Boneless Standing Rib Roast






























John 6:68-69


[68] Simon Peter answered him, “Lord, to whom shall we go? You have the words of eternal life, [69] and we have believed, and have come to know, that you are the Holy One of God.”



4-1/2 - 5 lb tied Boneless rib roast 


Pat dry.

Apply rub all over and loosely lay plastic wrap on roast as it comes to room temp for even cooking.

Bring to room temp for at least 1 hour.


Rub

1/4 c olive oil

2 T kosher salt

1 t black pepper

1 t rosemary

1 t thyme 

3 T roasted garlic, mashed


Bake in middle rack, preheated 500 degrees oven for 15 minutes.

Drop temp to 350 degrees for 45 minutes.

Temp should be 120 degrees.

Temp will rise another 5 degrees while resting.

Remove and foil tent for 20 minutes.

Cut roast into steaks.

Ready to serve.

You may season with steak seasoning and  sear in butter.

Spanish Style Potatoes (Patatas Panaderas)































John 11:26-27


[26] and everyone who lives and believes in me shall never die. Do you believe this?” [27] She said to him, “Yes, Lord; I believe that you are the Christ, the Son of God, who is coming into the world.”



Patatas Panaderas

Spanish potatoes in olive oil and white wine



2 &1/2 lb Yukon Gold potatoes, cut 1/4 in thickness

1/3 c Olive oil

Toss potatoes in oil.

3-1/2 t kosher salt

1/4 t black pepper

White wine


Toss into oiled potatoes.

1 sweet onion, sliced thinly

2 T roasted garlic mashed

Toss into oiled salted potatoes.

Place in 13x9 pan.

Seal tightly with foil.

Preheat oven 400 degree oven, middle rack, 40 minutes.

Potatoes will be knife tender.

Remove from oven.

Remove foil.


Add 1/2 dry white wine over top.


Loosely add foil back and cook an additional 20 minutes at 350 degrees.

Shrimp and Gouda Cheese Grits Casserole

2 T butter

1 bundle of scallions, chopped

2 mini red bell pepper, sliced in small strips

1 jalapeño pepper, seeded and sliced in small strips

2 T roasted and mashed garlic

1 can (10-ounce) diced tomatoes with green chiles - drained

2 c chicken bone broth

⅔ cup quick-cooking grits 

Salt and freshly ground black pepper - to taste

1 pound large shrimp, cooked

1 T clarified butter

1/4 c bacon bits(I used store bought)

1 large egg - beaten

1 ¼ cups shredded Gouda cheese - divided


Preheat oven to 375 degrees. 

Grease an 13x9 foil pan

Set aside.

Cook shrimp in clarified butter just till done.

Set aside in a plate.

Heat butter over medium-high heat in a large saucepan. 

Add the scallion, red pepper and jalapeño pepper. 

Reduce heat to medium, cook 4-5 minutes or until beginning to soften.

Stir in garlic, diced tomatoes with chiles and chicken broth. 

Bring to a boil. 

Slowly stir in grits.

Stir continuously until mixture returns to a boil. 

Reduce heat to low. 

Simmer, stirring occasionally, for 5-7 minutes or until thickened. 

Remove from heat and cool slightly. Season to taste with salt and black pepper.

Stir in shrimp, bacon, egg and 1 cup cheese. 

Transfer to prepared baking dish. Sprinkle with remaining cheese.

Bake for 30-35 minutes or until heated through and bubbling. 

Let stand 5-10 minutes before serving.


California Blend Veggie Casserole

1 1/2 bags California-blend frozen vegetables, thawed

1/2 c chopped onions

1/2 c butter, melted

1/2 c mayonnaise

1/2 c sour cream

1 cup Ritz crackers, crushed

1 1/2 – 2 cups shredded cheddar cheese

1/2 t salt

1/2 t garlic granules 

1/2 t black pepper



Preheat oven to 400 degrees.

Grease a 13×9″ baking pan with nonstick spray.

In a large bowl mix the onions, butter, mayo, sour cream, salt and garlic pepper.

Add the vegetables and mix until well coated.

Fold in the Ritz crackers and cheese and transfer the mixture to the baking pan.

Bake for 30-40 minutes or until vegetables are tender and cheese is melted.

Savory Breakfast Pie





























John 20:27-29

Spray deep dish pie plate with non stick.


Make custard.

5 eggs, beaten

2/3 c whole milk

1/4 c half and half

1 t kosher salt

1/4 t black pepper 

Pinch of nutmeg

Whisk and set aside.


Meat and veggie mix

2 c chopped ham (I used deli)

1/4 c chopped scallions 

1 c steamed broccoli florets

2 small potatoes (microwave 1-1/2 min each side)


Directions

Dot sprayed pan with broccoli, chopped scallions, potatoes and chopped ham.

Bake preheated 350 degree oven for 40 minutes. 

Cool 10 minutes, cut into wedges.

Fresh Cranberry Orange and Pineapple Relish

    [36] Who has put wisdom in the inward parts

        or given understanding to the mind?



1 lb fresh cranberries, washed and soft ones removed, put in mini food processor and dice

1/2 c fresh diced celery

1/2 c toasted chopped pecans

1 20 oz can Pineapple, drained, diced in mini food processor 

1-1/2 c boiling water

1 c sugar, may add 1/2 c more if desired 

2 Navel oranges, peeled and chopped

Zest of 1 lime

3 oz pack of strawberry jello

3 oz pack of raspberry jello


Dump sugar on diced berries.

Mix, add rest of ingredients and stir well.

Taste for your desired sweet flavor.

Refrigerate overnight.

May be made a few days ahead.

This French recipe is the bomb!!

Serve on beef tenderloin, steaks, chicken and fish!

I bet it would be good on potatoes too!!

It's briny goodness puts your meat over the top!!

3/4 c diced parsley

1/2 c olive oil

6 T mild pepper rings, diced, plus 1 t of the brine

1/4 c capers, rinsed and diced 

1 scallion, diced

1 T roasted garlic 

1 t sugar

1/4 t each kosher salt and black pepper 

Mix well.

Smoky Pulled Pork Carrot and Potato Stew

































Acts 13:30

2 c smoked pulled pork

3 potatoes, microwave 2 minutes each side, peeled and chopped

1 Onion, chopped 

2 carrots, chopped 

2 t diced celery 

Pinch red pepper flakes

1 t salt

1/2 t black pepper 

2 bay leaves

2 t roasted garlic

1/2 t each of rosemary, thyme

1 T sugar

1 qt chicken bone broth 


Simmer for 30 minutes until carrots are tender.

Remove bay leaves. 

Serve with cornbread.

Who has time to roll sausage balls during this busy time?  

This recipe of cheese biscuits taste like a big sausage ball!

I use a a 2 inch round biscuit cutter and I get around 12 to 14 biscuits. 

Fry that sausage hard!!

They reheat well in toaster oven!

Easy Kung Pao Beef Cabbage and Broccoli






































Galatians 3:20

An ej original recipe!


1 c cooked filet of beef, sliced thin

1 onion, sliced

1 c broccoli florets 

2 c sliced cabbage

1/2 t each olive oil and toasted sesame oil


Stir fry veggies in both oils.

Then add beef.


Sauce


1/8 c each Chinese BBQ sauce and Ponzu sauce

1/2-1 t chili garlic sauce

1 c water

1T cornstarch


Whisk together and add to veggie beef mixture.

Add dry roasted peanuts before serving.

Creamy Cream Cheese Chicken Potato Soup


































Job 33:4


    [4] The Spirit of God has made me,

        and the breath of the Almighty gives me life.



1 t olive oil

1 medium Carrot, sliced thin

1/4 c Onion, sliced thin 

1 t salt

1/2 t pepper

1 t sugar

Pinch nutmeg

1/2 t each thyme, rosemary, oregano, sage 


Sauté the above in a 2 qt pot until carrots are slightly tender.

Add the ingredients below.


3 T flour whisked in 1/4 c water

1 qt chicken bone broth 

1 c milk

1/4 c spreadable cream cheese

Whisk to incorporate.


Add the ingredients below.

1 c Rotisserie chicken, shredded 

2 potatoes, microwave 2 minutes each side, cut in medium chunks

Simmer 15 minutes until thickened, stirring often to prevent sticking.

Serve with crusty bread!
