, so making peace,
16 and might reconcile us both to God in one body through the cross, thereby killing the hostility.
17 And he came and preached peace to you who were far off and peace to those who were near.
18 For through him we both have access in one Spirit to the Father.
19 So then you are no longer strangers and aliens, but you are fellow citizens with the saints and members of the household of God,
20 built on the foundation of the apostles and prophets, Christ Jesus himself being the cornerstone,
21 in whom the whole structure, being joined together, grows into a holy temple in the Lord.
22 In him you also are being built together into a dwelling place for God by the Spirit. - Ephesians 2:13-22


Burger ingredients 
1 lb. ground pork
1 t toasted sesame oil
1 Shallot, diced
1 T soy sauce
1 t fresh minced ginger
1/2 t garlic granules 
1 t hoisin 
1 T sweet chili Thai sauce
The more the better, Cracked black pepper
Salt, just a little

To add to Patty before cooking, Mirin, rice wine or you could use Saki.
Just fill the dent on top of burger.

Toppings
Thin sliced English cucumber 
Shredded carrot
Shredded cabbage
Pickled onion would be good too!

Hamburger bun or tortillas, made on both 

Mix burger ingredients.
I used disposable gloves and just mixed until combined.
Make burger, take thumb and make a dent in top. 
This stops burger shrinkage.
Fill dent with Mirin. 
Refrigerate for 15 minutes, then heat a large skillet with a little oil.
Add burgers, cook on medium heat till burger reaches 160 degrees.
Serve on a bun or tortillas with toppings.
