4 Meat Chili for Two

































Ecclesiastes 3:20


[20] All go to one place. All are from the dust, and to dust all return.




Meat and Veggie

2 strips bacon, reserve 2 T grease drippings 

1 Filet Steak, chopped

1/2 lb Italian meat balls

1/2 lb ground Wagyu Beef

1 small roasted Jalapeño, seeded and spines removed, diced 

1 small Onion, roasted and diced

1 small Bell pepper, roasted and diced

2 T roasted Poblano 

1 T roasted garlic 

1/2 to 1 Chili in Adobo, mashed 

Brown, on medium heat in a Dutch oven, all the meat/veggie mixture in bacon grease drippings.

Add the seasoning mix.

Sauté until almost no pink color is left in meats.

Then add the liquid ingredients, stir to incorporate.

Last add beans, simmer for 45 minutes.

Taste and adjust seasoning.

Serve topped with cheese, onion, jalapeño, salsa and sour cream.

This is good with crunchy tostadas chips!!


Seasonings

1 T Chili powder

1 T Ancho and pasillia chili powder( I roast the chilis, cool then put in a coffee grinder)

1 t toasted Cumin 

1 t Hungarian Paprika

1 t Sugar

1 t Coriander

1 t coarse Kosher Salt 

1/2 t triple berry cracked Pepper


Liquids

1 c chicken stock 

1/2 bottle of a pale ale (I used Aldi Belgium White)

1/2 small can of tomato paste

1/2 can of tomato sauce

You can add water and cook down if you want thick gravy like chili.


1 -2 can of beans, your choice of bean ( I used Great Northern) 


If you want this chili spicy, you can add 1-2 t cayenne pepper.
