Panang Curry Shrimp with Baby Bok Choy


























Blessed is everyone who fears the LORD, who walks in his ways!  - Psalm 128:1


3 c shrimp, I keep frozen in the freezer, you can thaw or cook from frozen
2 T Clarified butter, reserve 1 T
2 baby bok choy, clean and sliced lengthwise 
1/2 Bell pepper, any color
1 small Onion, sliced
1 t Toasted sesame oil
3 T Honey
1 T roasted garlic 
1/2 t Sumac
Salt to taste
1/2 t Black strap molasses

To finish
1/2 jar of Tantara Panang sauce, Walmart has this in the Asian section

Topping 
Crushed dry roasted peanuts

Add butter to skillet, sauté bok choy, onion, garlic until slightly soft, remove to plate.
Add 1 T of butter to skillet.
Add shrimp, cook 1 minute on med high heat.
Add Tantara Panang curry sauce, cook 1 minute and add veggies back in.
Top with crushed peanuts and serve over sticky rice.
