Cumin and Coriander Bombay Potatoes

2 1/2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
1/2 c white vinegar, divided into 2 (1/4 c )
Kosher salt and ground black pepper

Cover potatoes with water, bring to boil, cook 8 minutes until soft not mushy.
Add 1/4c vinegar, salt and pepper.

Set aside. 
Add the remaining 1/4 c vinegar.


Make sauce.

1/4 c neutral oil
3 t cumin seeds, lightly crushed
3 t coriander seeds, lightly crushed
3 t roasted garlic
1/2 t red pepper flakes

Toast spices and garlic in oil.
Remove from heat.


2 t paprika 
2 t honey

Add honey and paprika.

Cool 10 minutes.

1 c lightly packed fresh cilantro leaves, roughly chopped
Add to foil lined pan.
Put under broiler to crisp up!!
When crisp, add cilantro.  
Nice vinegary taste with a little heat!!
Yum!!

Old Time Ham and Egg Salad

2-3 pieces of deli ham, I used Boars Head maple 
2 boiled eggs, peel and mash with a fork, set aside
3 thick cut bread and butter pickles cut in quarters, a splash of juice too
3 T Mayo
3 T chopped Celery
1/2 t Dried shallots
1/2 t dry mustard

Place celery, pickles and torn Ham in a mini food processor, pulse a few times.
Put into a bowl, add all the rest of the ingredients and stir to combine.
Serve on crackers, bread or stuff into grape tomatoes.

Chicken and Veggie Orzo Lemon Soup

Can't even express the comfort you get from this fresh and delicious soup. 
Talk about satisfying, yum!!


1 T Olive oil
1 large Carrots, cut in half and sliced 
1 small Onion, chopped
1/4 c chopped celery
1/2 of a roasted Jalapeño, diced
1/4 c red bell pepper, chopped
3 T heaping Chicken base seasoning 
1 T roasted garlic
2 c Rotisserie chicken, chopped or shredded 
1/2 t Thyme
1/2 t Rosemary 
1/2 t Oregano 
1/4 t Mrs. Dash table
1/4 t Umami powder
1/4 t Powdered bay leaf
Juice of half a lemon
1 c Spinach, torn
1/2 c shredded cabbage
1/2 c Orzo 
1/2 c frozen Green Peas 
1/2 c Mushrooms, chopped or sliced
1/4 c pico de gallo
Splash half and half

Sauté onions, celery, peppers, garlic and carrots in oil.
Add chicken base, chicken and all seasonings to the oil mixture.
Stir fry 1 minute on medium low heat.
Add at least 2 qts water, lemon juice and now add veggies, Orzo, pico and half and half.
Simmer on low for 20 minutes.

Apple Cider Oven Pulled Pork in Onion Jalapeño Molasses Sauce

An ej original recipe!!

1 Red onions
1 Jalapeño 
1/8 c Molasses 
Splash of olive oil
1 t kosher Salt
1 heaping T Brown sugar
1/8 c Apple cider vinegar 
1 c Apple Cider 
2 lbs. Boneless Pork Ribs cut into chunks

Sauté onions and jalapeño in all ingredients.
Add pork, sauté 5 minutes.
Preheat oven.
Cook.
375 degrees for 2 hours covered Dutch oven.
Pull pork with 2 forks.
Stir into sauce.
Serve in crunchy taco shells, shredded cabbage, Queso Fresco cheese and pico de gallo.
Delicious!!!

Oven Cast Iron Skillet Apple Cider Chicken

Based on an America's Test Kitchen recipe!

Place cold cast skillet in cold oven.
Heat oven until oven reaches 450 degrees.

Skin on chicken legs and thighs (enough for your skillet)
Set in ziplock with Marinade.
Put in fridge overnight.

Marinade 
1 c Apple Cider 
1/2 c Sugar 
1/4 c kosher Salt

Seasoning
1 t salt
1/4 t umami powder( Trader Joe's )
2 t paprika
1 t pepper
1/2 t onion powder
1/2 t garlic granules

Dry chicken off.
Season all sides of chicken pieces using all of the seasoning.
Take hot skillet out of oven.
Place 2 T butter in hot skillet.
Place chicken skin side down.
Return to oven for 15 minutes.
Remove chicken and flip.
Return to oven for 15 more minutes or until chicken reaches 175 in the thigh.
Rest for 15 minutes.
Stir pan drippings and drizzle over chicken.
