Instant Pot Smothered Pork Chops and Gravy




































Genesis 6:3

An ej original recipe!

 

 

4 bone in 1/4 inch thick pork chops 

Season with steak seasoning and meat tenderizer 

Set aside in fridge for 2 hours 


Set to sear setting. 

Add clarified butter and olive oil to IP.

Sear Chops each side, 2 at a time in IP. 

Remove to plate.



Sauté veggies in drippings.

1/2 t each Rosemary, Thyme and Oregano 

1/4 c diced Mushrooms 

1/4 c chopped Leeks

3 T Roasted Garlic, mashed


To sautéed veggies add

2 c chicken stock

1/2 c Sauvignon Blanc


Cornstarch slurry for thickening gravy

Set aside to use at the end of cook time.


Place rack in IP.

Set chops around edge on their side.

Set IP to pressure setting.

Set time to 8 minutes.

Put lid on and make sure you have pressure.

Leave chops in for a natural release of 10 more minutes. 

Do a quick release.

Remove chops to plate.

Remove wire rack.

Set to sauté. 

Add slurry to thicken gravy.

Serve with sticky rice, avocado salad and steamed broccoli.


Avocado Salad with Lemon Italian Dressing

1 English cucumber, diced

1 avocado, peeled and chopped 

4 Campari tomatoes, chopped

3 green onions, diced


Dressing 

3 T Olive Garden Italian dressing

1 t sugar 

1 t olive oil

2 T Mayo 

3 T lemon juice

Salt and pepper to taste

Pinch red pepper flakes

Scratch Mississippi Mud Cake






























Romans 5:1


Peace with God Through Faith


[1] Therefore, since we have been justified by faith, we have peace with God through our Lord Jesus Christ.



Preheat oven to 350 degrees.


1 10 oz bag of mini marshmallows 

1 c chopped toasted pecans

Set aside


Dry ingredients 

2 c AP flour(always aerate flour for correct measuring)

1-1/2 c sugar

1/2 c packed brown sugar 

2 t baking powder

3/4 c un-sweet baking cocoa powder

1-1/2 t baking soda

3/4 t salt

Whisk together in a large bowl.

Set aside.


Wet ingredients 

2 room temp eggs

3/4 c olive oil

1 t vanilla pure extract

6 T milk

1/3 c full fat sour cream

1 c boiling water

Add to dry ingredients and beat on low with electric hand mixer.

Beat an additional minute on medium.

Pour into a non stick sprayed 13x9 aluminum pan.

Bake 30-40 minutes.

Mine took 40 minutes.

Cake is done when toothpick stuck in middle comes out clean.

Turn off oven.

Cover top of cake with nuts and marshmallows.

Put back in oven until marshmallows melt.

Let cake cool and then drizzle warm frosting over top.


Drizzle frosting

1/2 stick of butter, room temp 

6 T milk

3 T un-sweet baking cocoa powder 

1 t vanilla extract

1-1/2 c powdered sugar 

Melt butter in small heavy bottom pan.

Whisk in cocoa and milk.

Remove from heat, add powdered sugar 

and vanilla.

Whisk until smooth.


Doughnut Top Pan Cheesy Onion Rings

Non stick sprayed Doughnut top pan

Cheddar Cheese just to slightly cover bottom

Thick Slice of onion

Cheddar Cheese just to slightly cover top


Bake 400 degrees for twenty minutes!!


Ranch or blue cheese dressing for dipping.

Pepperoni Garbanzo Salad
































 

 

Psalm 22:27-28

1 can Garbanzo beans, rinsed and drained

Set aside


6 Campari tomatoes or 1 pint of Cherry tomatoes, cut 

English cucumber, chopped 

1/2  of a red or sweet onion, thin sliced

1/2 c Castelvetrano Olives, cut in half 

Put into a large bowl.

Toss in dressing.

Stir in cheese.

Stir in Pepperoni.

Let flavors meld for 30 minutes! 


10 pieces of Boars Head deli Pepperoni, microwave until crisp, slice into strips

1/2 c finely rasped Parmesan 


Dressing 

Juice of 1 lemon

3 T olive oil

1/2 t of pink salt

1/2 t coarse black pepper

2 T roasted and mashed garlic

Easy Left Over J Alexander Knock Off Pork Tenderloin Stir Fry

An ej original recipe!



2 c left I over tenderloin, sliced thin *


Toss sauce for meat

1/2 c light Soy sauce

1/8 Mirin 

1 T sweet Chili Thai sauce

Add pork and stir.

Make sure all pork gets sauce.

Set aside.


Veggies mix

1/4 c diced mushrooms 

1/4 c thin sliced carrots

1/4 c thin sliced onion

3 T roasted mashed garlic

2 c thick shredded cabbage 

1/2 t chicken base seasoning 

1 t toasted sesame seeds

1 T olive oil


Add oil to skillet and heat.

Stir fry carrots 1 minute, then add onions, garlic, mushrooms and lastly Cabbage.

Sprinkle chicken base over veggies.

Sprinkle sesame seeds over veggies.

Add 1/2 c water.

Add in pork, sauce and stir to combine.

Stir fry 1 minute to.

Serve over sticky rice.

Pan Fried Ham Steaks
























 

 

 

 

 

 

Acts 16:31


[31] And they said, “Believe in the Lord Jesus, and you will be saved, you and your household.”



Ham steaks cut from fully cooked and smoked ham (cut 1/4 inch thick) and your preferred size 


Topping

1 t Yellow mustard

1 t Maple syrup

1 t Brown sugar 


Drizzle tiny amount of oil in skillet, turn on medium heat.

Smear mustard on each steak.

Smear syrup then sprinkle brown sugar.

Place in-dressed side down, cook 2-3 minutes the flip and repeat.

This ham was so delicious, melted in your mouth.

Served with Grits and raisin bread.

Left Over Chicken Fajita Soup

An ej original recipe!!

I used all the left overs, yes even the sides, to create this delicious soup.

It had a slight taste of chicken fajitas.

Mostly the taste was just a really good soup!!

Perfect for cold weather!



2 c Left over chicken fajita meat, peppers, onions, chopped

1/8 c Left over rice

1/8 c Left over refried beans

1/8 c queso cheese dip

1/8 c Pico de gallo 

1 can stewed tomatoes ( I used my own that I canned)

1 qt chicken bone broth ( I used my own that I made and froze)

1 t sugar

1 t roasted Pasilla and Ancho seasoning 


Simmer in a large pot for 30 minutes.


Topping 

Shredded cheddar Cheese blend

Fresh Lime juice 

Guacamole cream *

Fresh sliced onion

Tortilla chips


* Guacamole cream

1/4 c left over guacamole 

1 heaping T spreadable cream cheese

2 T half and half


Mash cream cheese into guacamole with a fork, whip in half and half.

Serve on top of soup

Rotisserie Chicken Bone Broth Soup with Hominy and Poblano Peppers




































Psalm 8:9


    [9] O LORD, our Lord,

        how majestic is your name in all the earth!



 

3 T olive oil

1 lg chopped onion

1/2 of a Roasted Poblano, diced

3 T roasted garlic

1 t toasted cumin

1 t ground coriander 

1/2 t Mexican oregano 

Pinch of red pepper flakes

Coarse Kosher Salt and coarse black pepper, to taste

1 qt chicken bone broth( I make my own which I pressure can or freeze) 

1 qt water

2 c dark meat Rotisserie chicken, shredded 

1 can Hominy golden or white, drained and rinsed


Put the oil in a Dutch oven, add seasonings, onions, peppers and sauté.

Add chicken, sauté 1 minute, add broth and water. 

Simmer 30 minutes.


To serve


For serving 

Tortilla chips, crushed

Squeeze lime

Sour cream 

4 cheddar cheese blend ( I used 3 cheese cheddar and grated seriously cheddar into it, it was ridiculous)

Christmas Rocks AKA Fruitcake Cookies



































Psalm 6:2-5

    [4] Turn, O LORD, deliver my life;

        save me for the sake of your steadfast love.

These are delicious!!


1 c candied cherries, chopped

3/4 c candied pineapples

1 c raisins 

1 c pecans

Toss in 1/4 c AP flour

Set aside


1 c softened butter(1 stick)

1c granulated sugar

Whip on medium 2-3 minutes until smooth.


Add 

1 egg

1/4 c buttermilk

1 t each vanilla and almond extract

Whip 2 minutes


Add by hand and incorporate by hand

1&1/2 c AP flour

1/2 t baking soda

1/2 t salt


Line sheet pan with parchment.

Drop by 1 T scoops, 2 inches apart. 

Bake in preheated 350 degree oven for 12 minutes.

Cool in pan for 2 minutes, remove to rack and cool.

Mimosa Fried Chicken Biscuit and Slaw

Ginger Ale biscuits baked, set aside*

Slaw set aside

Poached egg set aside

1/2 c sparkling white wine or Sauvignon Blanc

1/2 c orange juice

2 T grated orange zest

5 Mashed garlic cloves

1 T salt

2 t coriander 

1/2 t dried red peppers


2 lb Boneless skinless chicken thighs, trimmed ( around 8 pieces)

Cover and refrigerate for 2 hrs or over night


Coating 

1- 1/2 c flour

1-1/4 c Cornstarch 

1 T coriander 

2 t garlic

2 t baking powder 

2 t pepper

2 t salt

1/2 t cayenne 

Whisk


Add 3 T water to flour to make craggy bits, add drained chicken pieces, refrigerate 30 minutes

Fry in 350 degree 2 c peanut oil

Fry 7 min until 175 degrees

Drain 

Sprinkle with coriander 


Build biscuits

Biscuit bottom 

Add Slaw 

Add chicken 

Biscuit top

Top with poached egg with runny yellow
