Loaded Shrimp and Andouille Sausage Quesadilla

Left over shrimp, corn, potatoes and andouille sausage, chopped( I made shrimp bake boil so I saved some to make these Quesadilla)*

2 T roasted Garlic

1 t Olive oil

1/4 c chopped Roasted red bell peppers 

Fajita size flour tortillas 

Spread cream cheese

White cheddar

Quesadilla cheese

Hot Honey Ham Cheese and Onion Breakfast Quesadilla

An ej original recipe!!


 

Ham( I used old country ham that I keep in freezer) 

1/4 c Sweet Onions, thin sliced

Drizzle Hot Honey 

Harvarti cheese

Cheddar blend

Flour tortillas 

1/4 t Olive Oil for frying Quesadilla 

 

Microwaved Seasoned Poached medium egg (runny yolk) for dipping Quesadilla 


Heat oil in skillet, add bottom tortillas, fill tortillas, add top tortillas. 

Flip, cover with a small piece of foil and weight down. 

Cut into wedges with pizza cutter.

Cook egg and dip in runny yellow.


To poach egg.

Fill salted water to not quite half in a cereal size bowl. 

Crack 2 eggs, season. 

Microwave uncovered 1 minute 40 seconds.

Remove with slotted spoon.

Instant Pot Cochinita Pibil Pork






























Psalm 106:47


    [47] Save us, O LORD our God,

        and gather us from among the nations,

    that we may give thanks to your holy name

        and glory in your praise.



4 lb pork butt, trim some fat, cut into 2 inch chunks salted and peppered

1 chopped onion

2 T olive oil

1/2 of the reserved seasoning sauce

Juice of 1 lime mixed with 

Juice of 2 Naval oranges

1 habanero pepper, seeded, spines removed, diced ( add half and save other half for fresh salsa


Seasoning Sauce

3 T Spanish paprika

2 T white vinegar

1-1/2 t dried oregano 

2 T roasted mashed garlic

1/2 t toasted cumin

Half for pork and half for beans


Allow IP to come to hot on the sauté setting.

Add oil, diced peppers and onions, brown meat in 2 batches.

Toss meat in seasoning sauce.

Add juices.

Set to pressure and cook 45 minutes.

Do a 20 minute natural release.

Shred pork for tacos, enchiladas or Quesadillas.

Loaded Cheese Beef Hot Dog Quesadilla

2 Beef hot dog, cut in half lengthwise and pan fried


Mix German kraut, diced onions, sweet Relish and yellow mustard 


Grated cheddar cheese


Flour tortillas, cut in half lengthwise


Drizzle olive oil in non stick skillet. 

On medium low heat lay 1/2 of the tortillas, add cheese, wiener and topping then more cheese to seal.

Weigh down, toast and flip, weigh down.

Remove to plate.

These are delicious!!

Pimento Cheese Quesadillas

Pimento cheese *

Medium tortillas 

Spreadable cream cheese

Clarified butter


Heat clarified butter in large skillet.

Spread one side of each tortilla thinly with cream cheese.

Thinly spread one side with prepared pimento cheese.

Fry until light golden brown.

Cut with pizza wheel.

Taste like cheese pizza!

2 New Breakfast Quesadillas

Ricotta Meat and Cheese Quesadillas 

Medium Flour tortillas 

Ricotta 

Havarti cheese

Honey maple ham

Honey maple turkey breast

Shredded Parmesan 


Lightly spread ricotta on one side if 2 tortillas.

Take chunks of 1 slice of Havarti cheese and distribute over 1 ricotta covered tortilla.

Take shredded ham, turkey or both and distribute over cheese.

Sprinkle Parmesan over meat.

Place ricotta side down on top, making a quesadilla.

Drizzle clarified butter or olive oil in a skillet. 

Set in hot skillet.

Toast on both sides.

Remove to cutting board and slice into pizza-like pieces.


Avocado Creama Meat and Cheese Quesadillas 


Medium Flour tortillas 

Spreadable cream cheese

Havarti cheese

Honey maple ham

Honey maple turkey breast

Shredded Parmesan

Avocado Creama *

Garlic granules 

Onion powder 


Lightly spread cream cheese on one side if 2 tortillas.

Spread creama over cream cheese on 1 tortilla.

Sprinkle with a pinch of garlic and onion.

Take chunks of 1 slice of Havarti cheese and distribute over 1 ricotta covered tortilla.

Take shredded ham, turkey or both and distribute over cheese.

Sprinkle Parmesan over meat.

Place cream cheese side down on top, making a quesadilla.

Drizzle clarified butter or olive oil in a skillet. 

Set in hot skillet.

Toast on both sides.

Remove to cutting board and slice into pizza-like pieces.

Three Cheese Ham Spinach Artichoke Egg White Breakfast Quesadilla




 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

This recipe makes 2 large 10 inch filled Quesadillas.

Cut like a slice of pie.

Tortilla Spread 

Garlic herb Boursin cheese

Lightly spread on one side of large tortillas.

Set aside.


Shredded or chopped Cheese

1/2 c cheddar

1/2 c Emmental 

1/2 c Manchego 

Prepare and set aside.

You need a layer on each tortilla to get it to stick.


Filling

1 t Artichoke oil, from jar

1/4 c tiny chopped pieces ham, I used ham from baking bag ham I baked and had in freezer*

1/2 c Spinach, chopped

1/8 c Marinated Artichokes, diced

1 T roasted Garlic, mashed

2 Scallions, diced 

1/2 c liquid egg whites

Salt and Black pepper to taste


Sauté onions, garlic, Artichoke, ham and spinach in oil. 

Season.

Add egg white, stir around until done.

Set aside.


On a griddle, add a little clarified butter.

Place the not spread side of tortilla down onto butter, add cheese to Boursin spread side then add 1/2 of the filling then another layer of cheese.

Toast each side to slightly crispy.

Place on a cutting board and cut with a rolling pizza wheel cutter.

Serve with salsa if desired.

Bacon and Potato Breakfast Quesadilla

Crispy Bacon
Potatoes 
Cheese 
Sour cream
Onion

Fry bacon until crisp.
Microwave potato, covered 1 min each side.
Slice then chop.
Pour out most of bacon grease, save 1 t, add potato and onions, crisp up.
Add cheese to tortillas.
Add bacon, sour cream, potatoes and onion.
Lightly toast on flat top.

Chinese Beef Unexpected Cheddar Quesadillas

A Chinese/ Mexican fusion dish! 
These are delicious!

Chinese beef, recipe on this blog under Asian tab(makes a lot and freezes well)
Small Tortillas, brushed with olive oil
Unexpected Cheddar, slice into thin slices (Trader Joes)
Sharp Cheddar, shredded

Place oil in pan and wipe tortillas in oil, only the side that will toast. 
Place one type of cheese on tortilla then the shredded beef.
Place the other type cheese on meat and add tortilla. 
Place foil on top. 
Weight down with cast iron skillet.
Cut into quarters.

Zaxby's Left Over Chicken Black Bean Paste Quesadillas

4 medium flour tortillas
Olive oil
8 pieces of Zaxby's, sliced thin
1/2 onion, sliced
2 T roasted Poblanos, chopped
2 T black bean paste, this blog under sauce tab
1 t roasted garlic
1/2 of a lime juiced
1 t Cuban seasoning
Grated sharp cheddar

Drizzle oil in a medium skillet, add onions, peppers and garlic, sauté until onions are soft. Add beans, seasoning, and lime juice. Set aside. 
In a large skillet drizzle oil and swirl one side of tortillas to coat, remove. Add tortilla oiled side down to heated skillet, add cheese and meat mixture and another layer of cheese, top with another tortilla. When one side toast, flip. I weight mine down with a cast iron skillet.

Serve with fresh guacamole, recipe on this blog under salsa/queso/ guacamole tab.
