Inspired by Julia Stuffed Mushrooms




























 

 

 

Psalm 119:14-16


    [14] In the way of your testimonies I delight

        as much as in all riches. 

    [15] I will meditate on your precepts

        and fix my eyes on your ways. 

    [16] I will delight in your statutes;

        I will not forget your word.



12 large button mushrooms, cleaned

7 T butter( I used clarified )

2 T chopped shallots

1/2 T flour

1/2 c half and half

3 T chopped parsley 

1/4 c Unexpected Cheddar ( Trader Joe's) 


Clean mushrooms.

Remove and reserve stems.

Squeeze stems in paper towels to remove liquid.

Season with salt and pepper.

Brush top and bottom with butter and set on parchment lined pan.

Preheat oven to 375 degrees. 

On medium heat, sauté shallots in butter until tender. 

Stir in cream until thickened.

Stir in parsley, seasonings and cheese. 

Remove from heat.

Stuff mushrooms.

Bake 15 minutes, top rack.

Mardi Gras Seasoned Butter BBQ Chicken Thighs


































Ephesians 3:8-12

Pack of Boneless Skinless Chicken Thighs ( I used 4)

1/2 Lemon juiced

Mardi Gras rub *

Clarified butter

BBQ sauce (optional)


Lay thighs out, put slits across short side.

Squeeze lemon generously over thighs.

Drizzle rub over thighs.

Drizzle butter over thighs.

Lightly salt.

Cook preheated 400 degree oven, middle rack, for 20 minutes, flip, season and cook 10 minutes more.

Ck temp, should be 165 degrees.

Flip back over.

Drizzle BBQ sauce over, put under broiler for 5 minutes.

Breakfast Ham Tater Tots


































Galatians 6:14-16

An ej original recipe!!


3 medium size Yukon Gold potatoes 

Cooked 1-1/2 minutes covered, microwave 

each side, cooled and peeled then grated ( potatoes are not all the way cooked) 


2 diced green onions

1/4 c diced ham

2 T flour

2 T Parmesan 

Salt and pepper

1/4 t each, garlic granules, onion powder, thyme, rosemary, oregano 


Panko ( to roll balls in)

2 inches deep of Peanut oil for frying


Mix all ingredients, by hand, except oil and panko.

Heat oil, add tots one at a time.

Brown on all sides.

Let the first side get crispy before flipping with tongs.

Lightly salt finished tot.

Secret ingredient, a light sprinkling of Trader Joe's Umami seasoning.


Serve with Texas Pete's hot sauce.

Chicken Meatballs in Red Pepper Leek Gravy

























 

 

 

 

 

 

 

Psalm 116:13

Meatballs

1 lb ground chicken

1/2 t garlic granules 

1/4 t onion powder

1/4 t rosemary 

1/4 t thyme

1/2 c Panko 

1 diced Shallot 

1/4 c Parmesan 

Pinch red pepper flakes

1/4 cup Parmesan cheese

2 t dried cilantro

3 t full fat ricotta 

2 T olive oil


Mix just till combined.

Make into golf ball size meatballs.

Add 1 T olive oil to large skillet and heat, add meatballs and lightly brown on all sides.

Remove to plate.


Leek gravy

1 t Clarified butter

1/4 c chopped leeks

1 t roasted garlic

Pinch red pepper flakes 

1/2 t chicken base seasoning 

1 T flour

1 c water

1/2 c Sauvignon Blanc

1/4 c half and half


Using same skillet, sauté garlic, pepper flakes, leeks, seasonings and flour. 

Add wine, cook 2 minutes.

Add water, cook 2 minutes.

Add half and half.

Gravy will come together quickly.

Add meatballs back in a simmer 5 minutes.

Meatballs internal temp should be 165 degrees.

I like to cut my meatballs in half.

Serve over sticky rice.

East Asian Adzuki Beans































Psalm 49:15

10 oz Adzuki beans (found at Sprouts)

Clean and pick debris from beans.

Soak beans overnight covered in water.

Dump water.


Cleaned Beans

1 T Bacon grease

1 sliced Onion

Ham pieces

1/2 t Cajun seasoning 

1/4 t Garlic seasoning 

2 T Chicken base seasoning

Water to cover over beans 2-3 inches


Add to pressure cooker.

Cover and bring up pressure.

Cook 40 minutes.

Serve with chopped green onions and cornbread.
