Chicken in White Wine with Cipollini Onions Carrots and AndouilleSausage




































And he said, "I will make all my goodness pass before you and will proclaim before you my name 'The LORD.' And I will be gracious to whom I will be gracious, and will show mercy on whom I will show mercy. - Exodus 33:19



6 Chicken, I used large tenderloin, seasoned with season salt, onion powder, smoked paprika, sage and rosemary 
3 T clarified butter
1 inch piece or more of Andouille, diced
Cipollini onions, boil water just to cover, remove from heat, add onions, leave 5 minutes (helps in removing skin to keep Onion together) 
3 Carrots, chopped
1 c White wine, I used Sauvignon Blanc

Preheat oven to 375 degrees.
Cook covered 30 minutes until chicken reaches 165 internal temp.

Heat clarified butter in Dutch oven.
Sear seasoned chicken.
Remove and set aside.
Add carrots, onions, and Andouille sausage to drippings.
Sauté 5 minutes then add wine.
Sauté another 5 minutes and add chicken back in.
Bake covered.
Bring chicken out and slice across the grain.
Return to Sauce, stir.
Serve over sticky rice with veggies on the side and crusty garlic bread!

Chicken Soup Skillet































1 Make a joyful noise to the LORD, all the earth! 
2 Serve the LORD with gladness! Come into his presence with singing!

This is so delicious.
Taste like a cross between chicken soup and chicken and dumplings.

2 c shredded rotisserie chicken breast
Set aside.

2 c cooked egg noodles
Set aside.

2 T clarified butter
1 small onion, chopped
1 T roasted garlic
Sauté these ingredients until onion is tender.
Add chicken.

1 can cream of chicken soup
1 12 oz can Pet milk
1 t fresh sage, chopped
1/2 t dried rosemary, chopped 
1/2 t dried thyme
Cooked egg noodles
Add these to chicken mixture, turn to low heat.

Bacon Shallot Carbonara
































30 for my eyes have seen your salvation

Angel hair pasta, cooked al dente set aside and reserve 1/4 c water

6 slices cooked crisp bacon, diced
Fry bacon, reserve 1 t grease

1 Shallot
1 T roasted garlic

Add the Shallot and garlic to grease, cook to soften.

In a small bowl:
Beat 1 egg
Add:
1 t sweet parsley
1/2 c Parmesan
1/2 c Romano 
1 t ricotta
Beat with a fork.

Beat in with a fork:
1/4 c hot pasta water

Place into bowl, with a fork, beat the warm pasta and the bacon, shallots and garlic.
Add salt, red pepper flakes and pepper to taste.

Italian Lemon Pepper Wings

2 Family packs of Chicken wings, disjoint into 2 pieces, discard tip
Lemon pepper seasoning
Lightly Salt
Olive oil
Olive Garden Italian Dressing

2 (13x9) foil pans
2 Racks

Spray racks with Pam.
Place 1 c water in each foil pan.
Place rack on foil pan.
Lightly season one side of wing with lemon pepper and drizzle with oil.
Roast in a 500 degree oven for 20 minutes.
Flip wing, lightly season, roast another 20 minutes.
Turn oven on broil and broil 10 minutes on each side.
Watch closely, they will burn.

To finish: 
Put Italian dressing in a bowl.
Toss wings in Olive Garden Italian Dressing

So crispy and delicious!!!
