Instant Pot Greek Pork Tenderloin






























 

 

 

Psalm 103:14-19

An ej original recipe!



2 pork tenderloins (comes 2 to a pack)


24 hour Marinade

1 small Shallot, diced

1 t dried Thyme

1 t dried Rosemary

1 T dried oregano 

1/2 of a lime zest

1/2 of a lime juice

1 t Red wine vinegar

2 t Greek Yogurt 

1/2 c Olive oil

1/4 water

1/8 c white wine 

1 t Dijon mustard

2 t roasted Garlic, mashed with fork

1/2 t Kosher salt

A few turns of Cracked black pepper 


Heat IP on sauté setting for 10 minutes.

Add 1 t olive oil.

Sear pork on 2 sides until lightly browned.

Drain Tenderloin on paper towels.

Change setting to meat, set cook time for  6 minutes under pressure.

Let IP come to no pressure on it's on, do not quick release.

Instant temp thermometer should read 150-155 degrees.

If temp has not been reached put lid back on, let sit another minute.

Remove to cutting board and tent with foil.


To make a light gravy, set to sauté, use drippings and whisk in:

1/4 c Sauvignon Blanc

1/4 c half and half

1/8 c stock

Cornstarch slurry for thickening

Serve with sticky rice!

An ej original recipe!



2 c white sharp cheddar, fresh coarse grated  

2 c sharp cheddar, fresh coarse grated 

1/4 c chopped green onions

1/4 c Mayo 

1/4 c spreadable cream cheese

1/4 t garlic granules 

1/4 t black pepper 

Pinch of salt

1/2 t sugar 

1/2 t Jalapeño juice

2 t diced pickled jalapeño 

1/4 c diced jar roasted red peppers 


Mix well.

Serve on crackers, bread for sandwiches, bugles, soft or hard pita triangles.

Fruit salad is a great side!

Zaxby Knock Off Zensation Salad

This was delicious!! 

You can add Slaw but I was in a hurry so I just added shredded cabbage.

You can buy your chicken strips and cut them up or use frozen chicken and air fry it.

I like Sam's knock off chicken nuggets, the ones like Chick fil A.


Salad

Iceberg lettuce sliced in thin strips

Really thin sliced Cabbage strips

Really thin Cucumbers (use a mandolin)

Really thin carrots (use a mandolin)

Really thin onions (use a mandolin)


Dressing

3 T clover honey

1 1/2 T rice wine vinegar

1/4 c Mayo 

1 t Dijon 

1/4 t toasted sesame oil

Salt and pepper to taste


Whisk well!


Make dressing, set aside.

Air fry chicken, set aside.

Assemble salad.

Add Slaw to the middle!

Slice chicken and put on top of salad.

Add your desired amount of dressing.

Air Fryer Blooming Onion



































Psalm 40:2

Delicious but definitely not like the fried version!!

Going to try to do onion petals and see how they do!


Make dipping sauce and refrigerate.


1 large onion

cut top 1/2 inch off, 

take off outer tough layer

turn upside down

cut into wedges, do not cut through onion bottom

let sit 5 minutes 

gently pull apart cuts to make petals

Refrigerate for 10 minutes while air Fryer preheats



Flour dredge

2 c flour

1 t Smoked Paprika 

1/2 t Aleppo pepper

1/2 t Thyme

1/2 t Garlic

1/2 t Oregano 

Salt and pepper to taste

Mix and place in bowl larger than onion.

Cover onion with flour mixture, be sure to get in between petals.

Turn upside down and gently shake off excess flour. 


Egg mixture 

2 eggs

1 c water 

1 c milk

Mix and put in bowl larger than onion.

Place floured onion in egg mixture being sure to get in between petals.

Remove to plate and flour again.

Spray with oil.

Air fry in a 350 degree preheated air Fryer for 20 minutes or desired doneness.

Respray a couple times during cooking. 

Use a spatula to remove.


Sauce

1/4 c Mayo

2 t BBQ sauce

1 t Horseradish 

1/4 c Sour cream

1 t Garlic granules 

1/2 t Oregano 

1/2 t Aleppo pepper

Salt and pepper 

Mix and refrigerate

Prune and Pecan Fiber Cookies

        my salvation and my God.





These were good!

They taste like a bran muffin in cookie form!



Preheat oven to 350 degrees.

Bake on middle lower rack for 9-10 minutes.


1-1/2 c pitted prunes

Cover with water, microwave covered 3 minutes. 

Reserve liquid.

Remove prunes to processor.

Process in food processor to make a purée.

Add to large bowl.

Mix 1/2 c of prune liquid into the purée.

To this purée mixture add:

1/2 c olive oil

2/3 c sugar

1 egg

1 t vanilla 

Mix to incorporate.

Next add:

1 c AP flour

1 c old fashioned oats

1/2 c milled flax seeds

1/2 t baking soda

1/2 t baking powder

1/2 t cinnamon 

1/2 t salt


Drop by 1 t rounds on parchment lined sheet pan. 

Cool on rack.

Refrigerate.
