Rotisserie Chicken Breast and Rice Casserole In Anaheim Green Sauce


































John 1:1-5


The Word Became Flesh


[1] In the beginning was the Word, and the Word was with God, and the Word was God. [2] He was in the beginning with God. [3] All things were made through him, and without him was not any thing made that was made. [4] In him was life, and the life was the light of men. [5] The light shines in the darkness, and the darkness has not overcome it.



2 c cooked sticky rice, set aside


3 c hand crushed tortilla chips, set aside


2 chicken breast from a rotisserie Chicken ( shredded)

Set aside


2 c shredded mozzarella 

1 c Unexpected cheddar


4-5 Poblano or Anaheim roasted over flame, seeded and spines scraped 

1 c water

Pulse in processor until smooth 

Add 1 c of fresh cilantro, 

1 t sugar

2 t toasted cumin

1/2 t black pepper

1/2 t salt

Pulse until incorporated 

Reserve 1/2 c 


Melt 2 t butter in skillet, add 1 medium diced onion.

Sauté until soft.

Add 1 c chicken stock, 

1 c evaporated milk,

Green sauce,

3 T cornmeal, whisk until incorporated.

Add Shredded Chicken,

1 c shredded Mozzarella,

1/2 c Unexpected cheddar,

Cook until slightly thickened.


13x9 pan

Layers

Reserved sauce

Crushed chips

Chicken and sauce mixture 

Little cheese

1/2 of the Rice

Repeat

Sprinkle cheese on top


Bake covered 350 degrees for 30 minutes, then uncovered for 15 minutes.

Top with fresh Pico de Gallo. 

Serve with refried beans topped with cheese.
