Castelvetrano Olive and Unexpected Cheddar Pasta Salad

































Isaiah 53:3-7


    [3] 

    He was despised and rejected by men,

        a man of sorrows and acquainted with grief;

    and as one from whom men hide their faces

        he was despised, and we esteemed him not.


    [4] 

    Surely he has borne our griefs

        and carried our sorrows;

    yet we esteemed him stricken,

        smitten by God, and afflicted.

    But he was pierced for our transgressions;

        he was crushed for our iniquities;

    upon him was the chastisement that brought us peace,

        and with his wounds we are healed.

    All we like sheep have gone astray;

        we have turned—every one—to his own way;

    He was oppressed, and he was afflicted,

        yet he opened not his mouth;

    like a lamb that is led to the slaughter,

        and like a sheep that before its shearers is silent,

        so he opened not his mouth.



An ej original recipe!




1 lb Spaghetti pasta cooked al dente, reserve pasta water

Set aside


2 T Olive oil

1 Small Onion, diced

3 T Roasted Garlic, mashed

1/4 c diced Roasted Red Peppers

1 c sliced Castelvetrano olives ( Costco) 

1/2 c Unexpected Cheddar, crumbled ( Trader Joe's) 

1/4 c 4 % milk fat Cottage cheese 

Pinch or more Red Pepper flakes 

Salt and pepper to taste 


Sauté onions, pepper flakes and garlic in oil for 1 minute.

Add peppers, cottage cheese, pasta, Unexpected Cheddar and 1-1/2 c pasta water.

Sauté until thickened, stirring constantly, add sliced olives.

Season and top with Bagel bits.
